This cabbage and pea salad is vibrant, crisp and fresh. You'll love the sweet pop of flavor from the peas and the easy zesty dressing.

1 medium (2 to 2 1/2 lb cabbage, super finely sliced)
1 english cucumber (thinly sliced into half circles)
1 bunch green onion or chives (chopped)
2 cups sweet peas (thawed in cold water)
3-4 Tbsp extra virgin olive oil or sunflower oil
2 Tbsp apple cider vinegar (or to taste)
2 Tbsp white vinegar (or to taste)
Salt and black pepper to taste

Steps:

  • Discard soft outer leaves of cabbage and thinly slice on a mandolin. Discard or eat the core. Transfer shredded cabbage to a large mixing bowl.
  • Add sliced cucumbers, thawed peas and green onion and toss lightly to combine.
  • Drizzle salad with 3 to 4 Tbsp oil, 2 Tbsp cider vinegar, 2 Tbsp white vinegar and toss to combine. Before serving, sprinkle with salt and pepper to taste (start with 1/2 tsp salt and 1/4 tsp black pepper and go up from there). You can also add more vinegar to taste if your cabbage was larger.

Steps:

¼ cup butter
½ cup sesame seeds, toasted
½ cup blanched slivered almonds
1 large head napa cabbage, shredded
6 green onions, chopped
¼ cup vegetable oil
¼ cup rice wine vinegar
1 tablespoon soy sauce
1 tablespoon sesame oil
⅛ cup white sugar

Steps:

  • Crush noodles, place them in a medium skillet and brown in butter over medium heat. Add almonds and sesame seeds. Stir often to prevent burning. Add seasoning mix from noodles and cool. Toss in a large bowl with cabbage and onions.
  • Prepare the dressing by whisking together the vegetable oil, rice vinegar, soy sauce, sesame oil and sugar. Pour over salad, toss and serve.

  • In a large saucepan, bring 6 cups water to a boil. Add peas; cover and cook for 1-2 minutes. Drain and immediately place peas in ice water. 7 cups savoy cabbage (chopped or shredded) or 7 cups napa cabbage (chopped or shredded)
1 cup red cabbage or 1 cup radicchio, chopped
1/2 cup green onion, white and green parts
1/2 cup celery & leaves, chopped
1/2 cup shredded carrot
1/4 cup peanut oil or 1/4 cup olive oil
1/2 tablespoon sesame oil
1 teaspoon toasted sesame oil
2 tablespoons apple cider vinegar or 2 tablespoons seasoned rice wine vinegar
2 tablespoons golden syrup
1/2 teaspoon freshly grated gingerroot (add more for extra punch)

Steps:

  • In a large salad bowl, toss the cabbage, green onion, celery and carrot.
  • In a non-reactive bowl combine the vinaigrette ingredients and whisk well. (Dressing can be made in advance.).
  • Add the wasabi peas and sliced *peaches to the salad bowl. Toss carefully with the vinaigrette.
  • *NOTE: Do not add the fruit or wasabi peas to the salad until just before serving.

1 cup radicchio
1 (8 ounce) can whole baby corn, rinsed, drained and cut in half (or 1 cup fresh corn kernels)
1/2 cup sliced red radishes or 1/2 cup sliced daikon radish
1/3 cup red onion, thinly sliced
2 -3 tablespoons pickled ginger or 1 -1 1/2 teaspoon grated fresh ginger
1/2 cup enoki mushrooms
1/4 cup rice vinegar
2 tablespoons grapeseed oil
1 1/2 teaspoons chili oil
1 teaspoon sugar
daikon sprouts
2 -3 whole red radishes

Steps:

  • Prepare the salad dressing in a non-reactive small bowl by whisking all ingredients together. Set aside.
  • Cook the pea pods in boiling water for 1 minute. Drain and cool slightly.
