Easy Lemon Blueberry Cake Bars Upgraded Boxed Cake Mix Recipes

BLUEBERRY LEMON BARS

Steps:

• Preheat the oven to 350°
• Line with parchment paper or grease a 9x9 baking dish
• In a large bowl, beat the eggs and oil together.
• Beat in the white cake mix.
• Fold in the rinsed blueberries.
• Spread evenly into prepared baking dish.
• Bake for 35-40 minutes. Check the center with a toothpick for doneness.
• Remove from the oven and allow to cool completely before glazing.
• To prepare glaze, combine the lemon juice4 and the confectioner's sugar until smooth.
• Pour over cooled cake.

EASY LEMON BLUEBERRY CAKE BARS (UPGRADED BOXED CAKE MIX)

Steps:

• Preheat oven to 350.
• Mix together 1 box lemon cake mix, 3 eggs, 1/2 cup melted butter, 1/4 cup water, 1/4 cup lemon juice
• Add in 1 cup plain yogurt and 1 cup fresh blueberries.
• Pour the batter into a well greased baking dish and bake in the oven at 350 for 45 minutes.
• Remove cake from over and let cool.
• Flip cooled cake over onto a tray and ice it, or cut into bars and ice individually using the lemon icing.
• Garnish with lemon zest and a few fresh blueberries.
• Enjoy!
• While the cake is baking you can prep the icing. Whisk together 1 container of white icing with the juice and zest of 1/2 a lemon. Set aside.

Steps:

• In a bowl, combine the flour, butter and confectioners' sugar. Pat into an ungreased 8-in. square baking pan. Bake at 350° for 20 minutes. , For filling, in a small bowl, beat eggs. Add the sugar, flour, baking powder, lemon juice and zest; beat until frothy. Pour over the crust. Bake 25 minutes longer or until light golden brown. Cool on a wire rack. Dust with confectioners' sugar. Cut into bars.
