- Combine chicken broth, chicken breast cubes, onion, carrots, celery, bay leaf, salt, and pepper in a large pot; bring to a boil. Reduce heat, cover pot, and simmer until chicken is no longer pink in the center and the vegetables are tender, 20 to 25 minutes.
- Mix baking mix and milk in a bowl until dough is sticky; drop golf ball-sized pieces of dough into the soup. Cover pot and cook until dumplings are cooked through, about 10 minutes.

OLD FASHIONED CHICKEN AND DUMPLINGS (MADE EASY)

- NOTE: IF USING SALTED BUTTER, USE TWO 14.5 OUNCE CANS CHICKEN BROTH PLUS TWO CUPS WATER. (STEP ONE): Chop deboned skinless chicken into bite-sized pieces; set aside.
- MELT 1/2 cup (1 stick) unsalted butter in a large saucepan over medium-low heat. Add 1/2 cup all-purpose flour and cook until bubbly and light golden, stirring often for 2 minutes. Stir in the broth and seasonings. Bring mixture to boiling then reduce heat to medium. Add chunked or diced chicken; stir.
- COMBINE the dumpling dough ingredients, stirring only until soft dough forms (do not overmix). Drop dough quickly by teaspoons in a single layer over surface of bubbling gravy on one half of large saucepan (do not roll or press dough, or submerge beneath the gravy). Simmer mixture UNCOVERED for 10 minutes.
- GARNISH tops of dumplings with parsley or chives.
- COVER then reduce heat to medium-low.
- SIMMER covered for 10 additional minutes; UNCOVER and remove from heat.
- LIFT out dumplings individually using a small slotted spoon, placing them onto a plate, leaving dumplings garnished side-up.
- STIR chicken and gravy using a wooden spoon (gently scraping bottom of saucepan while stirring).
- LADLE the chicken/gravy mixture into bowls, then arrange dumplings over the top.
- SERVE and enjoy.

QUICK-AND-SPICY CHICKEN 'N' DUMPLINGS

- Rinse chicken with cold water; pat dry. Combine 2 cups baking mix, paprika, and next 6 ingredients in a large zip-top freezer bag. Add chicken thighs, 1 at a time; seal bag, and shake to coat.
- Heat 1 tablespoon oil in a 6-quart Dutch oven over medium heat. Add half of chicken, and cook 5 minutes on each side or until golden brown; remove chicken. Repeat procedure with remaining oil and chicken.
- Add 1/2 cup chicken broth to drippings in pan, stirring to loosen browned bits from bottom.
- Return chicken to pan; stir in remaining broth and 2 seasoning packets. Bring to a boil; cover, reduce heat, and simmer 25 minutes.
- Combine milk and remaining 2 cups baking mix in a medium bowl, stirring just until moistened. Drop dough by tablespoonfuls onto simmering chicken mixture; cook, uncovered, 10 minutes. Cover, and cook 10 more minutes. Serve immediately.
QUICK-N-EASY CHICKEN AND DUMPLINGS

- To make the dumpling batter, combine the baking mix, milk and garlic powder in a medium bowl. Stir until just combined. Set aside.
- In a medium pot, combine the stock, salt, pepper, thyme and bay leaf and bring to a boil. In a small dish, whisk the flour with 1/4 cup water and stir into the chicken stock. Add the chicken and mixed vegetables. Using a tablespoon or an ice cream scoop, drop scoops of the dumpling batter into the boiling stock. OLD-FASHIONED CHICKEN "N" DUMPLINGS

