1 bunch Gai Lan (Chinese broccoli), trimmed
2 tablespoons white sugar
1 tablespoon cornstarch
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 tablespoon sesame oil
3 tablespoons hoisin sauce
1 teaspoon minced fresh ginger root
2 cloves garlic, minced

Steps:

  • Bring a large pot of lightly salted water to a boil. Add the Chinese broccoli and cook uncovered until just tender, about 4 minutes. Drain and set aside.
  • Meanwhile, whisk the sugar, cornstarch, soy sauce, vinegar, sesame oil, hoisin sauce, ginger, and garlic together in a small saucepan over medium heat until thickened and no longer cloudy, 5 to 7 minutes. Toss the broccoli in the sauce and serve.

Stir-fry of blanched Chinese broccoli is a traditional home-cooked dish for the Chinese. It is also widely served in the restaurants. This recipe shows you step-by-step how to prepare it.

250 g Chinese broccoli, weight after trim
3 tbsp oyster sauce
4 clove garlic
5 slices ginger
3 tsp light soy sauce
1 tsp sugar
2 tbsp vegetable oil
1 tsp sesame oil
1 tbsp of water
2 tsp salt
1/2 tsp baking soda

Steps:

  • Wash the Chinese broccoli. Cut off part of the stem that is tough.
  • Peel of the tough fiber n the surface of the stalk with a knife or vegetable peeler.
  • Boil about 1 liter of water in a stockpot or the wok.
  • Add 1 tablespoon of vegetable oil, 2 teaspoons of salt and a half teaspoon of baking soda.
  • Blanch the broccoli for five minute until the stalks are tender. Drained.
  • Heat 1 tablespoon of vegetable oil in the pan/wok. Saute the garlic bulb and ginger slices until aromatic.
  • Add the oyster sauce, light soy sauce, sugar, and water. Stir until the sugar dissolves.
  • Heat 1 tablespoon of vegetable oil in the pan/wok. Saute the chopped garlic until golden brown. Remove the garlic and add the ginger slices to continue sautéing for a minute.
  • Add the vegetables and stir fry for half a minute.
  • Add 2 tablespoons of water and cover with a lid. Let it cook for 5 minutes.
  • Remove the lid and continue to stir-fry until the water is dried out.
  • Combine the oyster sauce, light soy sauce, sugar, sesame oil, and water. Heat up in a small pot until the sugar dissolves.
  • Place the vegetables on a serving plate, cut the Chinese broccoli lengthwise into two.
  • Drizzle the sauce onto the vegetable.
  • Garnish with fried garlic and serve.

2 tablespoons peanut oil
1 (1/4-inch) slice of fresh ginger
1/2 teaspoon salt
1 bunch broccoli, cut into 1 1/2-inch florets and the stems reserved for another use
1 tablespoon dry white wine

Steps:

  • In a metal pie plate or heatproof flat dish set on a round metal rack in a wok or in a steamer steam the sausage, covered, over boiling water for 20 minutes, transfer it with tongs to a cutting board, and cut it diagonally into 1/8-inch-thick slices. Mound the sausage in a large shallow serving dish and keep it warm, covered, in a preheated 250 degree oven.
  • In a heated wok heat the oil with the ginger and salt over high heat until the oil just begins to smoke, add the broccoli, and stir-fry the mixture for 2 minutes. Drizzle the wine around the edge of the wok, stir-fry the mixture for 1 minute, or until the broccoli is bright green and crisp-tender, and transfer it to the dish, arranging it around the sausage.

Steps:

  • Pour about 1 inch of water into a saucepan and bring to a boil. Place Chinese broccoli in the saucepan and cover with the lid. Cook until stems are tender, 2 to 5 minutes. Use tongs to transfer to a plate.

2 tablespoons unsalted butter
2 teaspoons soy sauce
1/4 teaspoon Chinese five-spice powder
1/3 cup roasted soy nuts or peanuts, crushed

Steps:

  • 1. In a pot filled with 2 inches of water, steam the broccoli or Broccolini until the stems are just tender, 4 to 5 minutes. Transfer to a platter.
  • 2. Discard the water. Add the butter, soy sauce, five-spice powder, and 2 teaspoons water and place over medium-low heat.
  • 3. Stir until the butter has melted.
  • 4. Drizzle the mixture over the vegetables, top with the nuts, and serve.

This tastes just like the Gai-Lan that my DBF and I get when we go to Dim Sum on Sundays. It is really easy to make at home. It is similar to regular broccoli but it is slightly milder and has broad flat leaves instead of florets. If you can't find Gai Lan, you can substitute broccolini. The baking soda helps the broccoli retain its green color while cooking.

2 teaspoons salt
1 teaspoon baking soda
1 garlic clove, sliced
1 inch gingerroot (1 inch piece, peeled)
2 teaspoons toasted sesame seeds
3 tablespoons oyster sauce
3 tablespoons water or 3 tablespoons chicken broth
1 tablespoon mirin or 1 tablespoon dry sherry
1 tablespoon sugar

Steps:

  • Gai Lan: Rinse gai lan and trim the end of the stems. Bring eight cups of water to a boil in a large saucepan or stock pot. Stir in salt, baking soda, garlic and ginger. Add gai-lan. Cover and simmer about 4 minutes, until the gai lan turns bright green and is tender-crisp. Drain and serve drizzled with the oyster sauce and sprinkled with sesame seeds.
  • Sauce: Mix oyster sauce with water or broth, mirin and sugar in a small saucepan. Bring to a boil to melt the sugar. Remove from heat.

1 lb flank steak
2 tablespoons soy sauce
1 tablespoon dry sherry (can substitute 1 Tbs. orange or pineapple juice with a dash of vinegar)
1/2 teaspoon cornstarch
1 (16 ounce) package frozen broccoli, defrosted
1 garlic clove, minced
1 slice fresh ginger, finely minced
2 tablespoons peanut oil
salt

Steps:

  • Slice the steak against the grain into very thin slices.
  • Combine the soy sauce, sherry, and cornstarch and pour this mixture over the steak.
  • Marinate the meat for 15 minutes.
  • While the meat is marinating, slice the broccoli at a diagonal and mince garlic and ginger.
  • Heat a wok or large frying pan for 30 seconds, add oil, wait about 20 seconds, and add minced garlic and ginger root. Fry over high heat, stirring constantly for about 20 seconds more, then add the beef.
  • Stir-fry, stirring constantly, for about 1 minute. Add broccoli and stir-fry for another 4 to 6 minutes, until the broccoli is cooked but still crisp and still dark green.
  • Serve hot. This is low in carbohydrates.
