MONTEREY CHICKEN
Monterey Chicken takes BBQ chicken to the next level by smothering it with Monterey Jack cheese, bacon, and a few fresh veggies. It's a fun new twist on leftover chicken or a delicious way to use boneless, skinless chicken breasts!

Steps:
- Preheat the oven to 400F.
- Mix together the chicken and BBQ sauce and spread it into a 12-ounce gratin dish. Top with the cheese and scallion.
- Bake until the chicken is warm and the cheese is melted, about 10 to 15 minutes.
- Top with the crumbled bacon, tomato, and red onion.
- Serve.

- Pound chicken breast until it is somewhat flattened, and season with salt and pepper.
- Spray Pam in a nonstick skillet, and cook chicken breast until it is done.
- Transfer to a serving plate.
- Top chicken breast with Barbeque sauce, bacon, and cheese.
- Broil chicken breast in the oven, or melt the cheese in a microwave.
- Sprinkle with a small amount of cold chopped tomatoes and chives.
CHILI'S MONTEREY CHICKEN
When I worked at Chili's back in the day I used to order this all the time. It's so delicious and a real hit at the dinner table. My trick to cooking super crispy bacon quickly and mess free is to lay strips on broiling pan or foiled cookie sheet and LOW BROIL until crispy. Works like a charm!

Steps:
- Pound chicken breasts with mallet between wax paper until flat.
- Season with salt and pepper.
- Spray non-stick cooking spray into non-stick skillet, cooking chicken until done.
- Transfer to broiling pan.
- Top chicken with bbq sauce, bacon and cheese.
- Place chicken in oven on LOW BROIL until cheese is melted.
- Remove from oven and onto serving plates,.
- Top with chopped tomatoes and chives.
- Enjoy!

- Place the chicken breasts in a ziptop bag (or sandwich in between two sheets of wax paper) and pound them out one at a time using a rolling pin or mallet. Begin at the thick end, and continue until the chicken is of even thickness, about a 1/2" thick.
- Pat the chicken dry with paper towels and transfer a work surface. Drizzle the chicken with the oil and season evenly with the salt, pepper, paprika, garlic powder, and onion powder. Rub all over to adhere. Set aside.
- Place a skillet over medium-high heat and bring to temperature. Add the bacon and cook for about 6-8 minutes, turning it halfway through. Transfer the bacon to a paper towel-lined plate.
