EASY RED WINE GRAVY



Easy red wine gravy image

Christmas just wouldn't be the same without a full and flavoursome gravy on the table

200ml red wine (we used Merlot)
3 tbsp cornflour
600ml turkey or chicken stock, made with cubes or freshly made
2 tbsp redcurrant jelly
200ml/7fl oz turkey juices, skimmed of all fat (make up with stock if you don't have enough)

Steps:

  • Mix 3 tbsp red wine with the cornflour until smooth, then mix in all the wine. Heat stock in a pan, then pour in the red wine mixture and redcurrant jelly, stirring until thickened. Cover the surface with cling film to stop a skin forming. Chill for up to 2 days. To serve, reheat in a pan until bubbling, then stir in the turkey juices and transfer to a warm gravy boat.

Gravy does not take long to prepare, but it makes all the difference to a roast dinner. I make extra to freeze, ready to defrost as and when required (lasts about 3 to 4 months in the freezer). Perfect with a British roast dinner or with veggie sausages, mashed potato and steamed greens, or poured over vegan toad in the hole.

2 tablespoons olive oil
3 medium red onions (12 ounces), peeled, halved, then thinly sliced thinly
1 cup red wine, such as Pinot Noir or what you have to drink at home
1 tablespoon vegan Worcestershire sauce (no anchovies)
1 teaspoon dried thyme
4 cups vegetable stock, plus more as needed
2 tablespoons cornstarch mixed with 2 tablespoons water
Seasoning

Steps:

  • In a medium or large saucepan, add the oil and sauté the onion over medium heat for about 5 minutes until softened. Stir in the red wine, Worcestershire sauce and dried thyme. Simmer for another couple of minutes.
  • Now stir in the vegetable stock and the cornstarch mixture.
  • Bring to a gentle simmer, stirring for 10 to 12 minutes, until the gravy has thickened and coats the stirring spoon well. Add a little more water or stock if the gravy gets too thick.

2 cups water

Steps:

  • Dissolve ham stock and coffee granules in water in a large mixing bowl to create a stock.
  • Melt butter in a medium saucepan over medium-high heat; add flour. Cook butter and flour, stirring constantly, until brown, to create a roux, about 5 minutes. Add gravy stock mixture 1/2 cup at a time, stirring constantly, until it resembles the consistency of a gravy, 5 to 7 minutes. Season with black pepper. Remove from heat. Serve warm with meal of choice.

Steps:

  • Skin excess fat off pan juices.
  • Place dish on stovetop and heat on medium. Add red wine scraping down pan, add marmelade. Cook 1 to 2 minutes.
  • Stir in flour. Cook for 1 minute. Remove from heat. Gradually blend in stock.
  • Return to heat, cook stirring constantly until gravy boils and thickens simmer for 3 minutes then season.

1/4 teaspoon salt
1 bay leaf
1/4 cup cornstarch

  • Place the beef, mushrooms and onion in a 5-qt. slow cooker. In a small bowl, combine the broth, wine, gravy mix, tomato paste, salt and bay leaf. Not many ingredients in the recipe but lots of flavor! Use your own favorite meatball recipe, I use my own recipe#69173 to make this. This is the kind of recipe that you can simmer for a longer or a shorter time, I have to say that the longer you simmer the more flavor it will have. Serve the meatballs with grated Parmesan cheese and crusty bread.

2 lbs lean ground beef (prepared into your favorite meatball recipe, I use my own Kittencal's Italian Melt-In-Your-Mouth Meatballs)
1 cup all-purpose flour
4 -6 tablespoons oil
3 tablespoons butter
1 small onion, finely chopped
1 tablespoon minced fresh garlic
2 cups dry red wine
1/4 cup tomato paste
3 cups beef broth
salt and pepper

Steps:

  • Shape the ground beef into small meatballs using you favorite meatball recipe.
  • Place into a baking dish in a single layer, and bake in a 350 degree oven for about 20-25 minutes (just to release some of the fat) set aside until cool enough to handle.
  • Dust the meatballs generously in flour then shake off any excess flour.
  • Heat oil in a skillet with about 3 tablespoon butter.
  • Brown the meatballs (working in batches) well on all sides for about 3 minutes; place in a bowl.
  • In the same skillet saute the onion and garlic until soft (about 6-8 minutes).
  • Return the meatballs back to the skillet.
  • Whisk in wine and tomato paste in a small bowl to blend well, then add to the skillet and bring to a boil.
  • Continue boiling until the wine thickens slighty, stirring with a wooden spoon constantly (about 8-10 minutes).
  • Add in broth, reduce heat to medium-low, cover and simmer until the flavors blend and the gravy thickens, stirring frequently (about 40-45 minutes, the longer simmering time the more flavor it will have).
  • Season with salt and pepper, then transfer to a large serving bowl.
  • Sprinkle with grated Parmesan cheese if desired.

I've been making this recipe for 40+ years and I just throw the ingredients together; it's very forgiving. My son-in-law also says it's the best thing he ever ate. When boys hang around the oven, it can't be bad.

3 pounds boneless beef chuck roast
2 tablespoons all-purpose flour
2 tablespoons canola oil
½ cup water
½ cup red wine
1 teaspoon dried basil
½ teaspoon dried marjoram

¼ teaspoon ground black pepper
1 onion, sliced
6 red potatoes, washed and halved
6 carrot, peeled and cut into 2-inch lengths
8 pearl onions, peeled and halved

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Sprinkle the roast evenly with the flour and set aside. Heat the canola oil in an oven-proof Dutch oven with lid over medium-high heat.
