- Preheat the oven to 400 degrees F (200 degrees C). Unfold puff pastry sheets, and place flat onto baking sheets. Bake for 10 to 15 minutes, or until lightly browned and puffed. Set aside.
- Combine the sugar, custard powder and cornstarch in a large saucepan. Mix in just enough milk to form a paste, then gradually mix in the rest. This will prevent lumps from forming. Add the butter. Cook over medium heat, stirring frequently until thick. You may need to use a whisk to ensure a smooth consistency. When the mixture comes to a simmer, cook stirring constantly for 2 minutes. Remove from the heat, and stir in the egg yolks and vanilla.
- Line a 9 inch baking dish with aluminum foil. Place one of the baked pastry sheets in the bottom of the dish. Spread the custard filling in an even layer over the pastry, and top with the other sheet.
- Mix the confectioners' sugar with 1 tablespoon of milk, and a dash of vanilla to make an icing. Spread over the top of the pastry. Refrigerate until the custard layer is firm. Remove from the pan and slice.

Steps:
- line a lamington tin or even a roasting pan with foil with enough extra to fold back over the top. Dimensions must be in multiples of SAO biscuits; either 3x4 or 4x3.
- place SAO Biscuits in a 3x4 or 4x3 pattern on bottom (if need be use rolled paper to make a 'wall' to hold the edge.
- Pour thickened cream into bowl and pour pack of vanilla instant pudding mix over the top (can add a few drops of vanilla extract or essence for added flavour). Whisk quickly and make sure all powder is dissolved, it thickens quickly.
- pour mix over base of biscuits, spread as evenly as you can.
- place an equal number of SAO biscuits over the filling, pressing down to even it out if need be.
- make a tangy lemon icing with icing sugar, melted marg (about 1 teaspoonful) and enough lemon juice and maybe a little boiling water - spread over the top of the top layer of SAO biscuits then seal with the extra foil left over.
- Leave in fridge overnight.
- take all out of foil and cut each SAO in half plus cut between each biscuit square. Makes 24.
- Tip: must be left overnight, but 24 hours is better.

- Line base and sides of a 26 x 16cm (base measurement) slice pan with baking paper, extending paper at long sides for handles. Place half the biscuits over base of prepared pan in a single layer, shiny-side up. Cut to fit tightly. Set aside.
- Using an electric mixer, beat milk, cream and pudding mixture in a large bowl until thick, smooth and creamy (don't overmix; mixture will become lumpy). Carefully spread mixture over biscuit base in prepared pan; level top. Top with remaining biscuits, shiny-side up, cutting to fit tightly. Gently press biscuits down.
- Combine sifted icing sugar and passion fruit in a small bowl until smooth. Spread icing over top of slice. Chill for 1 hour or until firm. Transfer to a chopping board, then cut into squares. Serve.
