ELVIS MUFFINS
Peanut butter banana muffins - these are high in protein and very healthy! If you want to be really decadent you could add 1 cup of mini chocolate chips too.

Steps:
- Mix dry ingredients in one large bowl.
- Put peanut butter and butter in glass measuring cup and microwave until melted, about 40 seconds.
- Add peanut butter/butter mix to wet ingredients.
- Add wet ingredients to dry and mix gently. (Not too much!)
- Bake at 400 degree oven for 15-20 minutes.

ELVIS-HAS-DIED-AND-GONE-TO-HEAVEN CUPCAKES
Elvis would have never left the building if these banana cupcakes were on the menu. We topped them with maple buttercream frosting, drizzled with syrup and sprinkled with chopped bacon. The King would approve.

Steps:
- Heat oven to 350°F. Place paper baking cup in each of 12 regular-size muffin cups.
- Make Banana Cupcakes. In medium bowl, combine flour, baking powder, baking soda and salt; set aside. In large bowl, beat melted butter, granulated sugar and brown sugar until blended. Beat in eggs, one at a time, then bananas and brandy extract. Beat in flour mixture gradually just until blended. Fill muffin cups about 3/4 full.
- Bake 25 to 30 minutes or until golden brown. Cool in pans 10 minutes; remove from pans to cooling rack. Cool completely before frosting, about 30 minutes.
- Make Maple Buttercream Frosting. In medium bowl, beat butter and powdered sugar until blended. Beat in remaining frosting ingredients until smooth. Frost cupcakes; garnish each with a drizzle of syrup, then sprinkle with bacon.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet.
- Stir together the butter, brown sugar, white sugar, peanut butter, and vanilla in a bowl. Mash the bananas into the mixture until there are few lumps. Sift together the flour and baking powder in a separate bowl; add to the banana mixture and stir until thoroughly incorporated. Drop rounded tablespoons of mixture onto the prepared baking sheet.
- Bake in preheated oven until lightly brown and firm, about 10 minutes.

ELVIS BANANA BREAD
As a toddler, my son loved bananas, so we always had them in the house. We didn't always eat them all before they were too ripe, so we experimented beyond basic banana bread. That's how we came up with Elvis bread! -Liz Somppi, Greenfield, Wisconsin

- Preheat oven to 350°. In a large bowl, whisk the first six ingredients. In another bowl, whisk bananas, eggs, peanut butter, applesauce, oil and vanilla until blended. Add to flour mixture; stir just until moistened. Fold in chocolate chips., Transfer to three 5-3/4x3x2-in. loaf pans coated with cooking spray. Bake 45-50 minutes or until a toothpick inserted in center comes out clean. Cool in pans 10 minutes before removing to a wire rack to cool. Freeze option: Securely wrap cooled loaves and freeze. To use, thaw at room temperature or, if desired, microwave each loaf on high for 60-75 seconds or until heated through.
