1/3 cup thawed orange juice concentrate
5 tablespoons canola oil, divided
2 tablespoons reduced-sodium soy sauce
2 garlic cloves, minced
4 boneless skinless chicken breast halves (4 ounces each)
1/2 cup coarsely chopped walnuts
1 tablespoon butter
4 green onions, thinly sliced, divided
1/2 cup orange marmalade
1/2 cup orange juice
1/4 cup lemon juice
2 tablespoons honey
1 to 2 tablespoons grated orange zest
2 to 3 teaspoons grated lemon zest
1/2 teaspoon salt
1/8 teaspoon pepper
Hot cooked rice

Steps:

  • In a small bowl, combine the orange juice concentrate, 4 tablespoons oil, soy sauce and garlic. Pour half of marinade into a large resealable plastic bag; add the chicken. Seal bag and turn to coat; refrigerate for 2-3 hours. Cover and refrigerate remaining marinade., Discard marinade from chicken. In a large skillet, cook chicken in remaining oil until a thermometer reads 170°. , Meanwhile, in a small saucepan, saute walnuts in butter until lightly browned; remove and set aside. Set aside 1/4 cup green onions for garnish. , Add remaining onions to saucepan; saute until tender. Add the next eight ingredients and reserved marinade. Bring to a boil. Reduce heat; simmer, uncovered, for 5-10 minutes or until sauce reaches desired consistency. Serve chicken with rice; top with sauce and garnish with reserved walnuts and onions.

4 boneless chicken breasts

4 green onions, sliced thin

Steps:

  • Brown Chicken Breasts in Oil and Butter and Garlic.
  • Place in Baking Dish.
  • In same pan, with drippings the remaining ingredients.
  • Heat until hot over medium heat.
  • Pour over chicken.
  • Bake in oven, until done approximately 25-30 minutes.
  • To hold until dinner, you can place foil over pan and reduce heat. If needed to add extra liquid, add 1/2 water to chicken.

Steps:

  • In a large resealable plastic bag, combine orange juice concentrate, 2 T. oil, soy sauce, and garlic. Add chicken; seal bag and turn to coat. Refrigerate for 2-3 hours. Remove chicken; reserve marinade.
  • In a skillet, cook chicken in remaining oil until juices run clear.
  • Meanwhile, in a saucepan sauté walnuts in butter until lightly browned; remove and set aside. Set aside 1/4 cup of green onions for garnish. Add remaining onions to saucepan; sauté until tender. Add reserved marinade and the next 8 ingredients. Bring to a rolling boil; boil for 2 minutes. Reduce heat; simmer, uncovered for 5-10 minutes or until sauce reaches desired consistency.

2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
Pinch of salt
1/2 pound butter, softened
1 1/2 cups sugar
3 eggs
1 1/4 cups fresh orange juice
1 cup finely chopped walnuts
2 tablespoons grated orange rind
2 tablespoons Cointreau, Triple Sec or Grand Marnier

Steps:

  • Preheat oven to 350 degrees. Butter and flour a nine-inch springform baking pan.
  • Sift flour, baking powder, baking soda and salt together and set aside. Beat the butter and one-and-a-third cups of the sugar together until light, then beat in the eggs. Add the flour alternately with one cup of the orange juice. Fold in the walnuts and orange rind.
  • Spread batter in prepared pan and bake about 1 hour and 10 minutes, until browned and a cake tester comes out clean.
  • Shortly before the cake is finished baking, simmer the remaining one-fourth cup of orange juice with the remaining sugar and the liqueur until the mixture is reduced to about three tablespoons and is syrupy.
  • As soon as the cake is done, poke it about a dozen times with a skewer, then brush the warm glaze over it. Allow to cool completely before removing from the pan.

Steps:

  • Heat olive oil in a skillet over medium-high heat. Lightly coat chicken breasts in flour, shaking off excess, and brown in oil on both sides. Stir in cointreau, oranges, and heavy cream. Reduce heat to medium, and simmer until liquid has reduced by half. Remove chicken from pan when not longer pink in center, and allow the sauce to reduce another 5 minutes.
