A very basic and mild red Enchilada Sauce that can be used in many ways. Can easily be made hotter by adding spices, jalapenos or using hot chili powder. It is quick and easy.

1 tablespoon olive oil
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon cumin
2 tablespoons mild chili powder
4 tablespoons flour
4 cups chicken broth
1 (8 ounce) can tomato sauce

Steps:

  • Mix spices and flour in olive oil in saucepan over medium heat until fragrant and starting to brown.
  • Slowly add chicken broth and tomato sauce and cook and stir until thickened.
  • Use as red sauce over any beef, game, cheese or poultry enchiladas.
  • A good mild sauce than can be easily"warmed" up by adding jalapenos, chipotles or other spices.

ENCHILADAS ROJAS MEXICANA (CHICKEN)

This is my sister-in-law's recipe for wonderful chicken enchiladas with red sauce. We use Recipe #197786 for the enchilada sauce. I believe the salsa really makes the dish. It takes some time, but is well worth it. If you're in a hurry, you can start with left over chicken, or rotisserie chicken.

1 roasting chicken
1/2 onion
4 garlic cloves
1 tablespoon salt
15 white corn tortillas
3 tablespoons olive oil (separated)
1 white onion, chopped
1 bunch fresh cilantro, chopped
2 cups shredded monterey jack cheese
4 cups salsa (I use the Salsa Roja Mexicana #197786) or 4 cups enchilada sauce

Steps:

  • Boil the whole chicken with 1/2 onion, garlic cloves and salt in water to cover for one hour over medium heat. Let cool enough to handle. Remove chicken meat from bone and shred. (Can use left over chicken meat, or a rotisserie chicken if desired.).
  • Chop the white onion and set aside. Chop the cilantro and set aside.
  • Heat a little olive oil in a skillet, and quickly fry the tortillas, one at a time, until soft and pliable. You will need to add a little olive oil from time to time. Drain the tortillas on paper towels.
  • Heat the salsa. One at a time, dip the soft tortilla in the salsa and place it in the baking pan (a 13x9 baking pan works well). Place a heaping spoonful each of shredded chicken and cheese in the middle of the tortilla. Add a little chopped onion and cilantro. Fold or roll the tortilla and move it to the side of the pan. Repeat with the remaining tortillas until the pan is full. Top with the remaining salsa, sprinkle with remaining cheese, cilantro and onion.
  • Bake at 350ºF until the cheese has melted and the sauce is bubbly.

1 teaspoon minced onion

Recipe for an easy red enchilada sauce, also known as salsa roja or mole rojo, prepared with dried ancho and pasilla chiles. Use it as a base for Pozole too.

8 ancho chiles (mild fruity dried chili pods)
4 pasilla chiles (mild fruity dried chili pods)
1 medium onion quartered
2 plum tomatoes
3 cloves garlic
1/2 teaspoon Mexican oregano
1/2 teaspoon marjoram
2 tablespoons cooking oil
salt to taste

Steps:

  • Toast the chiles in a hot pan until fragrant. (about 10 to 15 seconds per side)
  • Allow chiles to cool and then remove stems, seeds, and veins.
  • Char the onion, tomatoes, and garlic in a hot pan.
  • Place the chiles, onion, tomatoes, garlic oregano and marjoram in a pot with just enough water until the ingredients are almost covered.
  • Bring to a boil and then reduce the heat to low.
  • Simmer for 15 minutes to reconstitute the chiles and soften the veggies.
  • Blend the chiles, onion, tomatoes, garlic, oregano marjoram, and the soaking water until smooth. It usually takes about a minute.
  • Add water little by little if necessary to blend. You may have to blend in two batches
  • Strain the mixture.
  • Add two tablespoons of cooking oil to a hot pan add the strained sauce to fry it.
  • Reduce the heat and simmer for 30 minutes until the sauce has thickened.
  • Add salt to taste.
  • Allow the sauce to sit for at least 2 hours so that the flavors meld.
  • Warm the sauce before serving.

