CHICKEN PARMESAN WRAPS

Steps:
- Place the chicken breast in a large saucepan and fill with enough water just to cover. Bring to a boil, then reduce the heat slightly and simmer until the chicken is cooked through, about 15 minutes. Drain and let cool before shredding with two forks. Put the meat in a medium bowl and pour the marinara over it, stirring to coat the chicken with sauce.
- Preheat the oven to 400 degrees F. Spray a wire rack with cooking spray and set it on top of a baking sheet. Lay the egg roll wrappers on a clean work surface. Layer each with a few leaves of spinach, then chicken, followed by mozzarella and parmesan.
- Lightly brush the sides of each wrapper with water and fold the wrapper over the filling to form a triangle. Press to seal each of the sides and set the wrap on the prepared rack. Repeat with remaining wraps. Lightly spray the wraps with cooking spray. Bake until the edges are golden and crisp, 12 to 15 minutes.
- Serve with additional warmed marinara sauce for dipping.

- Directions Place shredded chicken in a medium bowl. Add Italian seasoning, salt, and black pepper, and stir well to combine. Add marinara sauce and basil to chicken mixture, and stir to combine again. Optional: If you want your filling piping hot, you can microwave the chicken mixture at this point for about 60-90 seconds. (Even if you choose to skip this, your filling should still be pleasantly heated after the wraps are seared in the skillet in step 7. If you are prepping these as make-aheads, skip this optional step.) Lay 1 Flatout flatbread on work surface, and sprinkle ¼ cup of cheese down the center, leaving a large border all around the cheese. Spread ¼ of the chicken mixture (about a heaping ½ cup) on top of the cheese. Fold short ends of Flatout inward toward middle, and then fold long sides of Flatout inward toward middle, making a closed wrap. - Drain and dry the pickled cherry peppers, then cut off the tops and use a teaspoon to scoop out the seeds. Place a mozzarella ball inside of each one.
- Make the chicken mixture: In a large bowl, combine the ground chicken, egg, Parmesan, milk, bread crumbs, onion, parsley, garlic powder, pepper, and salt. Mix well.
- Take a golf ball-size amount of the chicken mixture and pat it out flat in your palm. Place a stuffed cherry pepper in the center and wrap the chicken mixture around it until completely covered, rolling into a ball. Repeat with the remaining cherry peppers.
- Chill for 20 minutes.
- Preheat the oven to 450°F (230°C).
- Prepare for frying: Add the bread crumbs to a medium bowl with the Parmesan, dried parsley, garlic powder, and salt. Beat the eggs in a separate medium bowl. Add the flour to another medium bowl.
- Toss a chicken meatball in the flour, then coat in the eggs, then roll in the bread crumbs. Repeat with remaining meatballs.
- Heat a large pan with ¼ inch (6 ml) of canola oil over medium-high heat until the oil reaches 400°F (200˚C).
- Working in batches, fry the chicken meatballs for 1-2 minutes on each side, or until light golden brown. Once finished, blot dry with paper towels and transfer to a greased baking sheet.
- Dollop 1 tablespoon of marinara sauce on each ball, then top with a piece of mozzarella cheese.
- Bake for 8 minutes, or until meatballs are cooked through with an internal temperature of 165°F (75˚C).
- Sprinkle with parsley and serve.
