SPAGHETTI & MEATBALLS

Spaghetti & Meatballs image

This spaghetti and meatball recipe is easy enough for a busy weeknight -- and it's a family favorite, too!

Provided by Jennifer Segal

Categories     Dinner

Time 50m

Yield 4 to 6 (Makes 22 to 24 small meatballs)

Number Of Ingredients 13

1 large egg
3 tablespoons finely chopped fresh basil (plus more for serving)
3 tablespoons finely chopped fresh parsley
1 teaspoon dried oregano
¾ teaspoon salt
¼ teaspoon freshly ground black pepper
2 cloves garlic, minced
¼ cup water
1½ pounds ground "meatloaf mix" (approximately equal parts ground beef, pork and veal)
¾ cup dried Italian style bread crumbs (such as Progresso)
½ cup freshly grated Parmigiano-Reggiano cheese (plus more for serving)
Large jar (32 oz) good quality Marinara sauce (such as Rao's)
1 pound spaghetti

Steps:

  • Preheat the oven to 350°F and set an oven rack in the middle position.
  • In a large bowl, whisk together the egg, basil, parsley, oregano, salt, pepper, garlic and water. Add the meat, breadcrumbs and cheese and mix until just combined (your hands are the best tool). Do not overwork it.
  • Roll the mixture into golf ball-sized meatballs and place on an ungreased baking sheet. Bake for about 10 minutes, then remove the baking sheet from oven and use a metal spatula to turn the meatballs (they will stick a bit but should release easily when you scrape under them with the spatula). Put the meatballs back in the oven and cook for another 10 minutes, until they are nicely browned and almost cooked through.
  • In the meantime, bring the marinara sauce to a simmer in a large skillet. Taste it and adjust the seasoning if necessary (I usually add a healthy pinch of sugar and some freshly ground black pepper). Transfer the browned meatballs to the marinara sauce, leaving the fat behind. Cover loosely with a lid or foil and simmer for about 10 minutes, until the flavors marry and the meatballs are cooked through. Keep warm until ready to toss with pasta.
  • While the meatballs are cooking, bring a large pot of well-salted water to a boil. Add the spaghetti and cook until al dente. Drain, then toss with the sauce and meatballs (you may find it easier to toss everything together in the pasta pot rather than the skillet; it depends on the sizes of pans you are using.). Serve topped with fresh basil and more grated cheese.
  • Freezer-Friendly Instructions: The cooked meatballs can be frozen, in their sauce, for up to 3 months. When ready to serve, defrost overnight in the refrigerator and reheat on the stovetop until the meatballs are hot in the center.

FAVORITE QUICK & EASY SPAGHETTI AND MEATBALLS

Favorite Quick & Easy Spaghetti and Meatballs image

I've been enjoying spaghetti all my life! Been to Italy, and have tried numerous versions all around the globe including this one which remains my all-time favorite (perfected over the years by yours truly!). Hope you enjoy, too. Notes: I like to keep a bag of meatballs (see my Frankies Spuntino New York - Italian Meatballs recipe #452689) on hand in the freezer, for ease of prep. You can use your favorite fresh or frozen prepared meatballs, -or- crumbled & browned ground beef is also fine. Just add a tossed green salad and garlic bread (see recipe #109257), and a nice bottle of red wine to round out the meal. Salut! Tip: I use a jar of Classico Italian Sausage & Peppers Pasta Sauce, and whole wheat spaghetti noodles (De Cecco), but your favorite pasta sauce and regular spaghetti noodles is fine.

Provided by BecR2400

Categories     Spaghetti

Time 50m

Yield 8 serving(s)

Number Of Ingredients 12

3 tablespoons olive oil
1 golden bell pepper, roughly diced (optional)
26 ounces of your favorite spaghetti sauce (I use a jar of Classico Italian Sausage & Peppers Pasta Sauce)
1 (14 1/2 ounce) can diced tomatoes with green pepper celery and onion
1/2 cup dry red wine (such as Reggiano Lambrusco, Chianti, Red Rose or Burgundy)

1/2 teaspoon minced garlic
1 lb prepared italian meatballs (fresh or frozen, -or- use crumbled & browned ground beef)
whole wheat spaghetti (such as De Cecco)
grated parmesan cheese
snipped fresh Italian parsley, to garnish (or snipped basil or oregano)

Steps:

