Easy Mixed Berry Keto Cobbler image

Mixed Berry Keto Cobbler is a simple and delicious way to enjoy fresh berries in this cobbler! Sweet, tart, and tasty are all wrapped up in this super simple dessert.

5 tbsp Ghee or butter separated
1 Egg, beaten
1 cup Almond flour
2 tbsp Lakanto Powdered Sweetener
1/2 tsp Vanilla extract
1/2 tsp Almond extract
3/4 cup grams Whole raspberries
3/4 cup Whole blackberries

Steps:

  • Preheat the oven to 350 degrees.
  • In a mixing bowl, combine 4 tbsp of the ghee or butter, a beaten egg, almond flour, Lakanto powdered sweetener, vanilla extract or almond extract. Beat on high until well combined.
  • In a small oven safe skillet, heat 1 tbsp of ghee or butter over medium heat.
  • Add the raspberries and blackberries to the skillet, and cook down for 2-3 minutes.
  • Remove the skillet with the berries from the heat, and scoop the batter mixture onto the top of it. Spread the batter out in an even layer on the top of the berry mixture.
  • Bake or 25-30 minutes or until the crust is a golden brown.

2 cups raspberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9 inch baking dish.
  • In a large bowl combine flour, sugar, baking powder and salt. Stir in butter, milk, vanilla and egg until smooth. Fold in raspberries. Pour into prepared pan.
  • Bake in preheated oven 35 to 40 minutes, until top is firm.
