Easy One Pot Pasta Primavera image

This Easy One Pot Pasta Primavera is going to become your family's new favourite healthy weeknight meal! It's made with basic ingredients you probably already have in your kitchen, and it's so creamy and delicious!

½ box Barilla Spaghetti noodles
2 ¼ cups hot water
½ teaspoon sea salt
¼ teaspoon pepper
2 cloves garlic (finely minced)
1 cup chopped zucchini
1 ½ cup mushrooms (quartered)
½ cup julienned carrots
½ cup frozen peas
½ cup frozen corn
1 ½ cup cherry tomatoes (halved)
¾ cup grated fresh parmesan cheese
¼ cup heavy cream
more shaved parmesan (for garnish)
chopped fresh parsley and basil (for garnish)

Steps:

  • Heat a large skillet over medium high heat and add the spaghetti noodles and hot water, along with the salt, pepper and garlic.
  • Cover and let boil until the pasta is about half cooked and some liquid remains.
  • Remove the lid and add the zucchini, mushrooms, and carrots and toss well, covering the skillet again for several minutes until the vegetables soften.
  • Add the frozen peas and corn, cherry tomatoes, parmesan and heavy cream and toss well, cooking for 1-2 more minutes until a creamy sauce forms and all the vegetables are soft.
  • Serve immediately with more shaved parmesan and fresh parsley and basil.

4 cups broth, of your choice
10 oz linguine, uncooked
10 oz broccoli floret
1 lb asparagus, chopped into 1-inch (2 cm) pieces
1 small onion, diced
4 cloves garlic, minced
½ teaspoon red pepper flakes
salt, to taste
pepper, to taste
1 teaspoon olive oil, to taste
4 oz mushroom, sliced
¼ cup heavy whipping cream
½ cup grated parmesan cheese
3 tablespoons fresh parsley, finely chopped

Steps:

  • In a pot over high heat, combine broth, linguine, broccoli, asparagus, onion, garlic, red pepper flakes, salt, pepper, and olive oil. Stir.
  • Add the mushrooms and bring to a boil.
  • Once at a boil, reduce heat to medium and cook the pasta for 10 minutes, continuously tossing with tongs.
  • Add the heavy cream, parmesan, and parsley, and toss for an additional 3 minutes.
  • If the liquid hasn't been completely absorbed, let the pasta sit off the heat for an additional few minutes.
  • Enjoy!

This one-pot penne pasta cooks quickly and easily thanks to using Prego® Traditional Italian Sauce as a shortcut. Delicious, hearty and full of summer veggies, this one-pot pasta primavera is great for busy weeknights and will please the whole family.

Number Of Ingredients 9

1 tablespoon olive oil
1 medium onion, diced
1 medium zucchini, chopped
1 green bell pepper, chopped
1 24-ounce jar Prego® Traditional Italian Sauce
2 1/2 cups vegetable broth
12 ounces penne pasta
Fresh basil, for garnish
Parmesan cheese, for garnish (if desired)

Steps:

  • Heat oil in a Dutch oven or large nonstick skillet over medium-high heat. Add the onion, zucchini, and bell pepper and cook, stirring frequently, until the vegetables just start to soften (about 5 minutes).
  • Stir in the Prego® Traditional Italian Sauce and vegetable broth until well mixed, then stir in the penne noodles, making sure they are evenly submerged in the liquid. Bring to a boil and reduce heat to medium.
  • Cook, uncovered, stirring occasionally until the pasta is al dente (about 15 minutes). Garnish with fresh basil leaves and Parmesan cheese (if desired).
