Steps:

  • Mash the strawberries with a potato masher in a pot. Stir the lemon juice, sugar, cornstarch, and salt into the mashed strawberries. Place the pot over medium heat. Stirring constantly, bring the mixture to a boil; remove immediately from the heat and allow to cool to room temperature.

Steps:

  • Place the chocolate into a medium bowl. Heat the cream in a small sauce pan over medium heat. Bring just to a boil, watching very carefully because if it boils for a few seconds, it will boil out of the pot. When the cream has come to a boil, pour over the chopped chocolate, and whisk until smooth. Stir in the rum if desired.

⅓ cup white sugar
1 teaspoon vanilla

Steps:

  • Wash strawberries and remove stems; cut large berries in half or roughly chop them.
  • Combine strawberries, sugar, and vanilla in a saucepan. Cook over medium-high heat, stirring occasionally. The mixture will sizzle for a while, but then juice will begin to form. Continue stirring; mash a few strawberries with a wooden spoon or heat-proof spatula to help produce the syrup. Cook until sauce thickens, about 15 minutes.
  • Remove from heat. In a blender, puree about 1/3 of the sauce, then mix back into remaining topping. Store in refrigerator.

  • MICROWAVE chocolate and whipping cream in medium bowl on HIGH 2 minute or until chocolate is almost melted, stirring every minute. Beat with wire whisk until chocolate is completely melted and mixture is well blended. Add 2 tablespoons of the jam; mix well.
  • POUR into crust; cover. Refrigerate 4 hours or overnight.

1 teaspoon powdered sugar
1/2 teaspoon fresh lemon juice
2 mint sprigs
2 champagne, glasses
1/2 cup whipping cream
2 tablespoons dark corn syrup
6 ounces bittersweet chocolate or 6 ounces semisweet chocolate, chopped

Steps:

  • Place the strawberries, ice cream, 1 tablespoon whipping cream and lemon juice in a blender or food processor; blend until smooth; pour into a pitcher with a spout to make it easy for pouring into the glasses (This can be done ahead of time, covered and refrigerated.).
  • In a heavy medium-size saucepan, bring cream and corn syrup to a simmer; remove from heat; Add chocolate; whisk until melted and smooth; Pour into a small container and refrigerate until ready to use; When ready to use heat slightly to soften the chocolate until it is of the right consistency.
