SIMPLE PERFECT ENCHILADAS

Simple Perfect Enchiladas image

Provided by Ree Drummond : Food Network

Categories     main-dish

Time 1h15m

Yield 8 servings

Number Of Ingredients 16

2 tablespoons canola oil
2 tablespoons all-purpose flour
One 28-ounce can enchilada or Mexican red sauce
2 cups chicken broth
1/2 teaspoon salt
1/2 teaspoon black pepper
1 pound ground beef
1 medium onion, finely chopped
1/2 teaspoon salt
Canola oil, for frying
10 to 14 corn tortillas
Two 4-ounce cans diced green chilies
1 cup chopped green onions
1/2 cup chopped black olives
3 cups grated sharp Cheddar cheese
Cilantro, for garnish

Steps:

  • In a saucepan over medium-low heat, combine the canola oil and flour. Whisk together and allow to bubble for 1 minute. Pour in the red sauce, chicken broth, salt and pepper. Bring to a boil. Reduce the heat and simmer while you prepare the other ingredients.
  • While the sauce is simmering, brown the ground beef with the onions in a large skillet over medium-high heat. Drain the fat, add the salt and stir to combine. Turn off the heat and set aside.
  • In a small skillet over medium heat, heat some canola oil. Lightly fry the tortillas just until soft. Do not crisp. Drain on a paper towel-lined plate. Repeat until all the tortillas have been fried.
  • Preheat the oven to 350 degrees F.
  • Spread 1/2 cup of the sauce in the bottom of a 9- by 13-inch baking dish. Next, one at a time, dip each tortilla into the sauce. Set the sauce-soaked tortilla on a plate. Place on some of the meat mixture, chilies, green onions and black olives. Top with a generous portion of grated Cheddar. Roll up the tortilla to contain the filling inside.
  • Place the tortilla seam side down in the baking dish. Repeat with the rest of the tortillas and pour the remaining sauce over the top. End with a generous sprinkling of cheese and any other bits of chiles, green onions or olives you have left over from the filling.
  • Bake the enchiladas for 20 minutes, or until bubbly. Sprinkle chopped cilantro over the top and serve.

AUTHENTIC MEXICAN ENCHILADAS

Authentic Mexican Enchiladas image

This is the real thing! Corn tortillas are dipped in a home made sauce, fried, filled with Mexican queso fresco, then topped with sour cream, lettuce and tomato. My mother in law is from Mexico and taught me to make this delicious dish! Serve with authentic refried beans, it has a taste different from the norm--so good!

Categories     World Cuisine Recipes     Latin American     Mexican

Time 45m

Yield 6

Number Of Ingredients 11

6 dried chile de arbol peppers
1 clove garlic
1 teaspoon salt
¾ cup water
1 cup vegetable oil for frying
18 (6 inch) corn tortillas
3 cups crumbled queso fresco
1 cup sour cream
1 cup shredded lettuce
2 medium tomatoes, thinly sliced
½ cup chopped green onions

Steps:

  • Snap the tops off of the dried chilies, and place in a saucepan with enough water to cover. Bring to a boil, and simmer for 15 minutes. Drain the water, and place chilies into a food processor or blender with the garlic and salt. Puree until smooth. Press sauce through a strainer, and set aside.
  • Heat the oil in a large skillet over medium heat. Soak each tortilla in the sauce, then place in the hot oil. Turn over almost immediately, and fry for about 5 seconds on the other side. Remove to a plate that is lined with paper towels. The easiest way to do this is to fry the tortillas and stack them directly on top of each other until you have fried them all. This will keep the tortillas pliable until you are ready to fill them.
  • Take one fried tortilla at a time, and fill with about 2 tablespoons of the queso fresco. Roll up, and place seam side down on a plate. Place three of these on each plate. Top in the following order: Start with a layer of sour cream, then a small handful of lettuce, three tomato slices, 2 more tablespoons of queso fresco, and finally, 1 tablespoon of green onions.

