Swap the beef for ground turkey to make these flavorful, and better-for-you Turkey Tacos! The ground turkey has a killer seasoning mix and can be whipped up in 15 minutes or less in one skillet. Add your favorite taco toppings and dinner is served!

1 tablespoon olive oil
1/2 cup diced yellow onion ((~1/2 of 1 onion))
2 teaspoons minced garlic ((~2 cloves))
1 tablespoon ground chili powder
1 teaspoon EACH: ground cumin, paprika
1/2 teaspoon EACH: onion powder, garlic powder, dried oregano, salt and pepper
1/2 tablespoon beef bouillon powder
1 pound lean (93/7) ground turkey
1/3 cup tomato sauce
tortillas (flour or corn)
1 cup freshly grated Colby Jack or extra-sharp Cheddar cheese
Toppings: shredded lettuce, sour cream (fat-free or lite is great), fresh guacamole or ripe avocados, chopped cherry tomatoes, salsa or pico de gallo, fresh cilantro, fresh lime

Steps:

  • TURKEY TACO MEAT: Dice the onion and mince the garlic. Heat 1 tablespoon olive oil in a large, nonstick skillet over medium-high heat. Once the oil is hot, add the diced onion. Cook for 3-5 minutes or until soft and translucent. Add in the garlic and cook for 20-30 seconds. Add all of the seasonings: 1 tablespoon chili powder, 1 teaspoon ground cumin, 1 teaspoon paprika, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, 1/2 teaspoon dried oregano, 1/2 teaspoon salt, and 1/2 teaspoon pepper, and 1/2 tablespoon beef bouillon powder. Stir the spices until fragrant, about 30 seconds. Nothing should be burning; reduce the heat if needed.
  • TACO MEAT CONT.: Add in the ground turkey. Crumble the meat into small pieces and cook until no longer pink (but not cooked through all the way), about 5-8 minutes. Add in the tomato sauce and scrape the bottom of the pan to release any browned bits (this is where the flavor is!). Let simmer for 3-5 minutes, or until fully cooked through, and then remove from heat.
  • ASSEMBLY: Char/warm tortillas (Note 1). Add even amounts of the meat and then sprinkle cheese on top. The taco meat should be hot enough that the cheese will melt. Immediately add toppings of choice. Our favorites are a big scoop of sour cream, ripe sliced avocado (or guacamole), a few chopped cherry tomatoes, fresh cilantro, and a squeeze of fresh lime juice. Enjoy hot!

1 pound lean ground beef (90% lean)
1 small sweet red pepper, chopped
2 green onions, chopped
1 can (16 ounces) kidney beans, rinsed and drained
3/4 cup frozen corn
2/3 cup taco sauce
1 can (2-1/4 ounces) sliced ripe olives, drained
1/2 teaspoon garlic salt
1/4 teaspoon onion powder
1/4 teaspoon dried oregano
1/4 teaspoon paprika
1/4 teaspoon pepper
6 whole wheat pita pocket halves
6 tablespoons shredded reduced-fat cheddar cheese
Optional: Sliced avocado and additional taco sauce

Steps:

  • In a large skillet, cook the beef, red pepper and onions over medium heat until meat is no longer pink; drain. Stir in the beans, corn, taco sauce, olives and seasonings; heat through., Spoon 3/4 cup beef mixture into each pita half. Sprinkle with cheese. Serve with avocado and additional taco sauce if desired.

1 oz taco seasoning, 1 packet
salt, to taste
pepper, to taste
28 oz canned diced tomato, drained

Steps:

  • Heat a skillet over high heat. Once hot, add oil to coat the bottom of the pan.
  • Add the ground turkey and break apart with a spatula.
  • Add taco seasoning, salt, and pepper and stir, cooking until meat has browned and is fully cooked through.
  • Stir in the tomatoes. Bring to a gentle simmer for about 5 minutes and remove from heat.
  • Assemble tacos with your favorite toppings.
  • Enjoy!

1/2 cup chunky salsa
1 tablespoon fresh cilantro, Chopped (optional)

1/3 cup milk
1/2 cup sour cream

8 taco shells

Steps:

  • Brown turkey and onion in large skillet over medium heat, stirring to separate meat. Combine turkey mixture, tomato paste, salsa, cilantro and salt in slow cooker. Cover; cook on low 4-5 hours.
  • Just before serving, melt butter in small saucepan over low heat. Stir in flour and salt; cook 1 minute. Carefully stir in milk. Cook and stir over low heat until thickened. Remove from heat. Combine sour cream and sprinkle of ground red pepper in small bowl. Stir into hot milk mixture. Return to heat; cook over low heat 1 minute, stirring constantly.

