You don't need to wait for the county fair to enjoy delicious old-fashioned funnel cakes. You just need a funnel with a 1/2-inch opening that can hold a cup of batter.

8 cups vegetable oil for frying
1 ½ cups milk
2 eggs
2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon ground cinnamon
½ teaspoon salt
¾ cup confectioners' sugar

Steps:

  • In a deep-fryer, or heavy skillet, heat oil to 375 degrees F (190 degrees C).
  • In a large bowl, beat milk and eggs together. Combine flour, baking powder, cinnamon and salt. Stir into the egg mixture until smooth.
  • While covering the funnel hole with one hand, pour in 1 cup of batter. Start from the center in a swirling motion to make a 6 or 7 inch round. Fry on both sides until golden brown. Remove and drain on paper towels. Sprinkle with confectioners' sugar and serve warm.

2 large eggs, room temperature
1 cup 2% milk
1 cup water
1/2 teaspoon vanilla extract
3 cups all-purpose flour
1/4 cup sugar
3 teaspoons baking powder
1/4 teaspoon salt
Oil for deep-fat frying
Confectioners' sugar

Steps:

  • In a large bowl, beat eggs. Add milk, water and vanilla until well blended. In another bowl, whisk flour, sugar, baking powder and salt; beat into egg mixture until smooth. In a deep cast-iron or electric skillet, heat oil to 375°., Cover the bottom of a funnel spout with your finger; ladle 1/2 cup batter into the funnel. Holding the funnel several inches above the oil, release your finger and move the funnel in a spiral motion until all the batter is released, scraping with a rubber spatula if needed., Fry until golden brown, 2 minutes on each side. Drain on paper towels. Dust with confectioners' sugar; serve warm.

2 cups 2% milk
3 large eggs
1/4 cup sugar
2 cups all-purpose flour
2 teaspoons baking powder
Oil for deep-fat frying
Confectioners' sugar
Lingonberry jam or red currant jelly

Steps:

  • In a large bowl, combine the milk, eggs and sugar. Combine flour and baking powder; beat into egg mixture until smooth., In a cast-iron or electric skillet, heat 2 inches oil to 375°. Cover the bottom of a funnel spout with your finger; ladle 1/2 cup batter into funnel. Holding the funnel several inches above the skillet, release your finger and move the funnel in a spiral motion until all the batter is released. Scrape funnel with a rubber spatula if needed., Fry until golden brown, 1 minute on each side. Drain on paper towels. Repeat with remaining batter. Dust with confectioners' sugar. Serve warm with jam.

¼ cup vegetable oil for frying, or as needed
1 ¼ cups all-purpose flour, or more if needed
½ cup white sugar
½ cup water
½ cup milk
1 egg
1 tablespoon baking powder
1 teaspoon vanilla extract
½ teaspoon salt

Steps:

  • Pour enough oil into a skillet to completely coat the bottom and heat over medium-high heat.
  • Blend flour, sugar, water, milk, egg, baking powder, vanilla extract, and salt together in a blender until smooth. Add more flour if batter is too watery. Put your finger over the hole of a funnel and fill funnel with batter.
  • Hover filled funnel over the skillet, release finger, and swirl batter into the hot oil; cook until golden brown, about 5 minutes per side.

Vegetable oil, for frying
1 cup all-purpose flour
1 teaspoon baking powder
2 tablespoons light brown sugar
Rounded 1/4 teaspoon coarse salt
3/4 cup plus 1 tablespoon whole milk
1 large egg
2 tablespoons vegetable oil
1/2 teaspoon vanilla extract
1/2 cup confectioners' sugar

Steps:

  • Heat 1 inch vegetable oil in a deep-sided cast-iron pan to 350 degrees.
  • In a medium bowl, whisk together flour, baking powder, brown sugar, and salt. Create a well in center of bowl and pour milk, egg, 2 tablespoons vegetable oil, and vanilla extract into well. Whisk into dry ingredients until batter is smooth and transfer batter to a squeeze bottle with a 1/4-inch opening at top (or to a wet measuring cup).
  • Holding squeeze bottle 1 inch from oil, carefully squeeze batter into oil in a spiderweb pattern, starting from center, using about 1/4 cup batter per cake. Fry cake, flipping once, until golden brown on both sides, 3-4 minutes total. Transfer to a paper towel-lined plate to drain. Return oil to 350 degrees before frying next cake.
  • Sift confectioners' sugar over cakes just before serving.
