QUICK AND EASY CREAM SAUCE
The title says it all. This is a base sauce that you can elaborate on in many different ways. You could add tomatoes, onions, prosciutto, etc. This time around I had some leftover pasta, and I wanted something fast. If you have time, it's nice to add chicken or shrimp. I have made this with shrimp before, and it was delicious. I will include that recipe after the sauce recipe.

Steps:
- You can use a pan or a pot. I used a pot this time, but whenever I do shrimp or chicken I use a pan.
- Add cream.
- Bring to a boil; reduce heat and simmer for 15 minutes, stirring frequently.
- Add basil, cheese, pepper and pepper flakes.
- Pour sauce into a bowl; add pasta and toss well.

EASY CREAM SAUCE
This sauce is so quick and delicious! It can accompany any meat, fish or veggie medley! It's so rich, noone would know it was so cheap.

Steps:
- In a large pan, melt all of the butter.
- Add the cream cheese and the chicken broth.
- While stirring the sauce, bring sauce to a boil for a minute.
- Don't burn the sauce!
- Simmer for 2-5 more minutes.
- Serve atop any meal; it's delicious!

- In a large skillet, melt butter over medium heat. Add garlic; cook and stir 1 minute. Stir in cream cheese until melted. Gradually add cream. Bring to a boil. - Boil white wine and shallots in heavy medium saucepan over high heat until liquid evaporates, about 4 minutes. Reduce heat to medium-high. Add whipping cream and simmer until reduced to 1 cup, about 2 minutes. Add Dijon mustard, basil and dill. Simmer 2 minutes to blend flavors. Season sauce to taste with salt and pepper.
