This is the most amazing soft and chewy caramel popcorn recipe you will ever make. This is one of my favorite tried-and-true dessert recipes that you can enjoy any time of the year. Made with only 6 inexpensive pantry ingredients, this will be everything you hope for in a caramel popcorn recipe.

3 bags regular size microwave popcorn, or 1 cup kernels popped
1/2 cup butter
1 cup brown sugar
1 cup corn syrup
1 can sweetened condensed milk
1/2 tsp. vanilla

Steps:

  • Place the popped popcorn in a large mixing bowl, and remove any kernels. Set aside.
  • In a medium saucepan combine butter, brown sugar, and corn syrup. Heat the ingredients over medium-low heat until the butter is melted and the ingredients are combined.
  • Pour sweetened condensed milk into saucepan and bring to a boil. Reduce to a simmer and continually stir for 3-4 minutes, making sure caramel doesn't burn.
  • Remove from heat and stir in vanilla.
  • Immediately pour caramel over popcorn and stir to coat all the popcorn well.
  • Allow caramel popcorn to cool slightly before serving. Enjoy.

11 cups popped popcorn
1 cup Spanish peanuts
1 ¼ cups dark brown sugar
10 tablespoons unsalted butter, cut into pieces
¼ cup dark corn syrup
1 teaspoon kosher salt

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Spread popcorn in the bottom of a large, deep roasting pan. Sprinkle peanuts over the popcorn.
  • Combine brown sugar, butter, corn syrup, and salt together in a saucepan over medium-high heat. Cook, whisking constantly, until sugar and butter are melted and sauce is thick and caramelized, 2 to 3 minutes.
  • Pour caramel sauce over the popcorn and peanuts and stir to coat popcorn and peanuts completely, scooping any peanuts and caramel that fall to the bottom of the roasting pan.
  • Bake in the preheated oven, stirring occasionally, until caramel and popcorn are crisped, about 45 minutes. Turn popcorn out in a single layer on a sheet of parchment paper to cool completely.

This is habit-forming, it is soooo good and so simple to make, you can also use unskinned almonds or use whatever nut you desire --- you may also add 1/3 cup molasses for a stronger caramel flavor :)

24 cups popped corn (1 cup unpopped)
1 cup butter or 1 cup margarine
2 cups brown sugar
1/2 cup corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 1/2 teaspoons vanilla
1 1/2 cups whole peanuts (or use both) or 1 1/2 cups unsalted walnut halves (or use both)

Steps:

  • Set oven to 250 degrees F.
  • Put the popped corn in a large bowl.
  • Melt the margarine (or butter) stir in brown sugar, corn syrup and salt; bring to a boil, stirring constantly.
  • Then boil for 5 minutes WITHOUT stirring (this is important DO NOT stir for 5 minutes!).
  • Remove from heat and stir in baking soda and vanilla.
  • Add in the nuts and stir to combine.
  • Pour the mixture over popped corn in bowl; mix well with a wooden spoon to combine.
  • Transfer to a large greased roasting pan, and bake for 1 hour, stirring every 10-15 minutes.
  • Remove from oven then cool.
  • Break into pieces.
  • Store in a tightly covered tin box.
  • Delicious!

Steps:

  • Spray large shallow roasting pan with cooking spray. Add popcorn and place in preheated 250 degrees F oven while preparing caramel.
  • Mix brown sugar, corn syrup, butter and salt in a heavy 2-quart saucepan. Stirring constantly, bring to a boil over medium heat.
  • Boil 5 minutes without stirring. Remove from heat. Stir in baking soda and vanilla; mix well.
  • Pour syrup over warm popcorn, stirring to coat evenly.
  • Bake for 45 minutes, stirring occasionally. Remove from oven and spread on foil that has been sprayed with cooking spray.
  • Cool; break apart. Store in tightly covered container.
