You can't eat just one of these delicious bar cookies packed with chocolate, coconut, and walnuts.

2 cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
⅔ cup shortening
2 cups packed brown sugar
1 teaspoon vanilla extract
3 eggs
1 ½ cups semisweet chocolate chips
¾ cup chopped walnuts
½ cup shredded coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking pan.
  • In large bowl, cream the shortening, brown sugar, eggs and vanilla extract. Slowly blend in flour, baking powder, and salt. Mix until well blended. Fold in chocolate chips, walnuts and coconut. Spread the mixture evenly in pan.
  • Bake 20 to 25 minutes. Let cool before cutting into bars.

2 cups all-purpose flour
1 cup packed brown sugar
1/2 teaspoon salt
1 cup butter, melted
FILLING:
3 large eggs
1 can (14 ounces) sweetened condensed milk
1/2 cup all-purpose flour
1/4 cup packed brown sugar
1/4 cup butter, melted
3 teaspoons vanilla extract
1/2 teaspoon salt
4 cups sweetened shredded coconut, divided

Steps:

  • Preheat oven to 350°. Line a 13x9-in. baking pan with parchment, letting ends extend up sides., In a large bowl, mix flour, brown sugar and salt; stir in 1 cup melted butter. Press onto bottom of prepared pan. Bake until light brown, 12-15 minutes. Cool 10 minutes on a wire rack. Reduce oven setting to 325°., In a large bowl, whisk the first 7 filling ingredients until blended; stir in 3 cups coconut. Pour over crust; sprinkle with remaining coconut. Bake until light golden brown, 25-30 minutes. Cool in pan on a wire rack. Lifting with parchment, remove from pan. Cut into bars.

1 1/2 cups graham cracker crumbs
1/2 cup (1 stick) salted butter, melted
2 tablespoons honey
2 teaspoons pure vanilla
1 cup butterscotch chips
1 cup semisweet chocolate chips
1 cup shredded coconut
1/2 cup chopped pecans
1 1/2 (14-ounce) cans sweetened condensed milk

Steps:

  • Preheat oven to 350 degrees.
  • In a medium bowl, combine graham cracker crumbs, butter, honey, and vanilla. Press graham cracker mixture evenly into the bottom of a 9-by-13-inch baking dish. Evenly sprinkle butterscotch chips, chocolate chips, coconut, and pecans on top.
  • Pour condensed milk over the mixture and transfer baking dish to oven. Bake for 40 minutes. Let cool completely before cutting into 24 bars.

1 1/2 cups firmly packed light brown sugar
1 cup plus 3 tablespoons all-purpose flour
1 stick (1/2 cup) unsalted butter, melted and cooled
1 1/2 cups sweetened flaked coconut
1 cup chopped blanched almonds
2 large eggs, beaten lightly
1 teaspoon vanilla
1/2 teaspoon salt

Steps:

  • Preheat the oven to 350°F. In a bowl with a fork stir together 1/2 cup of the brown sugar, 1 cup of the flour, and the butter until the mixture is combined well, press the mixture evenly onto the bottom of a 13-by 9-inch baking pan, and bake it in the middle of the oven for 10 minutes. In the bowl with the fork combine the remaining 1 cup brown sugar, the remaining 3 tablespoons flour, the coconut, the almonds, the eggs, the vanilla, and the salt and blend the mixture well. Spread the coconut mixture evenly over the crust and bake the mixture for 20 minutes, or until it is pale golden. Cut the mixture into 48 bars and let the bar cool completely in the pan on a rack. The coconut bars may be made 1 month in advance and kept frozen in airtight containers.

1 cup almonds
1 cup shredded coconut
½ cup cacao beans
¼ cup hemp seed hearts
¼ cup goji berries
2 tablespoons coconut flour
1 tablespoon ground cinnamon
1 tablespoon ground ginger
1 teaspoon vanilla bean paste
½ cup honey
¼ cup coconut oil, melted
1 cup Greek-style yogurt

Steps:

  • Preheat oven to 310 degrees F (154 degrees C). Grease a 9-inch square baking pan.
  • Pulse walnuts, almonds, coconut, cacao beans, hemp seed hearts, goji berries, coconut flour, cinnamon, ginger, and vanilla bean paste together in a food processor until combined.
  • Stir honey and coconut oil together in a small bowl; pour over nut mixture and pulse to combine. With food processor running, add yogurt slowly until a moist dough forms. Transfer dough to the greased pan and spread evenly to 1/2-inch thickness.
  • Bake in the preheated oven until edges start to come away from the sides of the pan, 30 to 40 minutes. Increase oven temperature to 425 degrees F (218 degrees C) and bake until top is toasted and golden brown, about 10 minutes more. Cut into 1x3-inch bars while still warm.

1/2 cup margarine
1 1/2 cups graham cracker crumbs
2 cups sweetened coconut
1 cup nuts, chopped
2 cups miniature marshmallows
1 (14 ounce) can sweetened condensed milk
8 ounces milk chocolate chips
8 ounces semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 degrees.
  • Melt margarine in a 9 X 13 inch pan.
  • Remove pan from oven.
  • Sprinkle crumbs in pan and press down with a fork.
  • Sprinkle coconut over the crumbs.
  • Add the nuts and marshmallows.
  • Drizzle the sweetened condensed milk over all.
  • Bake for 25-30 minutes.
  • Cool.
  • Melt both kinds of chocolate chips in the microwave; spread over your bars; and cool.
