4 tablespoons vegetable oil
1 egg
½ cup sugar
1 teaspoon vanilla extract
1 ½ cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
1 teaspoon cinnamon
32 oz cream cheese, softened
½ cup sugar
1 tablespoon vanilla extract
1 cup milk
1 tablespoon gelatin powder
caramel sauce, for drizzling

Steps:

  • Preheat the oven to 350°F (180°C).
  • In a large bowl, mash the bananas with a fork.
  • Add the oil, egg, sugar, and vanilla. Stir until combined.
  • Add the flour, baking powder, baking soda, salt, and cinnamon. Stir until just combined. Don't over mix.
  • Pour the banana bread batter into a greased 9-inch (22 cm) springform pan.
  • Bake for 30-40 minutes, or until the top is set.
  • In a large bowl, add the cream cheese, sugar, and vanilla. Whisk until combined.
  • Microwave the milk until hot, about 2 minutes, then add the gelatin powder. Quickly stir until gelatin is completely dissolved, about 5 minutes.

One 8-ounce package cream cheese, at room temperature

Steps:

  • For the banana bread: Position an oven rack in the bottom third of the oven and preheat to 325 degrees F. Generously spray a 9-by-5-inch loaf pan with nonstick spray and dust with flour.
  • For the cheesecake swirl: Combine the cream cheese, granulated sugar, sour cream and egg in a large bowl and beat with a hand mixer until well combined; set aside.
  • For the banana bread: Whisk together the flour, baking soda and salt in a medium bowl; set aside. Mash the granulated sugar and bananas in a large bowl to a paste. Whisk in the oil, vanilla and egg. Whisk in the flour mixture until just combined.
  • Reserve 3/4 cup of the bread batter. Spread the remaining batter in the bottom of the prepared loaf pan. Spoon the cream cheese mixture over the batter and put the reserved 3/4 cup batter in a line down the center of the pan. Insert the tip of a paring knife into the batter and drag it through and up to swirl 5 to 6 times.
  • Bake until the top is cracked and a cake tester inserted in the center comes out clean, about 1 hour. Cool on a wire rack for 30 minutes, then carefully invert onto a platter or cake stand and then flip upright. Cool completely, at least 1 1/2 hours. Dust with confectioners' sugar and serve.

I make these candles for my Thanksgiving centerpiece every year, and I always get compliments on them. They also make great gifts! I use 5 candles in various sizes, but you can use as many as you'd like. You can use cinnamon sticks in place of fruit if you don't have time to dry the fruit out.

2 oranges
2 limes
2 lemons
1 berry wood branch
5 pillar candles

Steps:

  • Slice the oranges, limes and lemons 1/8-inch thick.
  • Put a wire rack on top of a cookie sheet and lay each piece of sliced fruit on the rack.
  • Preheat oven to 250 degrees.
  • When the oven is hot, place the rack of fruit in the oven and let "bake" for two hours (if your fruit is taking a long time to dry, turn the oven off and leave the fruit in overnight.
  • When the fruit is dry and cool, hot-glue the citrus pieces to one another by overlapping them in line with the candle's base. Do not glue-gun the candle directly or the wax will melt.
  • When the candles are completely decorated, and the glue is dry, stagger the candles in the middle of your Thanksgiving table and weave the berry branch throughout.

3 oranges or 2 grapefruits
1 quart water
1 cup sugar
1/3 cup additional water

Steps:

  • With a vegetable peeler, carefully remove the zest from the lemons without getting any of the white pith included. Cut them into julienne strips 1 1/2 inches long and less than 1/8 inch wide.
  • In 1 quart of water, simmer the zests for 6 minutes, then drain and rinse in cold water. Set aside.
  • Bring the 1/3 cup water to a simmer in a saucepan and add the sugar, stirring until completely dissolved.
  • Cover the pan tightly and, as Julia says, "boil for a moment or two, until the last drops of syrup to fall from the end of a metal spoon form a thread." (This part of Julia's recipe is, I understand, a little vague. Yet sometimes cooking requires the actual experience to really know, and perhaps this is one of those times.).
  • Remove saucepan from the heat, stir in the peel and let steep for an hour.
  • Use in the "Fresh Lemon Sherbet" recipe or store in the refrigerator in a covered jar where it will keep for weeks.
  • Makes one batch of candied zests for the 12 servings of sherbet.

Cheesecake meets banoffee pie in this creamy soft-set caramel dessert, guaranteed to impress at a dinner party or occasion

200g digestive biscuits , crushed
100g butter , melted, plus extra for frying
4 bananas , peeled and sliced
150ml double cream
3 x 280g tubs full-fat cream cheese (not low-fat - this will stop the mixture from setting properly)
85g icing sugar , sifted
1 tbsp maple syrup
300g dulce de leche or caramel sauce (we used we used Carnation Cook with Caramel)
150ml double cream (keep chilled, it whips faster)
25g dulce de leche or caramel
1 banana , cut into 8-10 slices

Steps:

  • For the base, mix the digestives with the melted butter in a bowl. Spoon the mixture into a 23cm springform cake tin and press firmly over the base with the back of a spoon. Chill in the fridge.
  • Heat a frying pan until hot and add a knob of butter and the bananas, frying for 2-3 mins until golden brown. Remove from the pan using a slotted spoon and set aside to cool.
  • Arrange the cooled bananas on top of the biscuit base. For the cheesecake, whisk the double cream using an electric whisk until softly whipped. Put the cream cheese and icing sugar in another large bowl and whisk until smooth. Make sure you don't over whisk the mixture as it will loosen and stop the cheesecake achieving a soft-set. Add the whipped cream to the cream cheese, as well as the maple syrup and the dulce de leche.
  • Spoon the sweet cream cheese filling into the cake tin, covering the bananas, and use the back of a spoon or palette knife to spread evenly. Place in the fridge for at least 4 hrs (preferably overnight) to set.
  • For the topping, whip the cream, put into a piping bag with a medium star-shaped nozzle and set aside. Melt the dulce de leche over a low heat in a small saucepan with a splash of water until it can be drizzled (dulce de leche varies, so you may need to add more water). Place in a second piping bag (or plastic bag) and snip the very end off it, to leave a tiny hole.
  • Starting from the edge of the cake, swirl the dulce de leche sauce in a circular motion around the cake. Pipe 10-12 medium-sized swirls of whipped cream around the edge of the cheesecake and rest a fresh banana slice on each. Serve immediately.