- For the chicken: In a large pot, cover the chicken with water and add 1 teaspoon salt and 1/2 teaspoon pepper. Bring to a boil and let simmer until cooked through, about 40 minutes. Let cool, then remove the chicken meat from the bones. Add the shredded chicken back to the broth and reserve.
- For the dumplings: Add the flour, baking powder and 1 teaspoon salt to a mixing bowl and mix well. Add the milk and egg and mix well with a fork. Bring the reserved chicken broth to a simmer. Drop the dough into the broth by the spoonful and simmer, covered, for 10 to 15 minutes. Add some roux and cook until the broth has thickened. Season with salt and pepper. - For the chicken: Heat the oil in a large Dutch oven or heavy-bottomed pot with a lid over medium-high heat until shimmering. Add the carrots, celery, onion, 1/2 teaspoon salt and about 10 grinds black pepper and cook, stirring occasionally, until the vegetables just begin to soften but don't take on any color, 4 to 5 minutes.
- Stir in the garlic and thyme and cook until fragrant, about 1 minute. Add the wine and simmer until completely evaporated, 4 to 5 minutes. Stir in the butter until completely melted. Sprinkle the flour over the vegetables and stir until it is completely incorporated and a sandy paste forms. Pour in the milk and stir until the flour has been smoothly incorporated into the liquid.
- Add the chicken and the chicken stock to the pot and stir to combine. Bring the mixture to a boil then lower the heat to medium-low and simmer until the chicken is cooked through, 15 to 20 minutes. Stir in the parsley and peas and remove from the heat.
- For the dumplings: Whisk together the flour, baking powder, garlic salt, 1/2 teaspoon salt and about 10 grinds black pepper in a medium bowl. Stir in the melted butter until just combined, then add the milk and stir until a ball of dough forms.
- Use a small ice cream scoop or measuring cup to scoop 10 balls of dough into the pot (about 2 tablespoons each). - Combine the first 8 ingredients in a large pot.
- Simmer covered, 1 to 1 1/2 hours or until chicken is tender.
- Skim off fat.
- DUMPLINGS.
- Combine dry ingredients.
- Stir in remaining ingredients.
- Drop by tablespoonfuls onto hot chicken and boiling stock.
- Cover tightly and return to boiling.

- In a shallow bowl, mix 1/2 cup flour, salt and pepper. Add chicken, 1 piece at a time, and toss to coat; shake off excess. In a 6-qt. stockpot, heat oil over medium-high heat. - Preheat oven to 400 degrees.
- FILLING.
- Steam vegetables until just tender. Set aside.
- My favorite vegetable combinations are broccoli, cauliflower and carrots or potatoes, corn, and carrots.
- Melt butter in large frying pan over medium heat.
- Add onion and saute for approximately 8 minutes.
- Stir in flour and cook for an additional 2 minutes.
- Add broth and milk. Stir until sauce has thickened.
- Remove from heat and stir in parmesan cheese. It will become a nice creamy sauce!
- Stir in vegetables and shredded chicken.
- Pour filling into a 9 inch square casserole pan.
- DUMPLINGS:.
- Mix together dry ingredients.
- Cut in shortening with pastry knife until mixture resembles coarse cornmeal.
- Lightly mix in milk until forms a soft dough.
- Drop by tablespoons onto filling.
- Bake for 20 - 25 minutes.
EASY HOMEMADE CHICKEN 'N DUMPLINS
Steps:
- Boil chicken breast in large pot with lid until no longer pink. Drain some but not all of the water, save at least 2 cups.
- Remove chicken and either dice into cubes or tear apart. Make sure to have the chicken in bite-size pieces.
- Return chicken to broth water. Add chicken broth, cream of chicken soup, and only half of the can of cream of celery soup. Blend well. Consistency should be thin before you add biscuit dough.
- Seperate biscuits. Cut each biscuit into halves ( two strips each) add to soup mixture. Add salt and pepper to taste.
- Cover and cook for approximately 12-15 minutes on medium to medium/ high heat. Stir once or twice but do not over stir- it will make the dumplins fall apart.
- Remove from heat, let cool for at least 5 minutes before serving to allow for any thickening.

- Heat olive oil in a large stockpot over medium-high heat until it begins to smoke. Add celery, carrots, onion, and bell pepper. Stir using a wooden spoon until vegetables begin to soften, 5 to 8 minutes.
- Add garlic to the pot and stir until fragrant, about 1 minute. Add butter and stir until melted and coating all the veggies, 2 to 3 minutes. Stir in salt and pepper. - Boil chicken, in a large stockpot, with onion, garlic and salt and pepper. Remove and shred with a fork, when it is no longer pink. (Do NOT Drain the Water) Add back to stock pot. Add cream of chicken soup and stir until well combined. Bring back to a soft boil. To make the dumplins: Mix flour, baking powder, salt and milk in a large bowl, until a stiff dough forms. If it is too sticky, add more flour. If it is too tough, add a splash more milk. Pinch a small amount of the dumplin mixture and add it straight to the boiling chicken mix, cook until it is the desired "doneness". Approximately 10 minutes or so.

