NACHOS CHEESE DIP & SAUCE



Nachos Cheese Dip & Sauce image

This dip is great not only because it's a two-in-one recipe, but because unlike most other cheese dips and sauces, it does not separate and congeal as it cools and it is just as good (if not better) served cool or at room temperature as it is warm. It's also a super simple recipe which takes minutes to prepare and only 5 or so minutes to cook.

Number Of Ingredients 8

2 1/2 cups / 225g / 8oz shredded cheese (Cheddar, Monterey Jack, Colby, etc), shred your own (Important - read Note 1)
1 tbsp cornstarch ((corn flour))
1 can evaporated milk ((375g / 12oz))
2 tbsp finely chopped jalapeño peppers ((fresh or canned))
1 tbsp hot sauce ((or adjust to your taste))
1/2 tsp onion powder ((optional - adds extra flavour))
1/2 tsp garlic powder ((optional - adds extra flavour))
1 tsp salt

Steps:

  • Toss the cheese and cornstarch together in a saucepan.
  • Add all other ingredients, cook over medium heat, whisking often until the cheese is melted and smooth.
  • Adjust to your taste if required - with extra hot sauce and salt.
  • While hot, it will have a sauce like consistency - perfect for pouring over nachos.
  • As it cools, it will thicken and become a dip-like consistency. Whisk occasionally to mix in the skin that forms on the top.
  • Stir in additional evaporated (or even normal) milk to achieve the desired consistency if you want to use it as a pourable sauce. Note that when you reheat it, it loosens up.

8 oz cream cheese
1 cup sour cream
1 tbsp taco seasoning (*see homemade recipe above)
15.5 oz salsa
2 cups Mexican Blend Cheese (*shredded)
Green Onions/Tortilla Chips

Steps:

  • In a medium bowl, combine the cream cheese, sour cream, and taco seasoning until smooth and creamy.
  • Spread into a shallow dish, such as a pie plate.
  • Sprinkle additional taco seasoning on top if desired.
  • Pour salsa evenly on top of cream cheese mixture.
  • Spread Mexican cheese on top of salsa and place dish into refrigerator for minimum of 1 hour.
  • Remove and add green onions on top. Serve with tortilla chips.

EASY "NAKED" NACHO DIP

I love nachos, but I hate the time and mess it makes to pile all the ingredients on top of the chips, only to make them soggy. I prefer this "naked" method. To serve, just put the dish in the middle of the table, surround it with little individual dishes of toppings and let everyone make their own! Great for picky eaters! (All topping measurements are approximations, use as much or as little as you'd like.)

1 lb lean ground beef
2 (1 1/4 ounce) packages taco seasoning (recommend hot or spicy to add flavor)
1 -2 cup black olives, sliced, drained (recommend using 2-3 small cans of pre-sliced, for ease)
2 (16 ounce) cans chili with beans (recommend Nalley's Thick Chili, to avoid too much liquid in the dip, or drain a regular can of chili)
2 cups cheddar cheese, shredded (for melting)
2 tomatoes, chopped
1/2 head lettuce, shredded
1 onion, finely chopped
2 cups monterey jack cheese, shredded (for topping, can use any Mexican blend cheese)
1 cup salsa
1 pint sour cream
1 pint guacamole
1 lb tortilla chips (Tostidos Scoops work great for this)

Steps:

  • In a skillet, brown the ground beef, drain grease. Add taco seasoning and cook to package directions.
  • Preheat oven to 350°F.
  • Pour beef mixture into a large baking dish. Add a layer of olives. Pour the chili over the top. Cover with foil and bake in oven for 15 minutes. Remove foil, add 2 cups of shredded cheddar cheese and bake uncovered for 5 more minutes or until cheese is melted.
  • To serve, use a large spoon and put a serving on the plate, then add all the other toppings to your liking. Scoop up each individual bite with chips.

1 onion, chopped
1 (1.25 ounce) package taco seasoning mix
2 (16 ounce) cans refried beans

¼ cup chopped iceberg lettuce
1 chopped green onions
