2 (10 ounce) port wine cheese, balls
1 (8 ounce) package cream cheese, softened
2 tablespoons milk
2 peppercorns
1 slice red pepper
cracker, for serving

Steps:

  • Cut a strip out on each side of the first cheese ball to create the mummy's body and arms. Cut 2 thick strips out of the second cheese ball to create the legs and head. Arrange on the platter and flatten a bit with your hand.
  • Beat cream cheese and milk until smooth. Prepare a pastry bag with a basket weave tip and pipe mixture over the entire mummy. Leave one or two longer lines of piped cheese mix, as if the mummy is coming undone.
  • Add two whole peppercorns for the eyes. Add the pepper slice for the mouth. Serve with crackers.

Parchment paper
1 cup ricotta, drained
1 cup grated Parmigiano-Reggiano, a couple of handfuls
1/2 pound fresh mozzarella, small dice
A handful of chopped flat-leaf parsley, a couple of tablespoons
1 egg yolk, beaten
2 cloves garlic, finely chopped
Few grinds black pepper
1 teaspoon Essence, recipe follows
1/2 pound thinly sliced prosciutto, about 10 slices
6 sheets phyllo dough, from frozen foods aisle of your market
1/2 stick melted butter
Black olives, for eyes
Red and green bell peppers, to cut into Egyptian shapes to decorate the mummy
1 jar, 16 to 18 ounces, roasted red peppers, drained
6 basil leaves
1 small clove garlic
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Steps:

  • Preheat oven to 400 degrees F.
  • Place parchment paper on baking sheet.
  • Mix together cheeses, parsley, egg yolk, garlic, pepper and Essence.
  • Lay out the prosciutto on a flat surface so it overlaps slightly. It should create a surface that is about 12 to 13 inches long.
  • Place the cheese mixture in the center of the prosciutto and roughly shape into a mummy form.
  • Wrap the prosciutto around the cheese mixture sealing it in completely and reshape the mixture to look like a mummy with a rounded head and the body tapering at the bottom.
  • Place a sheet of phyllo on a work surface, brush with melted butter, repeat with 2 more sheets, placing them on top of one another. Do not brush top sheet with butter.
  • Lay the prosciutto wrapped cheese in the center of the phyllo and wrap the phyllo around the "mummy".
  • Butter the outside of the phyllo and then reshape into the mummy shape.
  • Place 1 of the remaining sheets of phyllo on the parchment lined baking sheet, brush with melted butter, repeat with the remaining 2 sheets, placing them on top of one another.
  • Carefully slice the phyllo into 1/2-inch wide strips horizontally. Lay the wrapped mummy in the center of the sliced strips and wrap the sliced pieces around the mummy so it looks like bandages. Gently brush the top with butter.
  • Bake for 20 minutes, or until golden brown on the outside.
  • When the mummy is just a few minutes from coming out of the oven, place drained roasted red peppers, basil leaves, and garlic in the food processor and pulse grind into a pepper puree. Transfer to a small serving bowl.
  • Decorate the mummy with black olives and pepper shapes and transfer him to his "coffin" with 2 wide, long, offset spatulas.
  • Serve with red pepper puree.
  • Combine all ingredients thoroughly and store in an airtight jar or container.

1 cup cream cheese or goat cheese, softened 8 ounces
1/2 cup light sour cream
1/2 yellow onion finely minced
1/4 cup chopped roasted red pepper
1/4 cup crumbled or chopped cooked bacon
1/4 cup chopped fresh Italian parsley
1/4 cup sliced almonds
1 cup cream cheese, softened (8ounces)
3 Tablespoons milk
Black food dye (optional)
2 peppercorns
sliver of roasted red pepper

Steps:

  • Use a stand mixer to beat one cup of cream cheese and sour cream until fluffy.
  • Add the swiss and cheddar cheeses, onion, roasted pepper, bacon, parsley, and nuts. Beat on medium speed until well mixed.
  • Refrigerate the cheese mixture until firm (about 1 hour).
  • Shape cheese ball into a body on a pan or cookie sheet.
  • Mix the second cup of cream cheese and milk. Spoon into a pastry bag with a flat or basket weave tip and pipe bandages onto the mummy body.
  • (OPTIONAL) If you would like to do the "dirty bandages", pull out a tablespoon of cream cheese "frosting" and dye it a light gray. Smear that in a line up your pastry bag before adding in the white cream cheese. Then pipe bandages onto your mummy.
  • Use peppercorns and red pepper to make eyes and a mouth.
  • Serve with crackers and pretzel sticks for scooping, or bread to spread it on. Baby carrots are great too!

