BEEF AND CHICKEN FAJITA BURGERS: HAVE ONE OF EACH!

Steps:
- Heat a grill pan or large skillet over medium high heat.
- For Beef Fajita Burgers:
- Combine sirloin, Worcestershire, spices, thyme, hot sauce and grill seasoning. Mark meat into 4 sections and make 4 patties, 1-inch thick. Using the reserved 1/4 onion piece, grate half of it on the burgers. Drizzle extra-virgin olive oil on the patties. Cook patties 4 minutes on each side for medium or, until desired doneness.
- For Chicken Fajita Burgers:
- Combine chicken, chipotle powder, cilantro, hot sauce and grill seasoning. Score and divide meat into 4 sections and form big patties, 1-inch thick. Using the rest of the 1/4 reserved onion piece, grate the other half of it on the burgers. Drizzle patties with extra-virgin olive oil and cook 6 minutes on each side or until meat is firm and cooked through.
- Heat a medium skillet over high heat. Add extra-virgin olive oil and peppers and onions. Stir-fry the veggies tossing them with tongs to sear them at edges. Add the jalapeno or serrano pepper. Toss and turn the mixture about 3 minutes, then add salsa of choice and toss a minute longer. Place burgers on each bun bottom and top with 1/4 of the pepper and onion mixture and bun top. Serve Bacon and Bean Smash on the side.
JOHN MCCAIN CHICKEN QUESO BURGER

- Finely grate the zest of the lemon, lime and orange into a medium bowl. Squeeze in the juice of each fruit. Add the chili powder, adobo seasoning and olive oil; whisk to combine. Add the chicken and coat well with the marinade; cover and refrigerate for at least 1 hour or overnight.
- Preheat a grill or grill pan to medium-high. Grill the chicken breasts until cooked through, about 8 minutes per side, turning once. Move the chicken to the cooler side of the grill (or reduce the heat on the stove) and top each piece with 1 tablespoon salsa and 1 slice cheese. Cover and cook until the cheese melts, 1 to 2 minutes. Place a chicken breast on each roll bottom; add a few slices of avocado and cover with the roll top. Serve with more salsa, if desired.
CHICKEN FAJITA QUESADILLAS RECIPE BY TASTY

- Slice the chicken breasts into strips, about an inch apart, and coat with taco seasoning. In a large skillet, heat 1 Tbsp. vegetable oil and cook chicken until no longer pink and slightly charred. Remove cooked chicken from the skillet.
- Heat another Tbsp. oil, add onion and garlic and cook for a couple minutes until it's slightly translucent. Add the peppers, and cook slightly, then mix in the cooked chicken. Remove from heat and set aside.
- In a clean pan, melt a bit of butter. Add a tortilla and move it around until it's buttery. Add cheese, then fajita mixture, then more cheese, then top with another tortilla and pat it down.
- Flip the quesadilla over and cook the other side until it's golden. Remove from pan and cut into quarters. Repeat these steps with the remaining tortillas.
- Enjoy!

- Heat the bbq or grill on high.
- Cut 6 pieces of wax paper big enough for the individual burgers to make it easier to put on the grill.
- In a large bowl, combine all of the spices and mix. Add the ground chicken and combine just until blended, do not over mix.
- Divide the mixture into 6 equal sized balls then place them on the square of wax paper and gently press into a patty making a dent in the centre of each one.
- Barbeque or grill the burgers until cooked through for approximately 5 minutes on each side until meat is firm, and the internal temperature is 165°F.
- Note: I used 1/2 ground thigh meat and 1/2 ground breast meat.

- In a large bowl, combine the ground beef, garlic powder, parsley, salt, pepper, and paprika.
- In a ramekin, spread two-thirds of the beef patty evenly along the bottom and sides.
- Place the red pepper, pepper jack, and green pepper into the well.
- Preheat the oven to 425°F (220°C).
- Place the rest of the beef patty on top and pat to flatten.
- Place the ramekin on a baking sheet along with the sesame bun, face down.
- Bake for 25 minutes.
- Assemble the burger with the sesame bun, guacamole, salsa, and sour cream.

- Combine all of the ingredients for the marinade in a large resealable bag. Place the chicken breasts in the marinade and seal the bag. Sort of smoosh the chicken around in the marinade so all of the pieces are coated. Marinate the chicken for at least 30 minutes but no longer than an hour in the refrigerator.
- Heat one tablespoon of olive oil in a large skillet over medium heat. Add the sliced onions and peppers and stir to coat them in the oil. Add the chili seasoning and lime juice and cook the peppers and onions until they start to soften, about five to eight minutes. Transfer the cooked peppers and onions to a plate.
- Remove the chicken from the marinade and pat it dry with paper towels. In the same skillet, cook the chicken breasts on one side for about four to five minutes or until it turns golden brown. Turn the chicken and cook it on the other side for another four to five minutes or until the chicken is cooked through (the internal temperature should be 165°F).
- Place the cooked peppers and onions on top of the chicken in the skillet. Add the cheese and cover the skillet with a lid until the cheese has melted.
