Rich, elegant and delicious stuffed eggs with Roquefort, caviar, chives, butter, lemon, and a dash of cayenne! These are the perfect elegant appetizer to enjoy with a glass of champagne for New Year's eve, or other festive occasion.

12 hard-boiled eggs
6 ounces Roquefort cheese
1/3 cup black caviar
1 tablespoon chopped chives
1/4 cup soft butter
1/2 lemon, juice of
1 dash cayenne

Steps:

Cut eggs lengthwise; remove yolks.
Crush Roquefort and mix with caviar, chives, butter, lemon juice, dash of cayenne and mashed yolk of 12 eggs.
Fill egg whites through pastry bag. Put in refrigerator until ready to serve.

12 hard-boiled large eggs
2 tablespoons mayonnaise
2 tablespoons sour cream
2 teaspoons fresh lemon juice, or to taste
2 ounces black caviar

Steps:

Cut a paper-thin slice off the ends of each egg and halve the eggs crosswise. Force the yolks through a sieve into a bowl and stir in the mayonnaise, the sour cream, the lemon juice, and salt and pepper to taste. Transfer the filling to a pastry bag fitted with a large decorative tip and pipe it into the egg whites, mounding it. The stuffed eggs may be made 1 day in advance and kept covered and chilled. Just before serving, top the eggs with the caviar.
