1 cup granulated sugar
1 cup milk
1/2 cup butter, melted
3/4 cup packed light brown sugar
1/2 cup butter, softened
1 cup old-fashioned oats
1/2 cup chopped pecans
4 ripe medium bananas, sliced
Vanilla ice cream, if desired

Steps:

  • Heat oven to 375°F. Spray 11x7-inch (2-quart) glass baking dish with cooking spray.
  • In medium bowl, mix 1 cup of the flour, the granulated sugar and milk with whisk just until blended. Stir in melted butter. Pour batter into baking dish.
  • In small bowl, mix brown sugar, remaining 1/2 cup flour and the softened butter with fork until crumbly. Stir in oats and pecans. Arrange banana slices over batter; sprinkle with oat mixture.
  • Bake 50 to 55 minutes or until golden brown and bubbly, covering with foil during last 10 minutes to prevent excessive browning, if necessary. Serve warm with ice cream.

My own creation! This recipe is good for diabetics, but can easily be made as a non-diabetic dessert by using real sugar instead of a sugar substitute. This dessert is not super sweet, allowing the natural sweetness of the fruit to come through. If you like sweeter desserts, double the amount of the sugar substitute or sugar. You can use whatever sugar substitute is your preference.

2 bananas, sliced
2 tablespoons all-purpose flour
1 teaspoon sugar substitute
1 cup all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
½ teaspoon ground cinnamon
½ cup skim milk
1 egg
1 tablespoon corn oil
2 teaspoons sugar substitute
½ teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8-inch baking dish.
  • Mix white peaches, bananas, 2 tablespoons flour, and 1 teaspoon sugar substitute in a bowl until the fruit is coated; spread into the bottom of the prepared baking dish.
  • Whisk 1 cup flour, baking powder, salt, and cinnamon in the same bowl used to mix fruit; stir in skim milk, egg, corn oil, 2 teaspoons sugar substitute, and vanilla extract to make a batter. Pour batter in an even layer over the fruit.
  • Bake in the preheated oven until cake is golden brown and a toothpick inserted into the middle of the cake layer comes out clean, about 30 minutes. Cool in pan on rack at least 20 minutes before serving.

2 c fresh fruit or fruit pie filling
THIS IS A DOUBLE RECIPE. CUT ALL AMOUNTS IN HALF FOR REGULAR RECIPE FOR 8X8 PAN.

Steps:

  • 1. Melt margarine in microwave.
  • 2. Add milk, flour and sugar; use wisk to blend all ingredients well
  • 3. Spray 9x13 baking dish with baking spray.
  • 4. Put 2 cups of fruit or (pie filling, if desired) in bottom of dish.

streusel topping

  • 1. Preheat oven to 375 F. Whisk together flour and next 2 ingredients just until blended; whisk in melted butter.
