HOBO DINNER FOIL PACKETS
These delicious filled hobo dinners are perfect for cooking a mixture of carrots, potatoes and your meat all in a foil packet. It is fun to make and an easy dinner option for the summertime!

- Cut four sheets of heavy duty aluminum foil. Combine ground beef, garlic powder, onion powder, and salt and pepper. Shape into four patties and place in the center of the aluminum foil.
- In a medium sized bowl toss potatoes, carrots, onion olive oil and Italian seasoning. Divide evenly between the four packets. Fold the foil over and seal each packet.
- Place the packets on the grill or over the coals of a fire. Cook for about 45-60 minutes or until the potatoes are tender. Carefully open the foil packets and top with cheese.

EASY HOBO DINNER, TIN FOIL DINNER
An excellent camping dinner that can easily be made at home in the oven or on the grill. With very little cleanup, and customize-able even for the pickiest eater.

- Spread out Heavy Duty Tin Foil
- Form Hamburger patty
- Top with thinly sliced potato wedges
- add corn, carrots and any other vegetables you want. Including jalapenos
- Add a few slices of the beef sausage
- Season with Famous Dave's Burger and McCormick's Garlic pepper seasonings
- Fold tinfoil around food
- Cook in oven at 400 for 45 minutes
- Or Grill on heated frill for 30-40 minutes until vegetables are soft and meat fully cooked.
- Serve hot and still in foil packet.
FOIL STEW
Foil Stew (aka Hobo Dinner, Campfire Stew, Tin Foil Dinner) is easy, fun, and so good that you'll want to make it even when you aren't camping.

Steps:
- Put all foil stew ingredients in the middle of a large rectangle of heavy duty aluminum foil.Bring the foil up so that the ingredients are resting inside in a slightly elongated pile.
- Fold the top edges down together about 1 inch and crease. Fold over and do it again, and then once again. It helps to hold the foil stew up as you do this, because this allows you to keep some extra space in the packet, which helps in the cooking process. In other words, the folds themselves need to be very tight, but the foil stew inside should have a little wiggle room.
- Push the two ends down so that your foil stew is safely in the middle of the packet.
- Fold or roll the ends tightly.
- Get a second piece of foil and repeat steps A-D. Ready for the fire.
- To bake over an open fire, simply place your prepared foil stew on a bed of coals for 25-50 minutes, turning every 10-15 minutes. Check stew after 30 minutes, or 5 minutes after you begin to smell it cooking. See Cooking Time in NOTES below for more information.

These mini pot roast pockets are easy and delicious. And my favorite part...they require very little cleanup! Can be done in the oven, on the grill, or over the campfire on camping trips.

- Preheat oven to 350
- Divide ground beef into 4 even hamburger patties about 1 inch thick. If you are feeding children you may want to make their portions smaller.
- Wash your veggies. Cut carrots into 1 inch pieces and potatoes into 1-2 inch pieces.
- Place hamburger patties in the center of each piece of aluminum foil. Surround each patty with pieces of carrots, potatoes, and onions if you choose.
- Place 1/2-1 tbsp butter on the center of each patty. Sprinkles approx 1-2 tbsp of onion soup mix over the ingredients.
- Gather the corners of the foil up and scrunch together to seal each pocket. Place sealed pockets onto a baking sheet in case any sauce leaks out during baking.
- Bake at 350 for 40-60 minutes. Carefully unwrap one pocket keeping face away as steam escaping will be hot. Poke carrots and potatoes with a fork to check for doneness. Once vegetables are done the meat should be cooked through as well. You can check with a meat thermometer. Meat should read 140 degrees or more.

- Run cold water over the salmon, pat dry with paper towels. Place the fish on a rimmed baking sheet lined with aluminum foil. Drizzle the fish with a 1-2 teaspoons of olive oil and sprinkle with the citrus spice blend. Cut the fish in half, spread the shallots on top and place each half in a parchment bag or on a 12”x12” piece of aluminum foil.
