SPAM MACARONI AND CHEESE
This decadent yet simple recipe pairs creamy macaroni and cheese with crispy, salty-sweet diced Spam for a dish that bridges Puerto Rico and the South. It's much quicker than most homemade macaroni and cheese recipes (which often require making a roux and cream sauce), without sacrificing texture or flavor. It is also incredibly adaptable, because it will work with most cheeses. If you have the time and the will, sprinkle the finished macaroni with extra cheese and bake under a low broil for 5 to 10 minutes until toasted. During tough times, a box of instant mac and cheese and a can of Spam will also yield delicious results.

- Bring 4 quarts of water to a boil over high heat in a large, heavy pot or Dutch oven.
- Meanwhile, heat a large nonstick skillet or wok over medium-high, then add Spam and fry for about 10 minutes, stirring often, until the meat is evenly browned and crispy. (Feel free to taste along the way until the Spam reaches your desired crispness.) Remove from heat until ready to use.
- Once water has come to a rolling boil, add a fistful of salt, then stir in the macaroni. Cook according to package instructions, stirring several times, until al dente, about 7 to 9 minutes. Drain the noodles in a large colander, then rinse the noodles and the pot with lukewarm water.
- Return pot to stovetop over medium heat and add 2 cups milk. While the milk is warming, combine remaining 1 cup milk and the flour in a medium bowl and whisk together until there are no lumps. Once the milk starts to steam, whisk in the milk-and-flour mixture, and continue to whisk gently until a béchamel forms as thick as plain yogurt, about 12 minutes.
- Once the sauce is thickened, reduce heat to low and slowly whisk in 4 cups shredded cheese until fully melted. Add white and black pepper, then season to taste with salt.
- Off heat, add Spam and cooked macaroni, and fold a dozen or so times until thoroughly mixed.
- Serve immediately, passing the extra cheese at the table, or transfer the macaroni to a casserole, sprinkle with the remaining cheese, and bake under low broil until toasted on top, about 5 to 10 minutes.
HOMEMADE MAC AND CHEESE

- Cook macaroni according to the package directions. Drain.
- In a saucepan, melt butter or margarine over medium heat. Stir in enough flour to make a roux. Add milk to roux slowly, stirring constantly. Stir in cheeses, and cook over low heat until cheese is melted and the sauce is a little thick. Put macaroni in large casserole dish, and pour sauce over macaroni. Stir well.
- Melt butter or margarine in a skillet over medium heat. Add breadcrumbs and brown. Spread over the macaroni and cheese to cover. Sprinkle with a little paprika.
- Bake at 350 degrees F (175 degrees C) for 30 minutes. Serve.

EVIL MAC AND CHEESE
One bite of this mac and cheese and you will do crazy things for it again. Its ooey gooey, tangy and rich, Perfect side as a passed dish to bring with you, excellent at holidays dinners, or or my favorite rainy Sundays. The sauce can be as spicy as you like by adjusting the smoked Paprika.

- Butter an 9 x 11 casserole dish.
- Dice pancetta and saute in olive oil , cook until crispy.
- Place cooked pancetta on paper towel to drain excess fat.
- Bring to boil water for pasta.
- Liberally salt pasta water once it comes to a rapid boil.
- Cook pasta 8 minutes stirring periodically
- Drain Pasta.
- While pasta is cooking prepare cheese sauce.
- Preheat Oven to 350 degrees
- In a large sauce pan over medium heat melt 1 stick of unsalted butter.
- Once melted add 3 tablespoons of flour combine flour/butter mixture.
- Add half of the salt and pepper (reserve the remainder until after cheeses are added to avoid over seasoning).
- Cook for 2-3 minutes stirring continuously as to not burn
- Pour cream into roux.
- Stir until smooth.
- Reduce heat to low and allow sauce to simmer and thicken for 5 minutes.
- Grate in fresh nutmeg.
- Add hot sauce & smoked hot paprika.
- Continue to stir every minute or so.
- Once mixture is coats back of a spoon begin to whisk in cheeses.
- Once all of cheeses are incorporated and sauce is smooth remove from heat and stir in pancetta.
- Taste and adjust salt & pepper seasoning, also add more hot sauce if you desire.
- Combine pasta and cheese sauce, then add to buttered casserole dish.
- Cover with foil and bake at 350 degrees for 45 minutes. Remove foil and bake uncovered for remaining 5 minutes.

- Bring about 8 -10 cups of water to boil in a large pot on the stove-top, over high heat. Once boiling, add a generous sprinkling of salt to the pot and add the pasta. Cook pasta for 2 minutes less than recommended on the package, or to just al dente. Drain well and rinse with cold water to stop the pasta from cooking further. *While water is boiling and pasta is cooking, you can start your cheese sauce.
- For the cheese sauce: In a large saucepan, melt the butter over medium heat. Whisk in the flour and continue to whisk and cook for about 2 minutes.
- Very slowly add the milk, a little at a time, whisking constantly. Once all the milk has been added, cook, stirring frequently until the sauce thickens, about 8-10 minutes. (Don't rush this step!
