Yield Makes 2 servings, one sandwich each.

Number Of Ingredients 9

1 lb. extra lean ground beef
10 reduced-fat round buttery crackers, crushed (about 1/3 cup)
1 egg white
1/4 tsp. pepper
1-1/2 cups CLASSICO Tomato and Basil Pasta Sauce
1/2 cup KRAFT 2% Milk Shredded Mozzarella Cheese
2 French bread rolls (6 inch), partially split
1/2 cup each: carrot and celery sticks
4 oz. spaghetti, cooked as directed on package

Steps:

  • BASE RECIPE:
  • PREHEAT oven to 375ºF. Combine meat, cracker crumbs, egg white and pepper. Shape into 12 meatballs, each about 2-1/4 inches in diameter. Place in 15x10x1-inch baking pan sprayed with cooking spray. Bake 20 min. or until meatballs are cooked through.
  • Pour pasta sauce into microwaveable bowl. Microwave on HIGH 2 to 3 min. or until heated through, stirring after 1-1/2 min; set aside.
  • ADULT VARIATION:
  • ADD 6 of the meatballs to the 1/2 cup pasta sauce in bowl; toss to coat. Spoon 3 meatballs and half of the sauce onto bottom half of each roll; sprinkle each with 2 Tbsp. cheese. Serve with carrots and celery. Makes 2 adult servings, one sandwich each.
  • KID VARIATION:
  • DRAIN hot spaghetti. Divide between two serving plates; top each with 3 of the meatballs, 1/2 cup of the sauce and 2 Tbsp. of the cheese. Makes 2 kid servings.

My mother's family originally came from Sicily and every family member makes his or her own version - this version came most recently via Brooklyn. If there are any leftovers, they freeze very well. MANGIA! Serve with red wine and a good loaf of crusty Italian bread.

3 slices white bread, torn into pieces
¼ cup milk or water
1 ½ pounds ground beef
2 eggs
½ cup grated Romano cheese
1 pinch dried parsley
¾ teaspoon salt, or to taste
¼ teaspoon ground black pepper
3 tablespoons olive oil
4 onion, chopped
6 cloves garlic, chopped
12 (3.5 ounce) links sweet Italian sausage
1 ½ pounds cubed beef brisket
½ pound pork neck bones
4 (6 ounce) cans tomato paste
3 (28 ounce) cans crushed tomatoes
½ cup red wine
4 bay leaves
¼ teaspoon ground cinnamon
¼ teaspoon dried parsley
1 teaspoon dried basil
salt and pepper to taste
3 (16 ounce) packages dry pasta

Steps:

  • To make the meatballs, combine bread and milk or water in a medium bowl. Mix in ground beef, eggs, Romano cheese, parsley, and salt and pepper to taste. Form golf ball-sized meatballs; place into freezer to firm up.
  • To make sauce, heat olive oil in a large pot on medium heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Add garlic and 1 sausage link; cook about 3 minutes more.
  • Meanwhile, in a large skillet over medium heat, brown beef chunks and pork neck bones; set aside.
  • When onions and garlic are done, turn heat down to low. Add tomato paste and cook for a few minutes. Stir in the browned beef and pork, crushed tomatoes, wine, bay leaves, cinnamon, parsley, basil, and salt and pepper. Bring sauce to a simmer, then reduce the heat to low and cook for 3 to 4 hours.
  • Once you add the meatballs, let sauce simmer for 1 hour. When sauce is nearly ready, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Cover pasta with sauce and meatballs and serve immediately.

2 large eggs, lightly beaten
1 can (12 ounces) evaporated milk
2 cups quick-cooking oats
1 cup finely chopped onion
2 teaspoons salt
2 teaspoons chili powder
1/2 teaspoon garlic powder
1/2 teaspoon pepper
3 pounds ground beef
SAUCE:
2 cups ketchup
1-1/2 cups packed brown sugar
1/2 cup chopped onion

Steps:

  • In a large bowl, combine the first 8 ingredients. Crumble beef over mixture and mix well. Shape into 1-in. balls. Place in 3 greased 13x9-in. baking dishes. , Combine the sauce ingredients; pour over meatballs. Bake, uncovered, at 325° until meat is no longer pink, about 1 hour.

