2 puff pastry sheets
8 oz cream cheese, softened
6 tablespoon ricotta cheese
1/4 cup granulated sugar
1/2 teaspoon vanilla extract
1/2 cup raspberry jam
1 large egg + 1 tablespoon water
1 tablespoon milk
1/2 cup powdered sugar

Steps:

  • Preheat the oven to 400 degrees F.
  • In a medium-size bowl cream the cream cheese, ricotta, sugar, and vanilla extract together until smooth.
  • Lay out a sheet of parchment paper, place the thawed puff pastry on the paper and roll it out lengthwise about 2 inches.
  • Slice the top corners off, then start cutting strips diagonally down the sides of the pastry sheet. You should end up with 9 to 10 strips measuring about 1-inch each on both sides.
  • Spread the half of the cheese mixture down the middle of the puff pastry sheet.
  • Next, pipe the 1/4 cup of the raspberry jam or just spoon in on top of the cheese.
  • Start crossing over each strip of pastry gently pressing it down to seal, alternating between each side. Before crossing over the last strips, fold the bottom middle flap.Repeat this process with the second pastry.
  • Brush both danishes with egg wash.
  • Bake for 20 minutes or until golden brown. Cool completely.
  • Combine the milk and powdered sugar. Drizzle the glaze over each pastry as desired.

Sweet, flakey, buttery puff pastries filled with raspberry swirled cream cheese!

1 puff pastry sheet (usually come 2 per box in the frozen section)
4 ounces cream cheese
1/4 cup sugar
1/2 teaspoon vanilla extract
1 tablespoon heavy cream
2 tablespoons raspberry jam
1 egg plus 1 tablespoon water
sparkling sugar (optional)
1 cup powdered sugar
1-2 tablespoons water
1/4 teaspoon almond extract

Steps:

  • Preheat oven to 400 degrees.
  • Lay frozen puff pastry sheet on a clean work surface and allow to thaw for 10 minutes.
  • While you are waiting for it to thaw, you can make the cream cheese filling. Using an electric mixer, beat the sugar into the cream cheese. Add the heavy cream and vanilla and mix until smooth. Set aside.
  • Unfold the puff pastry and cut it into four equal parts. When you unfold it, sometimes it will break on the creases which is fine. Then cut your four parts into quarters, so you have 16 rectangles or squares.
  • With a sharp knife, score an inner rectangle as shown. You don't want to cut all the way through. This helps the puff pastry rise around the filling, and creates a little wall so the filling doesn't escape.
  • Place about 1 teaspoon of the filling onto the center of each puff pastry. Top with a few small dots of the jam, and swirl it around with a toothpick. Don't worry about being precise with your swirling because you really won't be able to tell after baking.
  • In a small bowl, beat the egg with 1 tablespoon of water and brush only the edges with a pastry brush. This adds a pretty sheen to the finished pastry. Sprinkle the edges with the sparkling sugar if desired.
  • Bake for 13-14 minutes. They will puff up, and the edges should be golden. Remove from the oven and transfer to a cooling rack. Allow them to cool completely before drizzling with icing.

2 cans Pilsbury Crescent Rolls (Butter variety works excellent!)
1 (8oz) package of cream cheese, room temperature
2 large egg yolks
2 teaspoon vanilla extract
1 tablespoon lemon juice
1/2 cup sugar
2 tablespoons sour cream
1-2 tablespoons of all purpose flour
1/2 cup of Raspberry Fruit Spread/Preserves or Jam (Use your favorite flavor if you'd like!)
3/4 cup powdered sugar
2 teaspoons milk
2 teaspoon lemon juice

Steps:

  • To make the filling, in a medium bowl using a handheld or stand mixer fitted with a paddle attachment, beat the cream cheese, sour cream, and egg yolk together on medium speed until smooth. Add the sugar, lemon juice, and vanilla. Beat until smooth. Let filling cool in the refrigerator while rolling out the danish dough.
  • Place two racks equal distance apart in the center of the oven and preheat oven to 375 degrees F. Roll out your dough to make a 12x6 inch rectangle. Use a light dusting of flour to help the dough along. Roll it out onto a lined baking sheet. (Lined with parchment paper or a silicone baking mat.) It is tough to transfer the braided dough from the counter to the baking sheet. Cut off two corners of the dough and then two small triangles at the other end. Spread 1/2 of the cream cheese filling and then top with 1/2 of the fruit spread down the length of the center of the strip. Cut slanting strips (3/4 inch - 1 inch each) along both sides. I used a pizza cutter. Fold the bottom end up to "seal" the filling in. Repeat with the second half of the dough and the rest of the filling.
  • Bake braids for 15 - 18 minutes or until the tops become lightly golden brown. Remove from oven and let cool.
  • To make the icing: Prepare the glaze by whisking all of the ingredients together. After 10 minutes of cooling, drizzle the braids with glaze and serve immediately.

  • Make the glaze by combining the milk and powdered sugar. Once the danish is completely cool, drizzle the glaze over it.

¾ cup white sugar
1 ½ teaspoons lemon juice

1 tablespoon butter, softened

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking pan.

1 (17.3-oz.) package frozen puff pastry (2 sheets), thawed
2 1/2 cups fresh raspberries
1 large egg
Confectioners' sugar, for topping

Steps:

  • Preheat the oven to 400°F and line two baking sheets with parchment paper or Silpat baking mats.
  • In the bowl of a stand mixer fitted with the paddle attachment, combine the cream cheese, lemon juice, lemon zest, vanilla extract and sugar. Beat until creamy and well combined. Set the filling aside.