2 port wine cheese logs (12 ounces each)
1 package (8 ounces) cream cheese, softened
1 tablespoon 2% milk
2 whole peppercorns
1 pimiento strip

Steps:

  • Cut cheese logs into pieces for mummy's head, body, arms and legs; arrange on a serving plate. , In small bowl, beat cream cheese and milk. Cut a small hole in the corner of a pastry or plastic bag; insert basket weave tip #47. Pipe rows across the mummy, creating bandages. Add peppercorns for eyes and pimiento strip for mouth. Chill until serving.

1 package (17.3 ounces) frozen puff pastry, thawed
1/4 cup apricot jam
1 round (16 ounces) Brie cheese
1 large egg
1 tablespoon water
Apple slices
2 dried cranberries or raisins

Steps:

  • Preheat oven to 400°. Unfold one sheet of puff pastry. On a lightly floured surface, roll pastry into a 14-in. square. Cut off corners to make a circle. Spread jam into a 4-1/2-in. circle in center of pastry. Place Brie on top; fold pastry over cheese, trimming as necessary, and pinch edges to seal. Beat egg and water; brush over pastry., Place on an ungreased baking sheet, seam side down. Roll remaining pastry into a 14-in. square. Cut four 1-in. strips; cut strips in half crosswise. Wrap strips around Brie, trimming as necessary. Discard scraps. Bake 10 minutes; brush again with egg wash. Bake until golden brown, 10-15 minutes more. For eyes, cut two circles from apple slices; place on top of Brie. Top each circle with a dried cranberry. Serve warm with apple slices.

2 (3 ounce) packages prosciutto
2 pimento-stuffed green olives
24 ounces cream cheese, softened
6 ounces shredded Cheddar cheese
6 ounces shredded Havarti cheese
½ cup pitted green olives, chopped
¼ cup roasted red peppers, drained and chopped

Steps:

  • Lightly coat plastic face mask with cooking spray (see Cook's Notes). Line the face mask with plastic wrap, taking care to press it down fully into the nose and eyes.
  • Reserve two or three slices of prosciutto and set aside. Tear the remaining slices of prosciutto into strips and lay them into the mask to form the "muscle tissue." Start around the eyes, leaving eyes blank, and then create the cheeks, chin, and forehead.
  • Take the two whole green olives and position them in the eye holes, pimento side-down. Set the mask aside.
  • Combine the softened cream cheese, Cheddar, and Havarti cheeses in a mixing bowl. Add the chopped green olives and roasted red peppers. Use an electric mixer or clean hands to mix until thoroughly combined.
  • Take a heaping spoonful of the cheese mixture and arrange it to form an eye around one olive, and then the other. Gently lay handfuls of the cheese mixture all around the mask, taking care not to move the slices of prosciutto. Press the cheese down as you work to fill in all of the crevices. When the mask is full, gently press in the cheese mixture all around the mask. Refrigerate for at least 30 minutes.
  • Invert the mask onto a serving platter and gently remove the mask and the plastic wrap. You should be left with a gorgeous (and freaky) face. If there is cheese showing around the bottom edges, use the reserved prosciutto slices to cover it before serving.

My mom gave me this recipe years ago. I don't think I've ever made this and not had someone ask for the recipe. I have had more "Can you make your cheese ball?" requests than I care to count. I don't really mind though because it is super easy for a party and mighty tastey.

8 ounces cream cheese, 2-3 pkgs room temp (3 will make 2 good sized balls and 2 will make 1 large ball with lots of flavor)
1 (3 1/2 ounce) jar Kraft pimento spread
2 cups shredded cheddar cheese (seperated)
1 (8 ounce) package thin sliced beef lunch meat (I get the Carl Budding kind in the deli section I really don't know the exact package size. It's usu)
2 green onions (use both white and green)

Steps:

  • Make sure cream cheese is room temperature or it is a pain to mix.
  • Finely chop beef and green onions.
  • Mix cream cheese, pimento spread, 1 cup of the cheddar, beef and onion well.
  • Roll into ball(s).
  • Roll ball(s) in remaining cheddar (If you're making more than one ball you will probably need more cheese.
  • Refrigerate (The longer it refrigerates the better the flavors come together, but is good right away too.).

½ teaspoon minced garlic
1 tablespoon Worcestershire sauce
1 tablespoon hot pepper sauce
1 pound shredded Cheddar cheese
1 cup pecans, coarsely chopped
¼ cup chopped fresh parsley

Steps:

  • In an electric food processor or blender, combine cream cheese, garlic, Worcestershire sauce and hot pepper sauce. Blend well. Add Cheddar cheese and process until the Cheddar is fine, but still very visible. Shape the mixture into balls or logs. Wrap individually in plastic wrap and place in the freezer.
  • While the balls are in the freezer, combine the ground pecans and parsley in a shallow bowl. Remove the balls from the freezer and roll them in the pecan and parsley mixture.
