Since my husband loves black olives, I am trying to incorporate them more into my recipes. I came up with this one and he flipped over the sauce! It took me less than 30 minutes from starting preparation until it hit the table - so easy! I served it with the sauce over brown rice.

4 boneless skinless chicken breasts
1 tablespoon olive oil or 1 tablespoon cooking spray
1/2 cup chicken broth
1 tablespoon oregano
1 (14 1/2 ounce) can stewed tomatoes
1 (14 1/2 ounce) can Italian-style diced tomatoes
1 (4 1/4 ounce) can sliced olives
shredded parmesan cheese (optional)

Steps:

  • In large skillet, heat olive oil. Add chicken breasts and cook until firm, about 4 minutes each side.
  • Remove chicken breasts and cover with foil.
  • To same skillet, add chicken broth, tomatoes and olives. Bring to boil.
  • Reduce heat and simmer until thickened, about 10 minutes.
  • Return chicken to pan and cook another 2-3 minutes.
  • If desired, sprinkle chicken with parmesan cheese and serve sauce over rice.

2 lbs chicken breasts (cut to similar sizes)
1/2 cup Italian dressing
1 tablespoon olive oil
2 tablespoons lemon juice
2 garlic cloves (crushed)
1 shallot (minced)
1/2 teaspoon pepper (cracked)
1/2-1 teaspoon hot sauce

Steps:

  • Mix marinade ingredients and place chicken and marinade in a gallon ziplock bag.
  • Marinate 30 mins to 24 hours.
  • Preheat grill to med high.
  • Grill breasts for 3 to 4 mins per side or till juices run clear and chicken reached 155 degrees.
  • Remove from grill and wrap in foil. Let sit about 5 minutes Chicken will continue to cook to 160.
  • You should know your grill. Chicken may take a little longer to cook or it may take less time. The sitting is critical to the chicken staying moist.

  • Cut up peppers into big chunks, and zucchini into big slices. Put into another sealable bag. Coat with leftover dressing.

6 bone-in chicken thighs (about 2-1/4 pounds)
1/2 teaspoon pepper
1-1/2 teaspoons minced fresh rosemary or 1/2 teaspoon dried rosemary, crushed
3/4 teaspoon minced fresh oregano or 1/4 teaspoon dried oregano
1/4 teaspoon minced fresh basil or 1/8 teaspoon dried basil
2 tablespoons olive oil
9 garlic cloves, minced and divided
3/4 cup red wine vinegar
1/4 cup balsamic vinegar
1 tablespoon chicken base
1/2 cup chardonnay or chicken broth
1 tablespoon heavy whipping cream
1 tablespoon cold butter

Steps:

  • Sprinkle chicken with pepper. Combine rosemary, oregano and basil; sprinkle half the herb mixture over chicken. In a large skillet over medium heat add chicken, skin side down. Brown chicken on both sides. Add 8 garlic cloves; cook 1 minute longer. Stir in vinegars and chicken base. Cook, covered, on low heat until a thermometer reads 170°-175°, 15-20 minutes., Remove chicken to a serving platter; keep warm. Add chardonnay to pan; increase heat to medium-high. Bring to a boil; cook, uncovered, until liquid is reduced by half, 8-10 minutes, stirring to loosen browned bits from pan. Strain sauce. 12 tablespoons cornflour
5 -6 tablespoons dried Italian seasoning

1 onion
1 red pepper
2 zucchini
425 g tomatoes
1 cup red wine
1 tablespoon lemon rind
2 tablespoons lemon juice
1 tablespoon brown sugar
3/4 cup black olives
3/4 cup sliced mushrooms

Steps:

  • COMBINE cornflour, dried italian seasoning (i.e. oregano, parsley etc.)and pepper in bowl or ziplock bag.
  • SLICE chicken breasts in half lengthways and then in 2 to 3 pieces across;.
  • FLOUR chicken; shake excess off before.
  • HEAT pan; then add oil; BROWN chicken and REMOVE.
  • Saute garlic, onions, mushrooms and red or green pepper until SOFT.
  • ADD diced zucchini, can of diced tomatoes with juice, red wine, lemon juice, lemon rind and brown sugar.
  • Bring to a BOIL, reduce to simmer.
  • ADD chicken back into large pot on stove and simmer for 1 hour until chicken is tender.
  • When done, add black olives and.
  • ENJOY!
  • NOTE: Recipe might vary depending on size of chicken breasts
  • NOTE: Cornflour to Italian season should be 2 Tbsp to 1 Tbsp ratio whatever total amount you use to coat chicken.
  • NOTE: Also tried recipe by pouring sauce oven chicken and baking it on low in oven (120 - 150 degrees) and found while it was still tasty, it did not have the same taste/consistency as that done on the stove top.
  • NOTE: I covered the chicken while simmering on the stove top but you might need to stir every now and then to make sure it does stick.

2 slices Italian bread
1 tablespoon pesto
2 slices mozzarella cheese
¼ pound sliced cooked chicken breast

Steps:

  • Preheat an electric grill (such as George Foreman®) for medium heat. Spread olive oil on one side of each bread slice.
  • Place one slice of bread, oil-side down, on the preheated grill. Spread 1/2 of the pesto on the bread and put a slice of mozzarella cheese over top. Arrange chicken over the cheese and top with remaining mozzarella. Spread remaining pesto on the other slice of bread and place on top of the sandwich.