FOR THE ENCHILADA SAUCE:
3 large red chili peppers
2 small red serrano chili peppers (or any small hot red pepper)
4 clove garlic, minced
2 Tbsp olive oil, extra virgin
1 Tbsp lemon juice
1/4 c red chili powder
1 c water
2 Tbsp sugar
FOR FILLING:
2 Tbsp olive oil, extra virgin
1 small red onion, diced
1 1/2 lb beef, cut into thin strips
1 pinch garlic salt
1 pinch cayenne pepper
1 pinch oregano, dried
2 c shredded sharp cheddar cheese, divided
FOR WRAPPING:
12 corn tortillas
hot oil (a deep fryer makes this step much easier)

Steps:

  • 1. Puree first 4 ingredients in food processor. Add to saucepan, straining first to remove any large chunks. Stir in remaining sauce ingredients and saute for several minutes on low until mixture starts to bubble. Remove from heat.
  • 2. Saute beef and diced onion in olive oil until cooked to desired doneness. Remove from heat and stir in 1 cup of the cheese.
  • 3. Heat oil and, using tongs, dip corn tortillas one at a time in oil, then in sauce. Fill with 2 tablespoons of beef mixture and roll, placing side by side in greased baking dish (be careful, as tortillas will be hot). Pour remaining sauce over enchiladas and bake for 20 minutes at 350 degrees. Top with remaining cheese and bake for an additional 10 minutes or until cheese is melted. Let pan rest for 5 minutes before serving.

Best Red Enchilada Sauce image

I have tried many different enchilada sauces over the years in search of the perfect red enchilada sauce. This recipe comes from Douglas Cullen from the Mexican Foodie. It is the best enchilada sauce I have ever made. The main ingredients which give the sauce most of its flavor are ancho chiles and chiles de arbol. The chiles de arbol are what give this enchilada sauce its heat. Reduce their number if you want to prepare a milder sauce. Increase for more heat. This sauce is delicious!

12 dry ancho chilies (large chiles in the photo)
4 chiles de arbol (small chiles in the photo)
2 roma tomatoes, diced
1 small onion, chopped
2 garlic cloves, minced
1 tablespoon Mexican oregano
1 teaspoon cumin
1 tablespoon chicken bouillon (optional)
salt
6 cups water

Steps:

  • 1. Rinse the ancho chiles and the chiles de arbol under cold water and pat dry. Remove the stems. Toast the chiles in a dry pan or comal over medium low heat until fragrant. Keep turning the chiles so they don't burn. You can also use a toaster oven, but be sure to watch the chiles closely so they don't burn. I find the toaster oven method easier because the ancho chiles are not flat. Toast the two different types of chiles separately.
  • 2. Sautee onion until translucent. Add garlic and diced tomatoes and saute for another minute.
  • 3. Bring six cups of water and bouillon to a boil and add all of the chiles, onion, tomato, and garlic. Reduce the heat and simmer for fifteen minutes.
  • 4. Transfer the contents of the pan to a blender and add the oregano and cumin. Place a towel over the top of the blender while blending to protect from any splatters. Blend for two minutes until the mixture is very smooth. Be careful because the mixture is very hot. Hot contents can cause the lid to fly off your blender, so just use the towel.
  • 4. Return the contents of the blender back to the pan by forcing the mixture through a strainer with the back of a spoon to remove the seeds and tough bits of chile skin that remain. Don't skip this step.
  • 5. Simmer the strained enchilada sauce for 15 minutes to blend the flavors. Add salt to taste.
  • This recipe makes about 4 cups of finished salsa. Store the salsa in the refrigerator for 3 days or in the freezer for one month.

6 large tomatoes
3 serrano chile peppers, stemmed, or to taste
3 cloves garlic, peeled
3 dried California chile peppers, stemmed and seeded
⅓ cup water
¼ onion
3 tablespoons chicken bouillon
½ teaspoon ground cumin
¼ teaspoon ground cloves
2 pinches ground black pepper
¼ cup all-purpose flour
1 pinch salt to taste

Steps:

  • Place tomatoes, serrano chile peppers, garlic, and California chile peppers in a large saucepan. Pour in enough water to cover. Bring to a boil; simmer until tomatoes are fairly soft but not mushy, about 10 minutes. Drain.
  • Transfer tomato mixture to a blender. Add 1/3 cup water, onion, chicken bouillon, cumin, cloves, and black pepper. Puree until smooth, about 2 minutes. Add flour and blend until combined, about 10 seconds.
  • Pour blended mixture into the saucepan. Cook over medium heat until warmed through, about 5 minutes. Season with salt.

•1 tablespoon unsalted butter or lard
•2 tablespoons all-purpose flour
•¼ cup ground pure mild red New Mexican chile powder
•2 cups broth (beef, chicken, or vegetable)
•1 clove garlic, minced
•Pinch each of ground or dried Mexican oregano and freshly ground cumin
•Salt (optional)

Steps:

  • In a heavy saucepan, melt the butter. Add the flour and cook, stirring, until the mixture turns slightly golden. Remove the pan from the cooking heat and stir in the chile powders. Stir in the stock. Continue stirring until the mixture becomes smooth. Add the garlic, oregano, and cumin and simmer for about 10 minutes. Taste and adjust the seasonings, adding salt, if desired. Notes Variation: Ground chuck, roast beef, pork, or poached chicken or turkey can be added when making enchiladas.