  • Heat olive oil in a large sauce pan over medium heat. Add the bell peppers, and saute them in the oil until slightly softened (5 to 10 minutes).
  • Add spaghetti sauce, diced tomatoes, red wine, the oregano, basil and garlic. Partially cover pot; bring to a boil over medium-high heat, stirring often.
  • Reduce heat, partially cover pot and simmer sauce for 20 minutes, stirring occasionally.
  • Meanwhile in a separate pot, boil water and prepare noodles al dente; drain.
  • Add fresh or frozen meatballs (or browned ground beef) to sauce; cook an additional 10-15 minutes, until hot and bubbly.
  • In individual bowls, ladle sauce over hot noodles.
  • Serve with grated Parmesan cheese and snipped fresh herbs (such as basil, parsley or oregano) at the table, as desired.

BAKED SPAGHETTI AND MEATBALLS RECIPE

Baked Spaghetti And Meatballs Recipe image

Cheesy baked spaghetti and meatballs is a whole new take on the classic dish. Spaghetti tossed in marinara and baked with simple homemade meatballs with a melted layer of an Italian blend of cheeses.

Provided by Shawn Williams

Categories     Dinner

Time 12m

Number Of Ingredients 15

12-14 ounces spaghetti
24 ounces marinara ( I like Rao's)
1 1/2 cups shredded Italian blend (or mozzarella) cheese
Fresh chopped basil, garnish
1 pound 85% lean ground beef
1 pound ground sweet Italian sausage
1/3 cup finely grated parmesan cheese
1/4 cup Italian-style breadcrumbs
1/4 cup milk
1 egg
2 celery stalks, very finely chopped
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 /4 teaspoon salt
Pepper, to taste

Steps:

  • Preheat the oven to 375℉.
  • Bring a large pot of salted water to a boil. Cook pasta al dente.
  • Meanwhile, place breadcrumbs in a large bowl and add milk, giving a quick stir to mix. Add all remaining meatball ingredients and mix using your hands until fully incorporated. Shape into 1 inch balls or slightly larger and set on a plate.
  • Heat 1 tablespoon of olive oil on medium heat in a cast-iron skillet. Add all the meatballs and cook for about 1 minute per side until nicely browned on the exterior, about 2-3 total minutes, occasionally rotating/rolling. Remove from skillet and place on a plate.
  • Remove skillet from the heat and let it slightly cool. Add 1 cup of marinara and add strained spaghetti. Toss with tongs until evenly mixed with the sauce. Nestle the meatballs in the spaghetti and drizzle with an additional cup of marinara. I like to spoon the sauce over the top of the entire skillet and spread a little to evenly coat.
  • Top with a layer of cheese and bake for 20-22 minutes. Cheese should just be turning golden. Can give a quick broil at the end to crisp cheese if desired. Garnish with chopped fresh basil and serve.

A simple tomato sauce with lots of flavour is perfect for spaghetti and meatballs. A weeknight classic. This is designed to be a low cost recipe.

Provided by Johnnie Mountain

Categories     Main course

Yield Serves 4

Number Of Ingredients 12

1 tbsp olive oil
1 brown onion, chopped
1 garlic clove, finely chopped
1 tsp dried mixed herbs
400g tin tomatoes
500ml/18fl oz vegetable or beef stock (from a cube)
400g/14oz dried spaghetti
salt and pepper
400g/14oz beef mince
1 garlic clove, finely chopped
½ tsp dried mixed herbs
1 tbsp olive oil

Steps:

  • Heat a large saucepan over a medium heat and add the olive oil. Once hot, add the onion and cook gently without browning for 4-5 minutes, or until softened and translucent. Bring the sauce to a simmer, reduce the heat and simmer gently while you make the meatballs.
  • For the meatballs, mix together the beef, garlic and herbs along with a decent pinch of salt and pepper. Using wet hands roll into 20 balls.
  • Heat a frying pan over a medium heat and add the olive oil. Once hot, fry the meatballs on all sides until nicely coloured, being careful not to burn them. You may need to do this in batches. Transfer to the saucepan containing the sauce.
  • Continue to simmer the sauce for 10 minutes while you cook the spaghetti.
  • Bring a large saucepan water to the boil, add a pinch of salt and cook the spaghetti according to the packet instructions. Once cooked, drain and tip into the saucepan with the meatball sauce. Mix well and serve hot.
