ALMOND FLOUR CHOCOLATE CHIP COOKIES
These soft, chewy cookies are studded with little morsels of chocolatey heaven. They are also completely gluten-free and grain-free thanks to the almond flour.

Steps:
- Evenly position 2 racks in the middle of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment.
- Whisk the almond flour, baking soda and salt together in a large bowl. Beat the butter and brown sugar in another bowl with an electric mixer on medium-high speed until light and fluffy, about 4 minutes. Add the eggs to the butter mixture one at a time, beating after each addition to incorporate, then beat in the vanilla. Reduce the speed to low, add the flour mixture and beat until just incorporated. Fold in the chocolate chips.
- Scoop 12 heaping tablespoons of dough onto each prepared baking sheet, spacing them 2 inches apart. Roll each into a ball with slightly wet hands, then sprinkle the top of each ball with some sea salt. Bake until the cookies are golden but still soft in the center, 10 to 12 minutes. Let the cookies cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool completely, about 30 minutes.

- Heat oven to 375°F. In large bowl, stir cookie mix, butter, egg and flour until dough forms. Roll dough into 1 1/4-inch balls. Place 2 inches apart on ungreased cookie sheet. Flatten slightly with bottom of glass.
- Bake 8 to 10 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheet to wire rack. Cool completely, about 20 minutes.
- In small bowl, mix frosting and peppermint extract. Spread each cookie with frosting. Using small spoon, sprinkle red sugar onto cookies in spiral design to look like peppermint candies.

- In a small bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt; set aside. In a separate bowl, whisk together brown sugar, eggs, and peppermint extract until thoroughly combined; set aside. In a microwave-safe bowl, combine chopped chocolate and butter. Microwave at 50 percent power, stirring occasionally, until melted, 2 to 3 minutes. Whisk melted chocolate mixture into egg mixture until combined. Fold in flour mixture using a rubber spatula or wooden spoon until no dry streaks remain. Stir in peppermint chunks. Let dough sit at room temperature for 10 minutes. Place crushed candy canes in a separate shallow dish. Scoop out 2 tablespoons of dough and roll between palms into a smooth ball. Lightly dip top of dough ball into crushed candy canes or sprinkle crushed candy canes on top of dough. Transfer dough ball to prepared baking sheet and repeat with remaining dough, being sure to evenly space dough balls on prepared sheets
- Place cookie sheets into oven, 1 sheet at a time, until puffed and edges have begun to set but centers are still soft (cookies will seem underdone), about 12 minutes, rotating sheet halfway through baking. Let cool completely on sheet before serving
