4-BEAN BAKED BEANS
Four different kinds of beans baked with molasses. I have substituted different kinds of beans and enjoyed all of the results. Use whatever kind of beans you like! I have also used Canadian bacon instead of regular bacon.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Place kidney beans, butter beans, lima beans, and pork and beans in a 2-quart casserole dish.
- Heat a saucepan over medium heat; cook and stir bacon, onion, and garlic until bacon is browned, about 10 minutes. Pour off excess fat.
- Whisk brown sugar, ketchup, vinegar, molasses, and mustard into bacon mixture; simmer until cooked through, about 20 minutes. Pour sauce over beans in the casserole dish.
- Bake in the preheated oven until bubbling, 1 hour 15 minutes.

Steps:
- Preheat oven to 325 degrees.
- Brown bacon in a large stockpot until crisp.
- Drain on paper towels reserving 3-4 tablespoons drippings.
- Saute onions in bacon fat until softened and translucent.
- Add brown sugar and vinegar.
- Bring to a boil and simmer for 5 minutes.
- Add garlic and beans.
- Bring back to a boil.
- Transfer to a baking dish and bake for 1 1/4 hours covered.
- Add bacon bits to top and bake for an additional 5 minutes.

PEACH, BOURBON AND BACON BAKED BEANS

- Preheat the oven to 350 degrees F.
- In a Dutch oven, cook the bacon over medium heat until the fat is rendered, 8 to 10 minutes. Transfer the bacon to a paper towel-lined plate and reserve. Add the onion to pan and cook until translucent, about 10 minutes.
- Reduce the heat to low, add the beans, ketchup, sugar, preserves, chicken broth, bourbon, mustard, salt, pepper, garlic powder and reserved bacon and stir until well combined. Bring to a simmer. Cover and bake for 40 minutes. Stir before serving.

Steps:
- Mix everything together in a 2 quart casserole dish and top with bacon slices.
- Bake at 350, uncovered, for one hour. It should have a dark color to the top when done.
FAKE BAKED BEANS WITH CRISPY BACON
Steps:
- Cover beans with water to top them by 2 inches and refrigerate overnight, or bring to boil in water to cover, cool 1 hour.
- Drain and rinse beans. Put them in a pot. Stick whole cloves into onion halves and add to pot along with garlic and bay leaf. Cover with enough water to top them by 1 inch. Simmer beans, partly covered, until just tender, about 1 to 2 hours depending upon age and size of beans; do not overcook. Add boiling water if beans look dry during cooking; they should be surrounded by just a little liquid.
- Remove onion, cloves, garlic (if desired) and bay leaf from pot. Stir in the salt.
- In a small bowl, mix together ketchup, molasses, vinegar, mustard powder, Tabasco and pepper. Pour mixture into beans and stir well. Add a slice of bacon to pot and bring everything to a simmer. Let simmer over low heat until beans are thickened, about 30 to 45 minutes. Remove bacon slice, if desired. Season with more salt if needed.
- Just before serving, reheat beans, if necessary. Fry remaining bacon in large skillet and drain on paper-towel-lined plate. Transfer beans to heated gratin dish or baking pan and top with bacon and red onion. Serve hot.

SKILLET BBQ VEGAN BAKED BEANS RECIPE BY TASTY
These vegan baked beans taste like home. They're great for a chilly night in or to share at your next BBQ. The portobello mushroom bacon is the perfect topper, offering a combination of chew and crunch to satiate any bacon cravings!

- Make the portobello bacon: Slice the portobello mushrooms into ¼-inch (6 mm) thick slices.
- In a 9 x 13-inch (22 x 33 cm) baking dish, whisk together the canola oil, liquid aminos, maple syrup, brown sugar, and paprika.
- Lay the mushroom slices in the dish, and let marinate for 30 minutes, flipping halfway through.
- Make the portobello bacon: Preheat the oven to 400°F (200°C). Set a wire rack inside a rimmed baking sheet.
- Transfer the mushroom slices to the wire rack, spacing evenly so they aren't touching.
- Bake for 30-40 minutes, until the mushrooms are slightly leathery and have lost most of their moisture and the edges are crispy. Remove from the oven and let cool completely; the mushrooms will continue to crisp as they cool. Once cool, roughly chop the mushrooms into ½-inch (1 ¼ cm) pieces.
- Meanwhile, make the baked beans: Heat the canola oil in a large skillet over medium-low heat. When the oil is shimmering, add the onion and sauté for 10 minutes, until translucent and starting to caramelize. Add the garlic and sauté for another 5 minutes, until translucent and softened. Add the paprika and mustard and cook for about 30 seconds, until fragrant.
- Stir in the water, tomato paste, pepper, and salt. Bring to a simmer, and then add the brown sugar, vegan Worcestershire, molasses, maple syrup, and apple cider vinegar and stir to combine. Add the beans. Increase the heat to medium and simmer for 30 minutes, stirring frequently so the sauce doesn't burn. Adjust the heat as necessary to maintain a low simmer, and add more water, a few tablespoons at a time, if the mixture starts to look dry. Season with more salt to taste, then remove the pan from the heat.
- Serve the beans immediately, garnished with the portobello bacon, or let cool to room temperature, cover, and refrigerate until ready to serve. Store the portobello bacon in an airtight container at room temperature until ready to use.