1 large yellow onion, diced
1 tablespoon canola oil
5 pounds Italian ground sausage
5 pounds ground beef, 80/20 blend
2 cups breadcrumbs
1 1/2 cups heavy whipping cream
1 cup shredded asiago cheese
2 tablespoons whole-grain mustard
2 tablespoons dried oregano
2 tablespoons dried thyme
4 eggs
Salt and freshly ground black pepper
Salt and freshly ground black pepper
Serving suggestions: marinara sauce, spaghetti and/or sub roll

Steps:

  • In a saute pan over medium-high heat, cook the diced onions and canola oil until the onions are translucent, about 5 minutes. Place the ground sausage, beef, breadcrumbs, cream, cheese, mustard, oregano, thyme, eggs and some salt and pepper in large mixing bowl. Add the sauteed onions to the bowl and mix the ingredients by hand, until completely incorporated.
  • Preheat the oven to 375 degrees F.
  • Form the meatball mixture by hand into balls slightly larger than a golf ball, repeat for the remaining meat. Place all the meatballs on a sheet pan and cook until fully cooked throughout, 45 minutes to 1 hour.
  • Drain all excess grease and let the meatballs cool. Serve alone with some marinara sauce, with spaghetti and marinara or in a meatball sub sandwich.

This a recipe for meatballs that came from a mixture of about 7 others....its really good...You can adjust it to your liking, I usually make extra so we can have meatball sandwiches the next day...I use Prego parmesan garlic spaghetti sauce after I take them out of the oven...I add garlic powder and onion powder too...sometimes a pinch of oregano with the italian seasoning

2 lbs ground beef
1 medium onion, minced
2 garlic cloves, minced
1 1/2 cups breadcrumbs (I recommend stovetop herb flavor)
2 tablespoons italian seasoning
1 egg, slightly beaten
1 dash milk

Steps:

  • Preheat oven to 350 degrees.
  • Line a large glass baking dish with foil, (you don't have to line it with foil, but it makes cleanup much easier).
  • Put the ground beef in a large bowl and add the onion and garlic, knead together, add bread crumbs and italian seasoning -- mix all together.add the egg and milk -- knead together well with hands --
  • Form pieces of meat into 1 inch balls, place in baking dish -- bake for about 20-30 minutes --
  • I usually put them in a large pan on the stove and cover with spaghetti sauce for a few minutes at medium heat, but thats optional.

2 (6 ounce) New York strip steaks
salt and ground black pepper to taste
2 tablespoons olive oil
1 tablespoon butter
6 large button mushrooms, sliced
1 bell pepper, cut into matchstick-size pieces
2 sandwich buns, split
½ cup shredded mozzarella cheese
¼ cup mayonnaise

Steps:

  • Season steaks with salt and pepper; allow steaks to come to room temperature, about 15 minutes.
  • Heat oil in a skillet over medium heat until very hot; lay steaks in pan and cook until they are beginning to firm and are hot and slightly pink in the center, about 5 minutes per side. An instant-read thermometer inserted into the center should read 140 degrees F (60 degrees C). Transfer steaks to a warm plate; cover and let rest, about 10 minutes.
  • Melt butter in same pan over medium heat; stir in mushrooms and peppers. Season with salt and pepper; cook and stir until tender, about 5 minutes.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Toast buns under the broiler until golden, about 2 minutes. Divide mozzarella cheese over bottom halves of buns; return to broiler until cheese melts, about 2 minutes.
  • Slice steak very thinly. Pile steak slices over cheese-topped bun halves; top with mushrooms and peppers. Spread mayonnaise on top halves of buns; place over sandwich.
