SHEET PAN CHICKEN FAJITAS



Sheet Pan Chicken Fajitas image

SHEET PAN DINNER! The quickest meal you can make with amazingly tender chicken + crisp-tender veggies with the easiest clean-up!

Number Of Ingredients 15

2 teaspoons chili powder
2 teaspoons ground cumin
2 teaspoons dried oregano
1 teaspoon smoked paprika
Kosher salt and freshly ground black pepper, to taste
1 1/2 pounds boneless, skinless chicken breasts, cut into thin strips
1 red bell pepper, cut into strips
1 yellow bell pepper, cut into strips
1 orange bell pepper, cut into strips
1 red onion, cut into wedges
3 cloves garlic, minced
3 tablespoons olive oil
1/4 cup chopped fresh cilantro leaves
2 tablespoons freshly squeezed lime juice
6 (8-inch) flour or corn tortillas, warmed

Steps:

  • Preheat oven to 425 degrees F. Lightly oil a baking sheet or coat with nonstick spray. In a small bowl, combine chili powder, cumin, oregano, paprika, 1 1/4 teaspoons salt and 1 1/4 teaspoons pepper. Place chicken, bell peppers, onion and garlic in a single layer onto the prepared baking sheet. Stir in olive oil and chili powder mixture; gently toss to combine. Place into oven and bake for 25 minutes, or until the chicken is completely cooked through and the vegetables are crisp-tender. Stir in cilantro and lime juice. Serve immediately with tortillas.

I live in San Antonio, TX we have alot of good mexican food but I can't always eat out. This is another one of my "recipes", I hesitate to call it that because its too easy. This turns out really good though and the whole house smells nice, good alternative when you can't fire up the grill (we live in an apartment). When I get home from work I can put this together in just a few minutes. I generally pick up tortillas from a drive through place (Taco Cabana's are too good not to) on my way home from work. When my husband arrives home and smells this he sits straight down at the table.

3 -4 chicken breasts, sliced into thin strips
1 ounce taco seasoning mix (Half or less)
1 large onion, sliced
1 bell pepper, sliced
1 dash olive oil

Steps:

  • Heat just a tad bit of oil in the frying pan and throw in the sliced onions and bell peppers let them start to cook.
  • Throw in the sliced chicken breasts then sprinkle everything with 1/2 packet of any taco seasoning.
  • Cook until onions are translucent and chicken is cooked through.
  • Dish into tortillas with sliced avacado, beans ( I like the ranch style beans from a can), cheese, lettuce, tomatos, whatever you like.

  • Light grease a large sheet pan with non-stick cooking spray. Cut chicken and vegetables into strips. Lay the vegetables evenly on the pan and place the chicken on top of them.
  • Combine seasoning ingredients together in a small bowl. Stir well to combine. Sprinkle most of the seasoning over the chicken, and some of it over the vegetables as well. Spoon minced garlic on top of the chicken and drizzle olive oil over the entire pan. Toss everything well and spread it into an even layer across the pan.
  • Cook for 15-20 minutes or until chicken is cooked through (165 degrees if you test with a thermometer). Wrap the flour tortillas in foil and place them in the oven to warm during the last 5 minutes of cooking.
