SLOW COOKER CHICKEN PARMESAN CASSEROLE
Saucy, cheesy, chicken parmesan casserole, made easy in the slow cooker.

Steps:
- In a 5 Qt or larger slow cooker, place chicken breast in the bottom, and season with salt and pepper.
- Dump 28 ounces crushed tomatoes, 14 ounces of Prego Traditional Sauce, and minced garlic over the chicken.
- Put lid on and cook for 3 hours on high.
- Remove chicken from the slow cooker, and shred. Note: I used a mixer with a paddle to shred the chicken. Return chicken to the slow cooker.
- At 3 hours, cook penne al dente in a large stock pot of water, according to package directions, drain, and add to crock pot, along with Parmesan cheese, and half the mozzarella cheese.
- Stir everything together.
- Pour the remaining 14 ounces of Prego Traditional sauce over the top.
- Top with remaining shredded Mozzarella Cheese
- Put lid back on and cook for 30 more minutes until cheese is melted.
- Garnish with fresh parsley
- Enjoy!

- In a shallow bowl, combine bread crumbs, Parmesan cheese, Italian seasoning, pepper and salt. In another bowl, combine egg and water. Dip chicken in egg mixture, then in crumb mixture to coat both sides, patting to help coating adhere., Transfer chicken to a 4- or 5-qt. slow cooker. Pour sauce over chicken. Cook, covered, on low for 4-6 hours or until a thermometer inserted in chicken reads 165°. Top with cheese, recover, and cook for 10-15 minutes, until cheese is melted. If desired, serve with hot cooked pasta.

- Heat oven to 375 degrees F (190 degrees C).
- Pour sauce into 13x9-inch baking dish sprayed with cooking spray. Stir in 1/4 cup (4 Tbsp.) Parmesan. Add chicken; turn to evenly coat both sides of each breast with sauce. Cover.
- Bake 30 minutes or until chicken is done (165 degrees F). Meanwhile, cook spaghetti as directed on package, omitting salt.
- Top chicken with remaining cheeses; bake, uncovered, 5 minutes or until mozzarella is melted.

- Spray 2- to 3-quart slow cooker with cooking spray.

- Spread flour on a shallow plate. Beat eggs in a bowl. Pour bread crumbs into a shallow bowl. Dredge chicken breasts in flour. Dip in egg and roll in bread crumbs to coat.
- Melt 2 tablespoons butter in a large skillet over medium heat. Fry breaded chicken breasts, 2 at a time, until golden brown, 4 to 6 minutes per side. Transfer to a plate. Repeat with remaining butter and chicken breasts.
- Layer chicken breasts in a slow cooker, covering each layer with marinara sauce.
