EASY PALEO ZUCCHINI CAKE



Easy Paleo Zucchini Cake image

This Easy Paleo Zucchini Cake is quite simple to make and can be customized however you like by mixing in your desired add-ins. It's moist and fluffy, and honestly, you can't even taste the zucchini in it!

5 eggs
3/4 cup unsweetened applesauce
2 tbsp apple cider vinegar (or lemon juice)
2 tsp vanilla extract
1 tbsp ground cinnamon
1/3 cup *date sugar
3/4 cup *coconut flour
2 tsp baking powder
1/4 tsp salt
3 cup grated zucchini
1 cup raisins (soaked in warm water for at least 10 mins)
1 cup chopped walnuts

Steps:

  • Preheat the oven to 350 F/ 180 C and line a 9u0022 square baking dish with baking paper.
  • In a large bowl, whisk together the eggs, applesauce, vinegar, vanilla extract, and cinnamon.
  • Stir in the date sugar, coconut flour, baking powder, and salt with a spatula until it reaches a thick, slightly crumbly consistency.
  • Fold in the grated zucchini, raisins, and walnuts until very well mixed.
  • Press the batter into the baking dish, smoothing out the top. Bake for 50-55 mins.
  • Remove from the oven and let cool completely before slicing.
  • Finally, serve and enjoy!!!