- In a large stock pot, add the first 6 ingredients.
- Let chicken and liquid come to a boil, reduce heat to medium, and cook for about an hour.
- 30 minutes before chicken is done, start the dumplins.
- Combine the flour, poultry seasoning, salt, and baking powder. Mix well.
- Cut the butter into the flour mixture until the consistency is crumby.
- Beat the egg and combine with the chicken broth.
- Pour the chicken broth and egg mixture into the flour mixture.
- Stir until all ingredients are combine.
- On a floured surface, roll out the dough with a floured rolling pin.
- Roll out dough until about 1/8 inch thick.
- With a pizza cutter, cut dough into strips, then cut again perpendicularly to form little square dumplins.
- I flour the dumplins again to ensure they do not stick together when placed into the stock pot.
- Once the chicken has cooked for an hour, remove chicken from liquid.
- Bring liquid to a full boil and add dumplins a few at a time.
- Once all dumplins are in the stock pot, cook for 15 minutes.
- Stir every once in a while to make sure they do not stick to each other or to the bottom of the pot.
- While the dumplins are cooking, shred or chop the chicken into little pieces. *See note if you would like the stock to be thicker.
- After the dumplins are done cooking, remove stock pot from heat and fold in the chicken.
- *Note: Combine the milk and cornstarch and add to the dumplins after they had cooked for the 15 minutes. This will thicken it slightly. Then fold in chicken.

CHICKEN AND DUMPLINGS
Chicken and dumplings are a family favorite! I remember when my mom used to make this dish using store-bought biscuits and a whole chicken. This is my version--made with boneless, skinless chicken thighs and homemade chive dumplings with dough that won't make you miss the pre-made kind!

- For the chicken: Heat a large braiser or Dutch oven over medium-high heat and add 4 tablespoons butter. Sprinkle the chicken thighs with salt and pepper and add to the pan. Cook until golden, turning once, about 3 minutes per side. Remove to a plate.
- Add the remaining 2 tablespoons butter, the onion, celery and carrots and season with salt and pepper. Cook, stirring frequently and scraping up the brown bits that cling to the bottom of the pan with a wooden spoon, until the vegetables are coated in fat and slightly golden, about 3 minutes. Add the flour and stir until the vegetables are coated. Add the garlic and cook until fragrant, about 30 seconds. Add the chicken stock, bay leaf and browned chicken, along with any chicken juices at the bottom of the plate. Bring to a boil, lower to a simmer, cover and simmer until the chicken is tender and cooked through, about 45 minutes.
- For the dumplings: Whisk together the flour, baking powder and salt in a large bowl. Using a fork, cut the shortening into the flour mixture. Slowly add the buttermilk, gently mixing to incorporate. Fold in the chives.
- Use 2 forks to shred the chicken. When the chicken is ready, use 2 spoons sprayed with cooking spray if desired to add scoops of dumpling dough over the top of the stew, about 1 tablespoon each. Cover and simmer until the dumplings double in size, about 15 minutes. Remove from the heat, discard the bay leaf and garnish with parsley.

- Heat milk and butter for dumplings in a small saucepan over medium heat until butter melts, 2 to 3 minutes. Remove from heat.
- Combine flour, baking powder, parsley, and salt in a bowl. Stir in club soda and milk mixture until dough forms a ball, making sure not to overmix. Cover dumpling dough and let stand for 30 minutes.
- Combine chicken stock and cream of chicken soup in a large saucepan or Dutch oven. Bring to a simmer over medium-high heat. Add chicken, potatoes, onion, celery, carrot, bell pepper, peas, lemon, and thyme. Poach until chicken is no longer pink in the centers and vegetables are tender, about 12 minutes. Transfer chicken to a plate to cool; transfer vegetables to a bowl, leaving stock in the pan. Discard thyme and lemon.
- Boil remaining stock over medium-high heat until reduced by 1/3, 5 to 7 minutes.
- Meanwhile, pour cream into a small saucepan and heat over medium-high heat. Cook until reduced by about 1/2, 7 to 10 minutes. Whisk into reduced stock. Season with salt and pepper and set aside.
- Chop cooled chicken into bite-sized pieces.
- Melt butter in a small skillet over medium-high heat. Add mushrooms, season with salt and pepper, and saute for 2 to 3 minutes. Stir into stock mixture and add chicken and cooked vegetables.
- Bring soup to a simmer over medium heat, adding more stock if necessary. Drop dumpling dough by teaspoons into the mixture. Cover and let simmer for 7 to 8 minutes. Serve hot garnished with parsley and green onion.
