Take a trip to the county fair with a bowl of old-fashioned Kettle Corn. Your family will never want plain popcorn again! If you use white sugar, it will taste like popcorn balls and if you use brown sugar, it will taste like caramel corn.

¼ cup vegetable oil
¼ cup white sugar
½ cup unpopped popcorn kernels

Steps:

  • Heat the vegetable oil in a large pot over medium heat. Once hot, stir in the sugar and popcorn. Cover, and shake the pot constantly to keep the sugar from burning. Once the popping has slowed to once every 2 to 3 seconds, remove the pot from the heat and continue to shake for a few minutes until the popping has stopped. Pour into a large bowl, and allow to cool, stirring occasionally to break up large clumps.

This version is light and airy, with just a touch of ethereal sweetness and saltiness. By playing with the proportions, I hit upon this recipe that rivals the addictive Kettle Corn we paid a fortune for at fairs and such! It was created after I tried the recipe in the Whirley-pop instruction booklet, and found it tough, gloppy, and also a very small batch. See also my Whirley Pop Notes below the recipe.

2 tablespoons oil
1/2 cup popcorn
3 tablespoons sugar
1 teaspoon salt, scant

Steps:

  • Note that this recipe's cooking method is for a gas stove. You might have to monkey with the heat a bit on an electric one.
  • Add all ingredients to the Whirley pop, and pop, using, on average, a medium heat: alternate between a lower flame and a high one. This is in order to send the heat to the outside edges, which is where the popper sends the popcorn!
  • Be sure to remove from the heat quickly when the popping slows. Empty immediately into a big bowl, and stir around with a big spoon and/or your hands to break apart the kernals. (Careful - it's hot!).
  • For an easier cleanup, put some water and a squirt of soap immediately into the popper to soak.
  • After it has cooled thoroughly, keep in an air-tight container to prevent sogginess.
  • Whirley Pop Notes:.
  • I actually purchased mine because, try as I might, I just couldn't make great Kettle Corn in a pot on top of the stove. I tried a number of recipes. They all came out tough, and never fully popped, and the sugar always burned. And I am a pretty patient cook! To make matters worse, the cleanup of burnt sugar on my stainless pots was a significant chore!
  • So, I bought a Whirley-pop. With all the great reviews on-line, I knew I would come to love it. I was right! It makes great popcorn, all kinds! Bonus is that you can use less oil than cooking in a pot, like only 2 teaspoons per 1/2 cup batch.
  • So, this recipe is for a Whirley Pop, as I haven't personally had any success in a regular pot. If you don't have one yet, and you make popcorn a lot, I highly recommend one! Although they are mostly a "single-use" item, they are only about $23. And, personally, I recommend this Kettle Corn recipe over the one in the book.

Here's what you need: sugar, red gel food coloring, orange gel food coloring, yellow gel food coloring, green gel food coloring, blue food coloring, purple gel food coloring, coconut oil, white popcorn kernels, kosher salt

12 tablespoons sugar, divided
red gel food coloring
orange gel food coloring
yellow gel food coloring
green gel food coloring
blue food coloring
purple gel food coloring
6 teaspoons coconut oil, divided
12 tablespoons white popcorn kernels, divided, plus 12 kernels
1 ½ teaspoons kosher salt, divided

Steps:

  • Line a baking sheet with parchment paper.
  • Divide the sugar evenly between 6 small bowls, 2 tablespoons per bowl.
  • Dye each bowl of sugar a different color by adding 1-2 drops of red, orange, yellow, green, blue and purple food coloring. Stir each bowl with a clean fork until the sugars are sandy in texture. Note: We recommend gel food coloring, as the colors are more stable. Only use 1-2 drops; a little goes a long way.
  • Add 1 teaspoon of coconut oil and 2 popcorn kernels to a medium nonstick saucepan with a lid. Cover and place over medium-high heat. Once the kernels pop, reduce the heat to medium and add 2 tablespoons of popcorn kernels and 1 bowl of colored sugar. Immediately cover the pan and shake to combine. Cook, shaking the pan constantly to ensure that the sugar doesn't burn, while the popcorn pops. Once the pops are more than 3 seconds apart, remove the pot from heat. Carefully remove the lid away from your body and pour the popcorn onto the prepared baking sheet.
  • Evenly sprinkle ¼ teaspoon salt over the hot kettle corn. Let the popcorn cool completely, transfer to a bowl. Repeat with the remaining colors, replacing the parchment paper as needed.
  • Combine all of the popcorn in a large bowl. Toss to distribute the colors evenly. Serve immediately, or store in an airtight container for up to 2 days.

1/2 teaspoon salt
1 1/2 tablespoons vegetable oil
1/4 cup popcorn kernels

Steps:

  • Mix the salt and sugar, set aside: In a small bowl, combine the sugar and salt, and stir with your finger to combine. Set aside.
  • Heat oil, pop test kernels: Place a medium to large stockpot (at least 5 quarts) with a tight-fitting lid over medium high heat. Add the vegetable oil and 3 to 4 kernels of popcorn. Secure the lid.
  • Add popcorn and seasonings, stir to coat: Once the test kernels begin to pop, add the rest of the popcorn, along with the sugar and salt mixture. Stir quickly with a wooden spoon to combine (skip this step and you risk the sugar burning).
  • Shake the pot: Quickly replace the lid and continue cooking, constantly shaking the pot. At first there won't be any popping, but in less than a minute, the popcorn will begin to pop. Remove from heat when you smell a whiff of caramel, or the popping slows to 1 second between pops.
  • Empty kettle corn into bowl, let cool briefly: Moving swiftly, turn the popcorn into a serving bowl and let it cool a few minutes. If there's some melted or burned sugar residue in the pot, add a few cups of water, bring to a boil, and simmer, covered, for 5 minutes to dissolve the sugar; dump the hot water down the sink, and your pot should be in much better shape.
  • Pick out unpopped kernels, then enjoy: Before you dig in, sort through the kettle corn and pick out as many unpopped kernels as you can. A few stragglers often stick to clusters of the popped kernels. Serve warm, or, for maximum crunch and flavor, at room temperature. The kettle corn will keep three to four days in a tightly covered container.

1 1/4 teaspoon kosher salt
1/4 teaspoon ground cinnamon
3 tablespoons coconut oil or vegetable oil
1/2 cup popcorn kernels
1/4 cup sugar

Steps:

  • Line a rimmed baking sheet with parchment paper. In a small bowl, mix together the salt and cinnamon. Set aside.
  • Heat a large Dutch oven, covered, over medium-high heat for 2 to 3 minutes. Add the coconut oil and heat 30 seconds. To check if the Dutch oven is hot enough, add one or two popcorn kernels to the pan and cover with the lid. Cook until you hear the kernels pop, 1 to 2 minutes.
  • Add the remaining kernels and the sugar, stir to combine and cover. Shake the pan vigorously to coat the kernels in the sugar and oil. Cook, shaking the pan often, until the popping has slowed to about 2 pops per second, about 2 minutes.
  • Remove the Dutch oven from the heat and carefully uncover. Pour the mixture onto the prepared pan and sprinkle with the cinnamon salt. Be careful: the popcorn is extremely hot at this point. Allow the kettle corn to cool for 5 minutes before enjoying.