8 super-size taco shells (Old El Paso or Ortega brands)
2 tablespoons extra virgin olive oil
1 1/3 lbs ground turkey
salt
fresh ground black pepper
2 teaspoons poultry seasoning
3 garlic cloves, minced
1 medium onion, chopped
1/4 cup golden raisin, chopped
2 tablespoons chili powder
2 teaspoons cumin
1/2 cup beer or 1/2 cup chicken broth
1 cup tomato sauce
2 cups shredded monterey jack pepper cheese
1 romaine lettuce hearts, shredded
2 firm plum tomatoes, diced
1/2 cup green pimento stuffed olive, chopped
1 cup salsa verde (or your choice of salsa)

Steps:

  • Preheat the oven to 375°; place 8 large taco shells on a rimmed baking sheet and bake 6-7 minutes or until crisp but not brown; remove from oven.
  • Meanwhile, heat a large nonstick skillet over med-high heat.
  • Add in the olive oil; then add in the turkey and break up with a wooden spoon.
  • Season the meat with salt, pepper, and poultry seasoning.
  • Add in the garlic, onions, and raisins; then season with the chili powder and cumin.
  • Cook 5 minutes, then stir in the beer and deglaze the pan.
  • Stir in the tomato sauce and simmer on low heat for 5 minutes.
  • Fill the shells with a couple spoonfuls each of meat sauce; top with the cheese and return to the oven to melt, 3 minutes.
  • Top with the lettuce, tomatoes, olives, and salsa verde; serve.

Easy Pita Turkey Tacos image

An insanely easy to make turkey and pea combination packed into fresh pita pockets. Regardless of the smoky taco seasonings, this quick meal has a distinctly Mediterranean feel. I came across this recipe the day after I learned to make pita bread. I had some things lying around and decided to throw some things together. I got the pita recipe from Cooking with Just Four Ingredients bu Joanna Farrow. This can easily be tweaked to suit your personal tastes. It could also be served over rice and is DELICIOUS mixed with a simple mac and cheese. You can also use store-bought pitas to take out most of the work. I am TOTALLY unsure of servings. I apologize, but I live alone and usually don't prepare food at their intended serving size. Prep and cook time is for pita bread. The filling takes about 15 minutes.

5 cups white bread flour
2 1/2 teaspoons fast rise yeast
1 tablespoon salt
1 cup warm water
1 tablespoon olive oil
1 lb ground turkey
1 (1 1/4 ounce) package taco seasoning
frozen peas, to taste (I use 1.5 handfuls per pound of turkey)
1 bunch fresh cilantro
1 lime

Steps:

  • FOR PITAS.
  • In a large bowl, combine flour, yeast, and salt.
  • In a separate bowl, combine the olive oil and water, then add half of the flour mixture (2.5 cups).
  • Stir in ONE DIRECTION until the dough is stiff.
  • Knead in the remaining flour.
  • Place the dough in a clean bowl, cover it with a dishtowel, and leave it in a warm place for 30 minutes to 2 hours.
  • Knead the dough for about 10 minutes or so, until it is smooth.
  • Place a little oil in the bowl, return the dough to it, cover it again, and let it rise for about 1 hour.
  • Divide the dough into 12 equal balls. Roll out each ball into an 8 inch round that is about 1/4 inch thick.
  • Heat a skillet to medium-high heat.
  • Lay one of the breads onto the skillet for 15-20 seconds, then flip it over and cook the other side for a minute or until large bubbles form. Flip it again. It will poof up like a little edible pillow.
  • Use a clean towel to press lightly on where the bubbles have formed. Cook for a total of 3 minutes, then remove from the skillet.
  • Repeat till all the dough is cooked, keeping the cooked breads in a clean dishtowel until ready to use.
  • TO STORE: allow bread to cool thoroughly and place in an airtight container. Will keep for at least a week.
  • TURKEY FILLING.
  • Prepare turkey according to taco seasoning package directions.
  • A few minutes before turkey is done, add frozen peas and toss to combine.
  • Serve with plenty of cilantro and lime on the side.
