1 (14.5 ounce) can diced tomatoes with green chile peppers
1 (8 ounce) package cream cheese
2 (10.75 ounce) cans condensed cream of chicken soup

  • In a medium saucepan over medium heat, mix together the chicken, diced tomatoes with green chile peppers, cream cheese and cream of chicken soup. Cook 20 minutes, stirring frequently, until the dip begins to thicken.

1 (1 ounce) packet dry ranch dressing mix (Not the dip mix!)
shredded cheese (As much or as little as you like!)

Steps:

  • MIX ALL INGREDIENTS TOGETHER.
  • You can use all or part of the ranch packet... depending on how much you like the ranch flavoring!
  • Serve with crackers. Enjoy!

Creamy, spicy, and something a bit different than what is usually served at a party. We have handed out this recipe countless times. My sister-in-law gave me this recipe and I think it originally came from allrecipes.com. This freezes and thaws well for a quick dip for company or a weeknight meal. We use light soup, cream cheese, Velveeta, and sour cream, so it's not quite so bad for us. I'm sure fat-free products could be used, but probably at the expense of the creaminess.

2 (13 ounce) cans chicken, drained and shredded
1 (10 3/4 ounce) can cream of chicken soup
4 ounces monterey jack pepper cheese
1 garlic clove, minced
3/4 cup Velveeta cheese, cubed
8 ounces cream cheese, softened and cubed
8 ounces sour cream
3/4 cup salsa (we like hot)
1 (4 ounce) can chopped green chilies, drained

Steps:

  • Place all ingredients in a microwavable bowl.
  • Stir.
  • Place in microwave (covered) and cook on high until completely melted, stirring often. The time will depend on the strength of your microwave.
  • Enjoy with tortilla or corn chips.
  • 1 small onion, diced, and 1/2 green bell pepper, chopped, may be substituted for the salsa. We find the salsa to be quicker.
  • When taking to parties, we microwave this in a large glass bowl that fits in my portable case. We use the heat pack in the case to keep it warm until we get to the party, and then pour into a crockpot, turned on to low.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Place chicken breast halves on a medium baking sheet.
  • Bake in the preheated oven 20 minutes, or until no longer pink. Remove from heat, cool and shred.

There are a lot of Buffalo chicken dip recipes but I feel certain this is one of the very best. Made with freshly cooked chicken, this is way better than recipes that call for the canned stuff. It's super rich and creamy with the perfect amount of tang. I highly recommend the optional blue cheese crumbles on top! Great served at room temperature so it's perfect for a party. Serve with celery and carrot sticks or corn chips.

3 (6 ounce) skinless, boneless chicken breast halves
1 teaspoon kosher salt
½ teaspoon ground black pepper
¼ teaspoon garlic powder
cooking spray
2 (8 ounce) packages cream cheese, softened
1 cup ranch dressing
1 cup hot sauce (such as Frank's RedHot ®)
1 ½ cups shredded Cheddar cheese
⅓ cup crumbled blue cheese
3 stalks green onion, green parts only, thinly sliced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Place chicken on a large sheet of foil and sprinkle evenly with salt, pepper, and garlic powder. Wrap foil around chicken to form a pouch, sealing it around the edges. Place foil pouch on a rimmed baking sheet.
