BACON EGG CUPS RECIPE BY TASTY

Steps:
- Preheat the oven to 400°F (200°C).
- Place the slices of bacon in the muffin tin, wrapping in a circle.
- Bake the bacon for 10 minutes.
- Remove the bacon from the oven and pour out any excess grease, if desired. Crack 1 egg into each of the cups, then sprinkle with salt, pepper, and cheddar cheese.
- Bake for another 10 minutes, or until the egg yolks reach your desired consistency.
- Run a knife around the edge of each cup to loosen and remove. Sprinkle with chives, if desired.
- Enjoy!

- Special equipment: jumbo sized 6-cup muffin tin (or six small oven-proof ramekins) Heat the oven to 350°F. In a food processor fitted with the grater attachment, push chunks of the potato through the chute to grate. Once all the potatoes are grated, put them into a piece of cheesecloth or a clean kitchen towel and squeeze to remove the moisture. Add the potatoes to a large bowl, stir in the olive oil (or you can use melted butter) and season well with salt and pepper, to taste. Spray the muffin tin (or ramekins) lightly with nonstick cooking spray. Press the grated potatoes evenly into the muffin cups being sure the potatoes go up the sides and a thin layer and covers the bottom. Bake until the top edges turn light golden brown and the potatoes are cooked through, about 35 to 40 minutes. If using candied bacon, make this before baking the eggs: PREPARATION: Preheat oven to 400°F. Line a baking sheet with aluminum foil. Place a cooling rack on top of the baking sheet (don't skip this step, or the bacon will turn out soggy and unevenly cooked). NOTE: you can use a broiling pan, but cleanup is much harder. Spread some brown sugar on a plate, and press each slice of bacon to coat evenly. Lay out each bacon slice, evenly, on the baking/cooling rack. Bake for about 10 minutes; remove from the oven and turn over with tongs. Lower the temperature to 350°F and don't wander off-- as the fat is rendered and the brown sugar caramelizes, the tray can begin to smoke and you could burn the bacon! Bake for about 5 -10 more minutes, depending on the thickness of the bacon. Remove from the oven, and be careful. It's very hot! Allow to sit for 3-5 minutes and then enjoy. Once these are cooled enough to handle, cut into small pieces-- make extra, because you'll want to eat it all! If using maple prosciutto variation: Meanwhile, in a small bowl toss together the prosciutto with maple syrup and a few grinds of freshly ground black pepper. Set aside. Remove the potatoes from the oven and gently crack an egg into each cup. Bake until the egg whites set but the yolk remains runny, about 6 to 8 minutes. Remove from the oven and set the oven to broil. Top the eggs with grated cheese and put the candied bacon (or maple prosciutto on another sheet tray). Broil both until cheese melts, and prosciutto crisps slightly, about 1 minute. Top the eggs with crispy bacon (or maple prosciutto) and serve immediately.
DEVILED EGGS WITH CANDIED BACON

- Preheat the oven to 350 degrees F.
- In a small bowl, mix together the brown sugar, a pinch of cayenne and the cinnamon. Place the bacon on a wire rack set over a rimmed baking sheet. Sprinkle each slice of bacon with some of the spiced sugar and bake, about 10 minutes. Flip the bacon, sprinkle with the remaining spiced sugar and continue to cook until crispy, about 10 more minutes. Remove the bacon from the oven and allow to cool. When the bacon is cool, mince it and set aside, reserving a quarter of it for garnishing the eggs.
- Put the cold eggs in the bottom of a medium saucepan and cover with cold water. Bring water to a boil and remove the pan from the heat. Cover the pan with a lid and let stand for 12 minutes. Drain the eggs and rinse with cold water. Let the eggs cool a bit and then peel when they are still warm (eggs are much easier to peel when they are warm). After they are peeled, you can then store them, covered, in the fridge.
- Mix together the mayonnaise, mustard, dill, cider vinegar, Worcestershire sauce, 1/4 teaspoon cayenne, the scallions and the minced bacon in a medium mixing bowl. Season with the salt.
- Slice the eggs in half lengthwise. Gently remove the yolks by pressing your thumb against the back of the yolk to pop it out of the white. Add the yolks to the bowl with the mayonnaise mixture. Mash together, using a fork, until smooth.
- Put the filling in a re-sealable bag. Cut one end off and pipe the filling into the egg whites. Sprinkle with the paprika, extra bacon bits and dill before serving.
- Cook's Notes: A wire rack is a great way to cook bacon because the air can circulate around the bacon making it crispy and delicious.
- Plastic bags are a great tool to use in place of a piping bag, easy and disposable.
DEVILED EGG BACON BITES

- Put 4 thick-cut bacon slices on a rack set on a baking sheet. Place in a cold oven, set the temperature to 400˚ F and bake 35 to 40 minutes, rotating the pan halfway through. Let cool, then cut each slice into 6 pieces.
- Combine 3 tablespoons mayonnaise, 1 tablespoon yellow mustard, 2 teaspoons relish, 1 teaspoon celery salt, a few dashes of hot sauce and a pinch of pepper in a food processor. Add 2 chopped hard-boiled eggs; puree. Transfer to a piping bag with a star tip.
- Pipe the egg mixture onto each bacon piece and top with paprika and chopped chives.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking pan.
- Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Meanwhile, heat oil in another skillet over medium heat. Add spinach and saute until just wilted, about 2 minutes. Remove from heat.

- Cut a slice from the top of each bun reserving the tops.
- Hollow out each bun, being careful to leave a thick shell.
- Saute bacon and onion in pan; place on absorbent paper to drain off any excess oil.
- Melt the butter in a saucepan; stir in the Worcestershire sauce.
- Brush the inside of buns with the half the butter mixture.
- Carefully break an egg into each bun.
- Spoon bacon and onion mixture over eggs.
- Season eggs; top with grated cheese; replace the bun lids.
- Brush each of the bun lids with the remaining butter.
- Bake in oven at 200 degree Celsius (400 degrees Fahrenheit) for 15 minutes or until eggs have cooked.