ENCHILADAS SUIZAS

Enchiladas Suizas image

Provided by Marcela Valladolid

Categories     main-dish

Time 1h5m

Yield 6 enchiladas

Number Of Ingredients 13

9 tomatillos, husked and rinsed
1/4 white onion
1 serrano chile
1 yellow chile (guerito pepper)
2 cloves garlic
1/4 bunch fresh cilantro
Salt and freshly ground black pepper
1/2 cup Mexican crema
1/2 cup heavy cream
Vegetable oil, for frying
6 corn tortillas
1 1/2 cups shredded chicken
1/2 cup shredded Oaxaca or mozzarella cheese

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the tomatillos, onion and both chiles in a medium heavy saucepan, cover with water and bring to a boil over medium-high heat. Boil until the tomatillos turn an olive-green color, about 10 minutes. Drain and transfer the tomatillos, onions and chiles to a blender. Add the garlic and cilantro and blend until smooth. Season with salt and freshly ground black pepper.
  • Mix the Mexican crema and heavy cream together in a small bowl and season with salt. Set aside.
  • Heat 1 tablespoon oil in a small skillet over medium-high heat. Fry the tortillas until golden but still pliable, about 10 seconds per side, using more oil if needed. Transfer to paper towels to drain.
  • Place the tortillas on a work surface. Divide the shredded chicken evenly among the tortillas and roll up each like a cigar. Spread 1/3 cup of the sauce in a 13-by-9-by-2-inch glass baking dish. Arrange the enchiladas in 1 layer, seam-side down, snugly inside the dish. Pour the rest of the sauce over the enchiladas. Drizzle the cream mixture on top and sprinkle the cheese all over.
  • Bake until the cheese is melted and starting to brown in spots, about 30 minutes. Serve immediately.

ENCHILADAS - NEW MEXICO STYLE

Enchiladas - New Mexico Style image

These enchiladas are stacked like pancakes, not baked in oven. This is a family recipe handed down two generations. Quick, easy and definitely delicious. Use your favorite kind of meat in this dish - it also works well for leftover meat.

Provided by PIPERCAT99

Categories     World Cuisine Recipes     Latin American     Mexican

Time 45m

Yield 6

Number Of Ingredients 11

1 tablespoon vegetable oil
2 pounds skinless, boneless chicken breast halves - cut into 1 inch pieces
¼ teaspoon ground cumin
¼ teaspoon chili powder
1 (19 ounce) can enchilada sauce
2 cups shredded iceberg lettuce
2 cups shredded Colby cheese
1 (12 ounce) package corn tortillas
1 onion, chopped
½ cup sour cream
6 fried eggs

Steps:

  • Heat the oil in a large skillet over medium heat. Add the chicken pieces, and cook until browned. Season with cumin and chili powder. Pour in the enchilada sauce, and simmer for about 15 minutes. Stir occasionally.
  • In a separate skillet over medium heat, warm the tortillas. Don't fry them, just warm them until they are flexible.
  • To assemble the enchiladas, dip a tortilla in the enchilada sauce, and place it on a serving plate. Spoon some of the meat and sauce on, then add shredded lettuce, cheese, onion and sour cream. Top with another tortilla that has been dipped in the sauce. You may repeat the layering as many times as you wish depending on your appetite. Make additional stacks for each person. Top stacks with a fried egg, if desired.

ENCHILADAS SUIZAS

Enchiladas Suizas image

An alternative enchiladas for variety and those who can't eat tomato-based sauces. This is very mild so if you want it spicier, try throwing in a jalapeño or two.

