- Make the pumpkin juice: In a medium pot, combine the pumpkin purée and water. Bring to a boil over medium-high heat, then remove the pot from the heat. Strain through a cheesecloth into a large jar or container. Cover and transfer to the refrigerator to chill for about 30 minutes. You should have about 4 cups.
- Make the spiced syrup: In a small saucepan, combine the sugar, water, cinnamon sticks, and nutmeg pods. - In a large saucepan, combine the cider, pumpkin puree, apricot nectar, brown sugar, and pumpkin pie spice.
- Whisk together until combined.
- Heat over medium heat, just until it reaches a simmer and all the ingredients combine well. This helps all the flavors blend together really well.
- Pour into a large pitcher with a lid and chill in the refrigerator.
- Before serving, stir or whisk really well.
- Mix the cinnamon and pumpkin pie spice together in a small bowl. You can use plain ground cinnamon, too, but I find the pumpkin pie spice adds extra flavor that I love.
- Pour some cinnamon sugar onto a plate.
- Place a small amount of water onto another plate. You don't need much, just enough to barely wet the rim of your glass.
- Turn the glass upside down and dip the edge of your glass into the water, shake off any excess, and then dip into the cinnamon sugar.
- Fill the glass with ice. Carefully ladle (or use a funnel) the pumpkin juice into the glass.
- Serve and enjoy!