1/2 cup freeze-dried raspberries
1/2 cup freeze-dried strawberry slices
Nonstick cooking spray, for the baking dish
One 8-ounce tube refrigerated crescent dough sheet
2 tablespoons granulated sugar
2 tablespoons light brown sugar
2 tablespoons salted butter, chilled
1/2 cup confectioners' sugar
Kosher salt
1 to 2 teaspoons liquid, such as milk, heavy cream, almond milk, orange juice or lemon juice

Steps:

  • Preheat the oven to 375 degrees F.
  • For the fruit: Using a mortar and pestle, mini food processor or a sealed plastic bag and a mallet or rolling pin, crush the freeze-dried raspberries and strawberries together to a powder; some little pebbles are ok. Set aside 2 tablespoons for the icing and garnish.
  • For the dough: Spray the bottom and sides of an 8-inch square baking dish or 8- or 9-inch round pie pan with cooking spray.
  • Unroll the crescent dough out on a sheet of parchment paper. If using dough with perforations, gently pinch the seams to keep them together. Leaving about a 1-inch border on one of the short sides, sprinkle with the remaining fruit mixture, followed by a layer of the granulated sugar and then the brown sugar. Use a box grater or rasp and grate the butter evenly over the top. Starting with the short edge with the filling on it, roll, tucking as you go, towards the short edge with the empty border. Cut into 8 equal rounds and place in the prepared dish. Bake until the tops are golden, 13 to 14 minutes.
  • For the icing: While the danishes are baking, in a small bowl, whisk together the confectioners' sugar, 1 tablespoon of the reserved fruit mixture, a pinch of salt and 1 teaspoon of preferred liquid. The icing should be thick like a glaze, but thin enough to pour. If needed, add more liquid.
  • Drizzle the icing over the warm danishes. Transfer to plates and sprinkle with the remaining fruit mixture. Serve warm.

1 (8 ounce) package refrigerated reduced-fat crescent rolls
2 tablespoons raspberry spreadable fruit (adj qty to personal desire)
1/3 cup confectioners' sugar
1 tablespoon skim milk
1/2 teaspoon vanilla extract

Steps:

  • ROLLS.
  • Preheat oven to 350°F.
  • Unroll Crescent Rolls, but DO NOT separate into triangle pieces.
  • Separate in half, to create to short, wide pieces.
  • Pinch perforated areas of dough together on both sides of the two pieces.
  • Use rolling pin or side of plastic (acrylic) cup to thin out dough, just a little.
  • Spread approximate 1 tablespoon of fruit spread over one piece of dough, ensure even distribution over dough and leave ONE inch of dough free of spread on long edge (to allow with movement of fruit spread during next step). Adjust amount to personal taste, a personal note -- using too much gets quite messy.
  • Roll dough towards side free of fruit spread.
  • Cut dough roll into 6 even pieces.
  • Place on cookie sheet, cooking stone or in cake pan with at least 1" separation.
  • Bake.
  • GLAZE.
  • In small bowl, place confectioner's sugar, milk and vanilla.
  • Wisk together.
  • Add additional milk or sugar to reach desired consistency.
  • After removing rolls from oven, drizzle glaze over rolls (or apply with basting brush).

2 cups fresh raspberries, divided
1 (8 ounce) package cream cheese, softened
1 cup powdered sugar, divided
6 tablespoons heavy cream, divided
2 teaspoons finely grated orange zest
⅛ teaspoon ground cardamom
⅛ teaspoon almond extract
2 sheets frozen puff pastry sheets, thawed
¼ cup all-purpose flour, or as needed
1 large egg
1 tablespoon water
¼ cup toasted sliced almonds

Steps:

  • Whisk together white sugar, cornstarch, and salt in a small saucepan. Stir in 1 cup of the raspberries and cook over medium-low heat, stirring occasionally and mashing raspberries with a wooden spoon, until raspberries break down and sauce thickens, about 4 minutes. Remove from saucepan to a medium bowl and cool, stirring occasionally, for 10 minutes.
  • Meanwhile, beat cream cheese, 1/4 cup powdered sugar, 1 tablespoon heavy cream, orange zest, cardamom, and almond extract with an electric mixer on medium speed in a medium bowl until smooth, about 1 minute. Cover and chill until ready to use.
  • Place 1 puff pastry sheet on a floured piece of parchment paper. Roll into a 12x9-inch rectangle. Cut 10 to 12 (3 inches long and 1 inch thick) diagonal strips on each side, about 1 inch apart, leaving center 3 inches of pastry uncut. Spread 1/2 cup of the cream cheese filling in center (uncut) section of pastry, leaving a 1/2-inch border at the top and bottom. Top with 3 tablespoons of the raspberry mixture, and spread raspberry mixture gently over cream cheese layer. Sprinkle with 1/2 cup raspberries.
  • Whisk together egg and water in a small bowl. Brush exposed pastry lightly with egg mixture. Fold strips over filling, alternating each side to resemble a twist or a braid. Fold the bottom ends up to seal the filling inside. Repeat with the remaining sheet of puff pastry and the rest of the filling. Brush outside of each pastry with egg wash.
  • Transfer pastries, on parchment, to separate baking sheets. Freeze until pastry is firm, about 1 hour. (To make ahead, wrap Danish in parchment and then plastic wrap; freeze up to 1 month.)
  • While pastries freeze, preheat the oven to 400 degrees F (200 degrees C) with racks in upper and lower third of oven.
  • Bake in the preheated oven until golden brown and puffed, rotating position of baking sheets in oven halfway through, 30 to 35 minutes. Cool on baking sheets for 30 minutes.
  • Meanwhile, whisk together remaining 5 tablespoons cream and 3/4 cup powdered sugar in a medium bowl. Drizzle over Danish and sprinkle with sliced almonds.
