1 pound ground beef
1 pound ground lamb
Salt and freshly ground black pepper
1 tablespoon grapeseed oil
4 slices feta, 1/4-inch thick
1/2 cup sour cream
1/4 cup peeled and small diced cucumber
2 tablespoons minced red onion
2 tablespoons diced tomato (excluding skin)
1 teaspoon salt
1 pinch ground white pepper
3 tablespoons softened butter
4 brioche buns
Lettuce and tomato, for burger

Steps:

  • For the burgers: In a bowl, blend the beef and lamb. Sprinkle with salt and pepper, and then remove from the bowl and form 4 patties, 8 ounces each.
  • Next, to cook the burgers, warm a large pan with the oil over high heat until the verge of smoking. Then reduce the heat to medium and add the burgers. Cook on the first side for 5 minutes, and then flip and repeat the process on the second side. During the second side of cooking, top with the feta cheese and finish for final time.
  • For the sauce: During the burger cooking, in a bowl blend and whisk together the sour cream, cucumbers, onions, tomatoes, salt and pepper. Taste and add any additional seasoning if desired.
  • Warm a second pan over medium heat. Spread the butter on the interior of the buns, and then place in the warmed pan, browning until crusted, 2 to 3 minutes.
  • Once cooked, remove and build the burgers with lettuce, tomato, burger, and top with sauce and enjoy.

Ground lamb is very tasty and it makes for a great lamb burger. Lamb is a bit more expensive than beef or ground veal but once in a while lamb is a tasty change.

2 lbs lean ground lamb
1 tablespoon garlic powder
1 teaspoon sea salt
1 teaspoon pepper
diced Spanish onion
1/2 cup chopped parsley

Steps:

  • In medium mixing bowl combine ground lamb, garlic powder, salt, pepper, onion, and fresh parsley. You can add th yolk from one egg if desired.
  • Combine all ingrediets and mix by hand for about a minute or so. You now want to start forming the lamb into hamburg type patties. Set the oven on broil and place burgers on oven broiler rack.
  • Cook each side of burgers for about 8 -10 minutes. You want to make sure your lamb burgers are completely cookd before serving. You can serve your lamb on a hamburger bun or just eat it plain. Enjoy!

These spiced lamb burgers, topped with eggplant and feta, bring a bit of the Mediterranean to your backyard grilling.

1 large eggplant, cut into 3/4-inch wedges
2 tablespoons olive oil
Coarse salt and ground pepper
3 tablespoons fresh mint leaves, chopped
Zest of 1 lemon, plus 2 teaspoons lemon juice
1 1/2 pounds ground lamb
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
4 plain or whole-wheat buns
Fresh goat or feta cheese, crumbled

Steps:

  • Heat a grill to medium-high. Clean and lightly oil hot grill. Brush eggplant with olive oil and season with salt and pepper. Grill eggplant, turning occasionally, until browned and cooked through, 10 to 12 minutes. Transfer to a cutting board and coarsely chop. In a medium bowl, toss eggplant with mint and lemon zest and juice.
  • In another medium bowl, mix lamb, cumin, and coriander. Form into 4 patties. Season with salt and pepper. Grill 4 minutes per side for medium-rare. Serve burgers on buns with eggplant mixture and crumbled goat cheese.

  • Heat the olive oil in a medium skillet over medium heat, and add the onion. Sauté for about 7 minutes until the onion is softened and golden brown. Remove about 2/3 of the sautéed onion and set aside. Chop the rest of the onion, then return to the pan over medium heat. Add the garlic to the pan and sauté for one more minute until you can smell the garlic. Remove to a large bowl and cool.
  • When the onion and garlic mixture is cool add the lamb, olives, ½ teaspoon smoked paprika and salt and pepper. Use your hand to mix gently but thoroughly. Form the mixture into 6 even patties, and use your thumb to make an indent in the middle of the burger so that as it cooks and puffs in the middle it ends up flat and not rounded.
  • Make the sauce. Combine the mayo, roasted peppers, paprika, cayenne, sherry vinegar or lemon juice, and salt and pepper in a small food processor or blender. Process until smooth.
  • Either preheat the grill to medium high, or very lightly oil a nonstick skillet and heat over medium high heat. Cook the burgers wither in the pan or on the grill for about 4 minutes per side, until they have reached the desired doneness. The USDAS recommends an internal temperature of 160°F . Top with Manchego at the end if desired and either close the grill lid or place a lid over the pan until the cheese starts to melt.
