Homemade Red Enchilada Sauce image

This easy Homemade Red Enchilada Sauce is made with simple pantry ingredients and ready in about 15 minutes!

3 Tbsp vegetable oil
3 Tbsp all purpose flour
2 Tbsp chili powder
1/2 tsp garlic powder
1/2 tsp ground cumin
1/4 tsp dried oregano ((Mexican oregano is great if you have it))
1/4 tsp kosher salt
1/4 tsp black pepper
3 Tbsp tomato paste
2 cups reduced sodium chicken broth
1 tsp apple cider vinegar ((optional but recommended))

Steps:

  • In a small bowl, combine flour, chili powder, garlic powder, cumin, oregano, salt and pepper.
  • Heat oil in a saucepan over MED heat until warm, then add the flour and spices mixture and whisk well. Cook for 1-2 minutes, whisking occasionally.
  • Whisk in tomato paste. Slowly pour in chicken broth, whisking as you pour to eliminate any lumps.
  • Increase heat a bit to bring to a high simmer, then reduce heat to MED LOW to simmer the sauce. Simmer, whisking often, for 5-10 minutes, until the sauce is thickened some and the sauce coats the back of a wooden spoon.
  • Turn off heat, and whisk in the vinegar (if using), then taste and add more salt and pepper if needed.
  • Use immediately, or cool completely and store.

2 tablespoons self-rising flour
2 tablespoons medium-spice Indian chili powder
1 ½ cups water
1 (8 ounce) can tomato sauce
1 teaspoon dried oregano
¾ teaspoon ground cumin
¾ teaspoon garlic powder
¾ teaspoon onion salt
salt to taste

Steps:

  • Heat oil in a skillet over medium-high heat. Stir flour and chili powder into hot oil, reduce heat to medium, and cook until the flour is lightly brown in color, 3 to 5 minutes.
  • Gradually stream water and tomato sauce into the flour while stirring until the flour is completely incorporated into a smooth mixture. Stir oregano, cumin, garlic powder, and onion salt into the liquid. Continue cooking until thickened slightly, about 10 minutes; season with salt.

6 dried ancho chiles
1 (6 ounce) can tomato paste
¼ cup corn oil
2 cloves garlic, minced
1 ½ teaspoons salt
1 teaspoon dried oregano
¼ teaspoon ground cumin
3 cups beef broth

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Arrange the ancho chiles on a baking sheet and toast in the preheated oven 3 to 4 minutes; remove the stems, pulp, and seeds from the toasted peppers. Place peppers in a bowl and pour enough hot water into bowl to cover completely; allow to soak for 1 hour.
  • Combine the ancho chiles, tomato paste, corn oil, garlic, salt, oregano, cumin, and about 1 cup of the beef broth in a blender; blend until smooth. Pour the mixture into a saucepan with the remaining beef broth and place over medium heat; simmer until heated through, about 10 minutes.

When you don't have a lot of time or money. I made this for my family for around a dollar per serving. If the only Mexican food your kids will touch is cheese quesadillas (cheese melted on a tortilla), give this a try as a "step up". My picky picky DD was okay with cheese enchiladas when we told her it was cheese in a tortilla with a sauce on top. Now she has been known to eat spinach enchiladas and chicken enchiladas! :) She gave this recipe two thumbs up. :)

2 cups shredded cheese (whatever floats your boat, I used a preshredded Colby or Monterey Jack blend)
3 ounces cream cheese, softened
1 -2 teaspoon garlic powder
1 -2 teaspoon instant minced onion (or a smidge of grated fresh)
12 corn tortillas
15 ounces enchilada sauce
1/2 cup more shredded cheese

Steps:

  • First, you want to mix the first four ingredients together until they are really well combined. Seriously, you will not see any little shreds of cheese and it will have the texture of stiff play dough (this is important).
  • Preheat your oven to 350 and grab a pan. I used an 11x7 inch oval baking dish, but you can also use an 8inch square.
  • Pour about 1/4 of the enchilada sauce into the bottom of the pan and swirl the pan until the bottom is coated.
  • Reach in with your clean hands and grab about 2 tablespoons of cheese mixture in your hands and shape into a log. Roll a tortilla around this log and place in the pan. Repeat for the rest of the cheese and tortillas.
  • Pour the rest of the sauce on top, spreading it to cover.
  • Sprinkle the last 1/2 cup of cheese on top, and place in the oven. Bake 20-30 minutes or until hot and bubbly.
  • For OAMC: Freeze before cooking, thaw in refrigerator and bake according to directions.

2 tablespoons flour
1/2 tablespoon onion flakes

1/4 teaspoon black pepper
1 tablespoon parmesan cheese

Steps:

  • Whisk together all ingredients except parmesan cheese in a saucepan; bring to boil, reduce heat and gently simmer 40 minutes, stirring occasionally.
  • Remove from heat and whisk in parmesan cheese.

3 tablespoons canola or vegetable oil
2 tablespoons all-purpose flour
2 tablespoons chili powder
1 ½ teaspoons cumin
1 teaspoons paprika (sweet or smoked (see notes below))
1 teaspoon onion powder
1 teaspoon garlic powder
½ teaspoon dried oregano
½ teaspoon dried coriander
2 cups low sodium broth (beef, chicken, or vegetable)
15 ounce can tomato sauce
⅛ teaspoon salt (or to taste)
⅛ teaspoon freshly ground black pepper (or to taste)
cayenne pepper (optional and to taste (see notes below))

Steps:

  • Add the oil to a large saucepan and place over medium heat. Whisk in the flour and cook for 1 minute. Reduce heat to LOW, add the spices and cook, whisking occasionally, for 30 seconds. Whisk in the broth a little at a time and then add the tomato sauce and whisk until smooth and thickened.
  • Bring to a simmer and then reduce heat to LOW and simmer for 5 minutes to intensify the flavor. Add salt and pepper, to taste.
