EMERIL'S SHAKE 'EM UP PORK CHOPS

Steps:
- In a large resealable plastic bag, combine the wine, 1/4 cup of the oil, the crab boil, pepper, cayenne, garlic, and bay leaf. Add the pork chops and marinate, refrigerated, turning occasionally, for 2 to 4 hours.
- In a clean, large plastic bag, combine the bread crumbs, masa harina, Parmesan, and Essence. Shake to mix.
- Remove the pork chops from the marinade and shake to remove any excess. One at a time, add the chops to the dry mixture and shake until evenly coated. Remove, place on a large plate, and refrigerate for 15 minutes.
- In a large skillet or saute pan, heat the remaining 1/3 cup of oil over medium-high heat. Add the chops and cook until golden brown and cooked through, 5 to 6 minutes per side.
- Remove from the pan and serve immediately on top of portions of the Cheesy Potatoes au Gratin, with grilled asparagus on the side.

- Preheat the oven to 400 degrees F. Lightly grease a medium gratin dish with butter.
- Cover the bottom of the pan with an overlapping layer of potatoes. Lightly season with salt and pepper and top with a sprinkling of cheese (about 2 tablespoons). Continue layering potatoes, seasoning, and cheese, ending with the remaining cheese on top. Pour the cream over the potatoes, pressing lightly with your hands to cover the potatoes with cream. Cover with aluminum foil and bake until the cheese is absorbed into the potatoes and the potatoes are tender when pierced with a knife, about 50 minutes. Remove the foil and bake until the mixture is bubbly and the top is golden brown, about 10 minutes.
- Remove from the oven and let rest 10 minutes before cutting into portions.
BREAD 'EM AND BAKE 'EM PORK CHOPS
Steps:
- Position rack in center of oven and preheat the oven to 400 degrees F.
- Line a large rimmed baking sheet with aluminum foil and place a wire rack on top.
- Place the melba toast in a food processor and pulse to form coarse crumbs, about 3 pulses.
- Transfer the crumbs to a large plastic resealable food storage bag and add the Italian Essence, 2 tablespoons of the Baby Bam, the garlic powder, Parmesan, and vegetable oil. Close the bag and shake to combine.
- In a medium mixing bowl, beat the eggs and remaining 2 teaspoons of Baby Bam with a fork.
- Using your hands, dip the pork chops 1 at a time into the eggs, then place in the bag, close, and shake to coat on both sides, pressing so that the crumbs adhere.
- Place the chops on the wire rack on the baking sheet.
- Bake until the pork chops are cooked through and the coating is golden brown and crisp, about 20 minutes.
- Using oven mitts or pot holders, remove the baking sheet from the oven and serve the chops immediately.
- Place all the ingredients in a small mixing bowl and stir well to combine, using a wooden spoon. Then store in an airtight container for up to 3 months.

- In a medium bowl, combine the milk, garlic, white wine, red pepper, paprika, and 1 teaspoon salt and stir well.
- Add the pork chops and soak at room temperature while assembling the remaining ingredients, at least 30 minutes.
- Preheat the oven to 400 degrees F and line a large rimmed baking sheet with aluminum foil.
- Place a lightly greased wire rack on top of the baking sheet and set aside.
- In a large sealable plastic bag, add the bread crumbs, remaining 1/2 teaspoon salt, the black pepper, Essence or Italian seasoning, and cheese and shake to combine. Drain the pork chops from the milk mixture, one at a time, and add to the bread crumb mixture.
- Shake to coat thoroughly. (You may need to press the mixture into the chops with your hands.)
- Arrange the pork chops on the baking rack and drizzle with the olive oil.
- Bake for 20-25 minutes, or until cooked through and the breading is crisp and golden.
- **Cook time does not include marinating the chops for 30 minutes in the milk mixture.

- Season both sides of the chops with the Essence.
- Heat the olive oil in a large, heavy pot or Dutch oven over high heat. Add the pork chops, 3 or 4 at a time, and lightly brown, about 2 minutes per side. Remove the pork chops and transfer to a platter. Set aside.
- Reduce the heat to medium. Add the flour and stir constantly until the roux is the color of peanut butter, about 4 minutes. Add the onions, salt, and black pepper. Cook, stirring, until the onions are slightly soft, about 5 minutes. Add the garlic, bay leaves, chicken stock, and water and bring to a boil. Return the pork chops to the pot. Reduce the heat to medium-low, cover, and simmer for 45 minutes. Add the smoked sausage and the potatoes. Bring to a boil; reduce the heat to medium-low, and cook, uncovered, stirring occasionally, for 30 minutes. Remove the bay leaves.
- Remove from the heat. Serve with either steamed white rice or rice pilaf.

- Combine all ingredients of the creole seasoning thoroughly.
- To make the glaze, combine the root beer and stock in a medium heavy saucepan. Bring to a boil over medium-high heat. Reduce the heat to medium-low and simmer until reduced to a thick syrup, about 1 cup, about 50 minutes to 1 hour. Remove from heat.
- Preheat a grill to medium-high. Preheat oven to 425 degrees F.
- Season each chop on both sides with 1 teaspoon of ESSENCE. Place on the grill and cook for 3 minutes. Turn each chop 1/4 turn to make grill marks and cook an additional 2 minutes. Turn and cook on the second side for 5 minutes.
- Transfer to a baking sheet. Drizzle 1 teaspoon of olive oil over each chop. Roast until cooked through and an instant-read thermometer inserted into the center reaches 150 degrees F, 12-15 minutes.
- Place the chops on four serving plates and drizzle with glaze.

This recipe is from one of Emeril's kids cookbook, which I have adapted slightly. Sometimes I just use dried bread crumbs in place of the Melba toast. We love these!

- Preheat oven to 400. Line a large, rimmed baking sheet with aluminum foil and place a wire rack on top.
- Place Melba toast in food processor and pulse to form coarse crumbs, about 3 pulses. Combine in a plastic bag with Italian seasoning, 2 tablespoons Essence, garlic powder, Parmesan and vegetable oil. Close bag and shake to combine.
- In bowl combine eggs and 2 teaspoons Essence.
- Dip one pork chop in the eggs, then place in bag, close, then shake to coat both sides. Place on wire rack. Repeat with remaining choips. Bake until done, about 20 minutes. Remove from pan and serve.
