SLOW COOKER THAI PORK
Slow cooker Thai pork takes just a few minutes to prep and comes out with tender chunks of pork and a rich, delicious peanut sauce!

Steps:
- Place pork and bell pepper strips in insert of slow cooker.
- In a separate bowl, whisk together the soy sauce, vinegar, garlic, red pepper flakes and ground ginger. Pour over the pork and peppers in the slow cooker.
- Cover and cook on high for 4 hours or low for 7-8 hours.
- Remove the pork and roughly chop it. (Or you can shred it if you prefer.)
- Add peanut butter to the sauce in the slow cooker and whisk to combine.
- Return pork to the slow cooker, stir to get it covered in the sauce, and let it sit on warm for at least 10 minutes.
- Squeeze fresh lime juice over the pork and serve with rice and desired toppings.

- 1. Grease crockpot or use a plastic liner.
- 2. Place pork, bell peppers,broth, teriyaki sauce, rice vinegar, red pepper flakes and garlic in cooker. Cover and cook on low setting until pork is fork tender, 6-8 hours.
- 3. Remove pork from cooker and coarsely chop. Add peanut butter to liquid in cooker; stir well to dissolve peanut butter and blend with liquid to make the sauce. Return pork to sauce and toss to coat the meat.
- 4. Serve in shallow bowls over hot rice. Sprinkle with green onions and peanuts. Pass lime wedges, to serve with this wonderful dish.
- 5. P.S.- I like to steam Snap Peas and add to this!

- Coat a slow cooker with cooking spray. Place the pork into the cooker. Pour the teriyaki sauce, vinegar, red pepper flakes, and garlic over the pork.
- Cover and cook on low until the pork is tender (4-5hours). Remove the pork from the cooker, and whisk in the peanut butter until smooth. Chop the pork into large bite-sized pieces and then put it back into the cooker. Put the pepper in and stir to coat.
- Cook for 60 minutes until the pork is very tender and the peppers are just tender.
- Serve in bowls over rice with green onions, peanuts and limes for garnish.

- Spread about half the onion slices into the bottom of the slow cooker. Arrange 5 pork chops atop the onion layer. Repeat layering with remaining onion and pork chops.
- Pour cream of onion soup, cream of mushroom soup, and water over the pork chops and onion. Sprinkle ranch dressing mix and onion soup mix over the pork chops; season with salt and pepper.
- Cook on High until the pork chops are tender to your liking, 2 1/2 to 3 hours. Alternately, you can cook on Low for 4 1/2 to 5 hours. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

SLOW COOKER TERIYAKI PORK TENDERLOIN

- Heat the olive oil in a skillet over medium-high heat. Brown tenderloins on all sides, about 10 minutes. Meanwhile, mix together teriyaki sauce, chicken broth, and brown sugar in a bowl. Stir in garlic, red chile pepper, onion, and black pepper.
- Put browned tenderloins into slow cooker, cover with the teriyaki sauce mixture. Cook on Low for about 4 hours, turning 2 to 3 times during the cooking time to ensure even doneness. Internal temperature in the tenderloin should reach 180 degrees F (82 degrees C).
- Remove tenderloins from the slow cooker and let rest for 5 minutes before slicing. If desired, spoon liquid over slices when serving.
