1 teaspoon vegetable oil
1 tablespoon white sugar
1 teaspoon salt
1 pinch ground cayenne pepper

Steps:

  • Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with foil, and coat well with vegetable cooking spray. Scrub potatoes well and cut into 1/2 inch thick fries.
  • In a large mixing bowl, toss potatoes with oil, sugar, salt and red pepper. Spread on baking sheet in one layer.
  • Bake for 30 minutes in the preheated oven, until potatoes are tender and browned. Serve immediately.

2 tablespoons olive oil
6 sprigs fresh thyme, or 2 teaspoons dried
Salt and freshly ground pepper

Steps:

  • Heat oven to 425 degrees. Cut potatoes lengthwise into thick slices, then into 1/2-inch-by-1/2-inch-thick strips. Place in a bowl of cold water until ready to use. Drain and dry well on paper towels.
  • Toss potatoes with oil and spread out on a dark roasting pan or baking sheet. Scatter thyme over potatoes. Bake for 35 to 40 minutes, turning occasionally, until potatoes are brown and crisp on all sides.
  • Remove from oven, discard thyme stems (the leaves will have fallen off), sprinkle with salt and pepper, and serve immediately.

2 large Russet potatoes ((baking potatoes), peeled, ends trimmed and cut into 1/4 inch matchsticks)
1/2 tbsp salt
1/4 tsp dried oregano
1/4 tsp garlic powder
1/4 tsp onion powder
1/8 tsp black pepper
1 tsp paprika ((or less to taste))
3 tbsp olive (, avocado or vegetable oil)

Steps:

  • Fill a large bowl with cold water and place potatoes in it. Let them soak for 15-30 minutes at room temperature.
  • Rinse and drain, place potatoes on a plate liked with paper towels and dry them well.
  • Preheat oven to 425 F. Line a large baking sheet with parchment paper.
  • Place potatoes in a clean and dry bowl. In a small bowl, combine all ingredients for the seasoning. Sprinkle over potatoes, make sure they are coated in seasoning evenly. Drizzle with oil.
  • Transfer potatoes on the baking sheet, leaving some space between each one.
  • Bake for 15 minutes. Then carefully flip fries, (using a metal turner works best). Bake for 15-20 more minutes until golden and crispy one the outside and tender on the inside. Let them cool for 5 minutes, then transfer to a plate and serve with your favorite dipping sauce.

1 -2 tablespoon extra virgin olive oil (use a good quality - I use Mastero)
salt
Pam cooking spray

Steps:

  • Wash potatoes and cut them into semi-thin strips.
  • Place strips in a bowl and add cool water to cover the potatoes.
  • Wash out some of the"starch" and then drain the potatoes well.
  • Mix in the olive oil and sprinkle with salt.
  • Mix all of the potatoes well so that they all get coated evenly.
  • Spray a cookie sheet with PAM and then place the potatoes on top.

2 russet potatoes (about 1 pound)
1 teaspoon coarse salt (to taste)
1 tablespoon oil

Steps:

  • Start with a couple of medium russet potatoes (about one pound). That will make four servings. Preheat oven to 425° convection. If you don't have convection, you can use 450° or stay at 425°, and it will take a bit longer.
  • Scrub the potatoes and if using russet potatoes, peel the potatoes. Cut your fries 1/4 to 3/8 inch thick. I suggest a mandoline, but a knife will do.
  • Place in cold water in a large bowl and soak for 20 to 30 minutes.
  • Drain, rinse the fries with cold water several times, place them on a paper towel and dry well.
  • Dry the bowl, put fries back in, and stir with about a tablespoon of oil.
  • Prepare a baking sheet with aluminum foil and a rack. Spray with PAM. Spread the fries on a prepared rack. Do not overlap, but they may touch a little. Give a light sprinkle of coarse salt.
  • Bake until golden brown-about 30 minutes. Season again while still hot.

vegetable oil, for deep frying

Steps:

  • Peel the potatoes and cut into 1cm-thick batons. Put into a bowl of cold water and leave to soak for at least 2 hrs to remove the starch from the potatoes - this will help them crisp while frying.
  • Drain the potatoes well and pat dry with kitchen paper. Fill a deep pan no more than a third full with oil and heat to 140C, or until a cube of bread dropped in browns in 60 seconds. Fry the French fries in batches for 6 mins per batch until golden straw-coloured, cooked through and lightly crisp. Drain well on kitchen paper.
  • Turn the heat up until the oil reaches 180C, or a cube of bread browns in 30 seconds. Fry the French fries again for 2-3 mins per batch until lightly golden and really crisp. Drain on kitchen paper and immediately season with sea salt.

water (for soaking the potatoes)
2 tablespoons oil
2 teaspoons dried herbs
1 teaspoon chili flakes
salt (to taste)

Steps:

  • Rinse, thoroughly scrub and peel the potatoes. Chop into thin sticks.
  • Soak the sliced sticks in cold water for 20-30 minutes.
  • Drain the water and rinse multiple times in cold water to remove maximum starch.
  • Spread on a clean cloth or plate and let dry for 20 minutes.
  • Preheat your oven at 190C or 375 F for 15 minutes.
  • Add the dried potato sticks into a bowl.
  • Throw in your desired seasoning and salt. I have used chili flakes, salt dried Italian herbs.
  • Toss well and add 2 teaspoons olive oil or any oil that you prefer.

5 pounds russet potatoes
Vegetable or peanut oil, for frying
Sea salt

Steps:

  • Peel and rinse the potatoes. Then cut them into sticks by cutting the potato in 4 or 5 vertical pieces, and then cutting each piece into sticks.
  • Place them in a large bowl and cover with cold water. Allow them to soak, 2 to 3 hours. (You can also stick them in the fridge and let them soak overnight.)
  • When you're ready to make the fries, drain off the water and lay the potatoes on 2 baking sheets lined with paper towels. Blot with paper towels to dry them.
  • Heat a few inches of oil in a heavy pot to 300 degrees F. In 3 or 4 batches, cook the potatoes until soft, 4 to 5 minutes per batch. They should not be brown at this point! You just want to start the cooking process. Remove each batch and drain on new/dry paper towels.
  • Once all the potatoes have been fried at 300 degrees F, turn up the heat until the oil reaches 400 degrees F. When the oil's hot, start frying the potatoes in batches again, cooking until the fries are golden and crisp. Remove the potatoes from the oil and drain on paper towels.
  • Sprinkle with sea salt and dive in!