5 dried ancho chiles
3 large tomatoes, quartered
1 onion, coarsely chopped
6 garlic cloves, peeled
1/4 cup fresh cilantro
3 tablespoons sugar
2 limes, juice of
1/2 cup broth, any variety or 1/2 cup tomato juice
1 dried pequin pepper, crumbled
1/4 cup olive oil
2 stalks celery, chopped
1 large onion, chopped
1 green pepper, diced
1/2 teaspoon black pepper
salt

Steps:

  • Remove stem of ancho chilis and tear open to expose seeds and create an open and flat chili. Discard seeds.
  • Place chili one at a time SKIN side down on a SCREAMING HOT skillet or grill pan. The chili should pop and crackle a little as you press it flat and hold it against the scorching hot surface with a metal spatula while you count one cerveza two cerveza three cerveza! Remove from pan and repeat until all chilis are seared. (NOT the pequin tho!).
  • Now place the seared Ancho chilis in 1 cup VERY HOT water and weigh them down with something so they stay submersed. I use a potato masher bc it stands by itself and is easy to remove.
  • Soak chilis for about 15-20 minutes. Drain and discard soaking water.
  • Meanwhile, chop, dice and measure remaining ingredients.
  • In a blender combine drained chilis, chili pequin, tomatoes, garlic, 1 onion- reserve the other to add later, cilantro, sugar, lime juice and broth or juice. Pulse until smooth. (I use what I have on hand. Try to match the broth to whatever dish you are preparing or use V8 or tomato juice.).
  • Heat oil in the skillet used previously or a heavy pot. Add celery, onion, and green pepper and saute until they begin to soften. (I like to keep the pieces rather large, about 1 inch in size.).
  • Remove from heat and pour all ingredients from blender into hot pan. IT WILL splatter and pop! Be careful! Return to burner and whisk over high heat until the mixture comes to a boil.
  • Reduce heat immediately and continue whisking periodically for about 10 minutes or until sauce is thick.
  • Use immediately or transfer to a glass jar with tight fitting lid, cool and store in refrigerator until ready to use.
  • Note: I have hot packed this into a sterilized glass canning jar. It never lasts long in my house so I do not know how long it keeps.

3 dried negro (pasilla) chile peppers, stemmed and seeded
¾ pound fresh tomatillos, husks removed
¼ white onion
1 clove garlic, peeled
water to cover
¾ pound Roma tomatoes, halved lengthwise
½ teaspoon chicken bouillon granules, or to taste

Steps:

  • Place chile peppers in the bottom of a small saucepan. Add tomatillos, onion, and garlic. Pour in enough water to almost cover tomatillos. Arrange tomatoes over tomatillos.
  • Cover saucepan and bring water to a boil. Reduce heat and simmer until tomatoes soften, about 5 minutes. Remove saucepan from heat and let cool, about 10 minutes.
  • Pour off most of the water and transfer mixture to a blender; puree until smooth. Season with chicken bouillon to taste.

I got this one from my friend, Rick Ramirez's Mom, Irma when I lived in Yuma in the early 1960's. I usually make a double batch and freeze the excess, 2 cups at a time in Sandwich size ziplock freezer bags. Cooking time includes steeping time for the chiles.

5 dried pasilla peppers
5 dried ancho chiles or 5 dried New Mexico chiles
2 cups boiling water
2 cups tomato sauce (My Crock Pot Italian Tomato Sauce)
2 garlic cloves, minced
1/4 cup oil
3/4 teaspoon kosher salt
1 teaspoon crumbled Mexican oregano
1/2 teaspoon whole cumin seed, grind fresh with oregano

Steps:

  • Preheat oven to 375°F.
  • Place chiles on a wire cooling rack on a baking sheet.
  • Roast 4-5 minutes, NO MORE THEY"LL TURN BITTER!
  • Let them cool to touch.
  • Cut tops off, split in two with a sharp knife.
  • Remove seeds and veins, the soft part that holds the seeds.
  • Cover with boiling water, let steep an hour.
  • Remove each half to a platter and scrape the pulp with the edge of a spoon. After handling chiles wash your hands with warm water and baking soda to nutralize the chile juice. It's an acid. You can safely wash your eyes too.
  • Combine all ingredients including the water in a sauce pan.
  • Bring to a simmer, simmer for 15 minutes.
  • Stirring occasionly.
