FALL HARVEST VEGGIE PIZZA



Fall Harvest Veggie Pizza image

Harvest a bounty of flavors in this hearty recipe, made easy with Pillsbury refrigerated classic pizza crust.

1 acorn squash, peeled, seeded and cubed
Olive oil
1/2 red onion, thinly sliced
1 can (13.8 oz) refrigerated Pillsbury™ Classic Crust Pizza Crust
1/2 tart apple (such as Granny Smith or McIntosh)
1 cup shredded white Cheddar cheese (4 oz)
1 cup crumbled gorgonzola cheese (4 oz)
1 large handful arugula, if desired

Steps:

  • Heat oven to 350°F. In shallow baking pan, toss squash cubes with small amount of oil. Roast about 45 minutes or until tender and slightly caramelized.
  • Meanwhile, in 10-inch skillet, heat small amount of oil over medium heat. Add onion; cook just until caramelized. Set aside.
  • Remove squash from oven; increase oven temperature to temperature called for on pizza crust can. With fork, coarsely mash squash; set aside.
  • On lightly floured pizza stone or cookie sheet, unroll pizza crust; press into 12-inch round. Bake 5 minutes. Meanwhile, core and thinly slice apple; set aside.
  • Top partially baked crust with mashed squash, 3/4 cup of the Cheddar cheese, the apple, onion, gorgonzola cheese and remaining Cheddar cheese. Bake 15 to 20 minutes longer or until crust is golden brown. Cool 10 minutes.
  • Top pizza with arugula or, if desired, arugula tossed with a splash of lemon juice, salt and pepper to taste.

5 slices OSCAR MAYER Thick Cut Bacon
2 Tbsp. brown sugar
1/4 tsp. chili powder
1 Fuji apple, cored, sliced
1 tsp. lime juice
1 ready-to-use baked pizza crust (12 inch)
1 tub (8 oz.) PHILADELPHIA Honey Pecan Cream Cheese Spread
1/3 cup chopped pecans
1/3 cup crumbled feta cheese
1 tsp. chopped fresh thyme
1 Tbsp. honey

Steps:

  • Heat oven to 400ºF.
  • Line bottom of rimmed baking sheet with foil; spray with cooking spray. Arrange bacon on pan. Mix sugar and chili powder; sprinkle on bacon slices. Bake 15 min. or until browned; remove and set aside. Increase oven temperature to 450ºF.
  • Toss apples with lime juice; set aside. Place pizza crust on baking sheet; spread with cream cheese spread. Chop bacon; evenly sprinkle over cream cheese. Arrange apples on bacon. Top with nuts and feta.
  • Bake 12 to 14 min. or until cheese begins to brown. Sprinkle with thyme; drizzle with honey.

  • Then, take the dough out of the bowl onto a lightly floured surface, and knead for 5 to 6 minutes, until it is thoroughly combined and develops an elasticity.
  • Rub the inside of the bowl with a tablespoon or so of olive oil, and place the dough ball in the bowl, then rub a bit more olive oil on the top. Let sit in bowl, covered with a dish towel for 1-1 1/2 hours to rise. Dough should double in size after this time.
  • While waiting for the dough to rise, you can roast the squash and prepare all the toppings. Preheat oven to 425℉. Add the butternut to a large baking sheet and drizzle with a little olive oil. Sprinkle on the cinnamon, clove, allspice, nutmeg, salt, and pepper and toss. Roast for 20 minutes or until lightly golden and soft, tossing once during cooking.