Provided by SharleneW

Categories     Chicken

Time 40m

Yield 6 serving(s)

Number Of Ingredients 15

2 medium onions, chopped
8 mild green chilies, chopped or 2 (4 ounce) cans canned green chilies
1 garlic clove, minced
2 tablespoons butter
2 tablespoons flour
1 1/2 cups chicken broth (go ahead and use the whole 14 ounce can rather than have that extra bit go to waste)
salt
1/4 teaspoon ground cumin
1/4 lb monterey jack cheese, grated
1/4 lb cheddar cheese, grated
2 scallions, sliced
oil (for frying)
corn tortilla
1 1/2 cups cooked chicken, shredded
1 cup heavy cream

Steps:

  • Melt the butter in a saucepan over medium heat.
  • Add the onion and saute until soft, about 2 minutes.
  • Stir in the flour and chicken broth.
  • Add the chiles, garlic, salt to taste and cumin and simmer about 15 minutes to blend the flavors of the sauce.
  • Heat the oven to 350°F.
  • Grease a rectangular baking dish.
  • Put about 1/4 inch oil in a large frying pan and set over medium heat.
  • When hot, fry the tortillas briefly.
  • (Do not let them get crisp!).
  • Drain on paper towels.
  • Dip in the sauce.
  • Put some of the chicken in a strip on each tortilla.
  • Top with 2 to 3 tablespoons cheese.
  • Roll up enchiladas and put in prepared baking dish seam down.
  • Pour remaining sauce over top, then the cream. (I know this seems like a lot of cream and it does look like it might turn out runny, but after cooking it settles in and you end up with terrific, moist enchiladas and not an excess of sauce).
  • Sprinkle with remaining cheese and scallions.
  • Bake about 20 minutes (30 minutes if you are starting with cold chicken).

ENCHILADAS MONA LUISA

Enchiladas Mona Luisa image

This goes against my normal cooking SOP, but the recipe calls for canned enchilada sauce and dehydrated Parmesan cheese. Canned sauce yet simple, delicious and artistically inspiring enchiladas. No baking required. Let's start off 2008 with a whiz-bang! !Gracias, Mona Luisa! Please note that this recipe has been updated significantly since it was first posted. -cg

Provided by COOKGIRl

Categories     Mexican

Time 30m

Yield 12 enchiladas

Number Of Ingredients 7

1 (19 ounce) can enchilada sauce (read *NOTE)
1 -2 dried california chile
1 dozen corn tortilla
1/2 large yellow onion, finely minced (or grated)
1 1/4 cups dry parmesan cheese (more or less)
3/4 cup finely shredded green cabbage ("a touch" as Mona says)
olive oil, for frying

Steps:

  • *NOTE: Specifically, Mona uses Las Palmas Red Enchilada Sauce (Medium). For a less spicy version, use Las Palmas Red Enchilada Sauce (Mild). First, she soaks 1 or 2 California chilies in water. (She does this for two reasons: add more flavor to the sauce and "stretches" the meal.) Drain the chilies (*saving* the soaking liquid). Remove seeds and membrane. Puree the chilies with the soaking water in a blender until smooth. Add to the canned enchilada sauce. Also, you will have more sauce than is needed for the recipe. Save and freeze for later use.
  • Heat up the enchilada sauce in a non-reactive sauce pan.
  • In a large bowl combine the onion and dried Parmesan cheese. Place the cabbage in another bowl.
  • Heat up some olive oil in a skillet on medium heat.
  • Take one tortilla and [lightly] drench in the enchilada sauce. DO NOT allow the tortillas to soak in the sauce, or they will fall apart.
  • Fry each tortilla for 1 minute. Flip over and cook another 30 seconds.
  • Transfer the tortilla to a plate and add a scant 1/2 tablespoon shredded cabbage (give or take). Then add a tablespoon of the cheese/onion mixture. Do not overstuff the enchiladas.
  • Roll up in a neat little bundle, place seam side down and transfer to a serving platter. Repeat. Add more olive oil to skillet as needed.
  • *Transfer enchiladas to a serving platter and garnish with any remaining cheese/onion mixture.
  • Enjoy a slice of Heaven on Earth!
  • *Special Note: you read and followed the directions correctly. These enchiladas are *not* baked.
