2 tablespoons butter
1/4 cup packed brown sugar

Steps:

  • In a small skillet, cook apples in butter until tender. Sprinkle with brown sugar. Cook until apples are golden brown and caramelized, about 5 minutes.

2 1/2 cups all-purpose flour, plus 1/2 cup
1 cup cornmeal
1/2 cup brown sugar
2 tablespoons baking soda
1 teaspoon salt
2 cups buttermilk
1 1/2 cups water
2 eggs
2 teaspoons vanilla extract
3 Granny Smith apples, cored and cut into 1/4-inch thick rings
Vegetable oil, for deep frying
Caramel Drizzle, recipe follows
2 cups sugar
2 tablespoons water
2 cups apple juice
1 cinnamon sticks
2 star anise

Steps:

  • Heat the oil in the deep fryer to 360 degrees F.
  • In a medium bowl combine the 2 1/2 cups flour, cornmeal, brown sugar, baking soda, and salt. Whisk together the buttermilk, water, eggs, and vanilla. Add the wet ingredients to the dry and mix to form a lumpy batter. Dredge the apple rings into the remaining flour, shaking off any excess. Dip the apples in batter and fry until golden, about 2 minutes per side. Remove from the oil and place on a paper towel to absorb the excess oil. Serve with Caramel Drizzle.
  • In a medium pot combine the water and sugar. Over high heat bring to a boil and cook until the syrup becomes amber, about 7 minutes. Remove from the heat and whisk in the apple juice slowly, being careful of the steam released. Add the cinnamon and star anise.
  • Return to high heat and bring to a boil. Reduce heat to medium and simmer until reduced to 1 cup of liquid, about 20 minutes. Discard the cinnamon stick and star anise and cool.
  • Store for up to 1 month in the refrigerator.

1/4 teaspoon ground nutmeg
1/2 teaspoon cinnamon
2 Tablespoons sugar
1/4 teaspoon salt
1 large egg
1 1/4 cups buttermilk
4 large apples, such as Fuji or Gala
Vegetable oil, for frying
Homemade or store-bought caramel sauce, for serving

Steps:

  • In a medium bowl, whisk together the flour, baking powder, nutmeg, cinnamon, sugar and salt. In a separate large bowl, whisk together the eggs and buttermilk and then whisk the egg mixture into the flour mixture just until combined. Slice the apples into 1/4-inch-thick rounds. Using the cookie cutters, cut each apple slice into rings, discarding the center core. Add 3 inches of oil to a large heavy-bottomed pot set over medium heat. Line a sheet tray with paper towels. When the oil reaches 350°F on your deep-fry thermometer, begin by dipping each apple slice in the batter, shaking off any excess then carefully lowering it into the oil. Add several apple slices to the oil but do not overcrowd the pot. Flip the apple slices occasionally so that they brown on all sides then using tongs, transfer them onto the paper towel-lined baking sheet. Repeat the battering and frying process with the remaining apple rings. Serve the apple rings immediately with caramel sauce for dipping.

I came across this utterly simple idea in Deborah Madison's "Vegetarian Cooking for Everyone." She serves hers as a dessert with ice cream, a lovely use for the apples (which she also embellishes with raisins and pine nuts). I think they make a great addition to the Thanksgiving buffet, to go with the turkey along with cranberry sauce. Or serve them with your latkes next month! Breakfast is another meal where these are welcome, right on top of your whole wheat buttermilk pancakes. I find that the apples will caramelize most efficiently if you don't crowd the pan, so I begin by sautéing the apples in 2 batches, then I combine the batches for the final addition of vanilla and optional brandy or calvados. Both tender apples like McIntosh, Gala, Macoun and Cortland, as well as firmer apples like Braeburns, work well in this dish.

4 large apples
1 lemon wedge
2 tablespoons unsalted butter
1 tablespoon raw brown (turbinado) sugar
1/2 teaspoon cinnamon
1 teaspoon vanilla extract
2 tablespoons calvados or brandy (optional)

Steps:

  • Core apples and rub inside with lemon wedge. Peel if desired (I don't). Slice about 1/4 inch thick, or a little bit thicker.
  • Melt half the butter over medium-high heat in a large, heavy skillet. When it stops foaming (wait this long so that the apples sear when you add them to the pan) add half the apples, half the sugar and half the cinnamon. Cook, flipping apple rings often, until apples are caramelized, 10 to 12 minutes. Test, using the tip of a knife or the edge of a spoon, to see if the apples are soft all the way through. Remove to a bowl. Repeat with remaining apples, butter, sugar and cinnamon. When second batch is caramelized return first batch to pan. Add vanilla and brandy if using and continue to cook, flipping apples, until the liquid evaporates. Transfer to a bowl or serving dish. Serve warm.

4 apples, cored and peeled
1 tablespoon butter
1 tablespoon sugar
1/4 cup currants
1/4 cup toasted pine nuts
3 tablespoons apple juice
1/4 teaspoon cinnamon

Steps:

  • Slice apples into rounds (shaped like a donut) and about 3/8 inch thick.
  • Melt butter in a pan and then toss the apples and sugar into the pan.
  • Cook over high heat turning the apples frequently so they do not burn, but caramelize nicely.
  • If they are not tender once caramelized, then add 1/4 cup water to creat a little steam.
  • When tender add in the currants and pine nuts and cook for a few minutes more.
  • Add in the apple juice and cinnamon and cook until all is absorbed.

12 lbs firm tart apples, no more than 2 1/2-inch diameter
12 cups sugar
6 cups water
1 1/4 cups white vinegar, 5
3 tablespoons whole cloves
3/4 cup red hot cinnamon candies or 8 cinnamon sticks
1 teaspoon red food coloring (optional)

Steps:

  • Wash apples. Peel and slice one apple at a time. Immediately cut crosswise into 1/2" slices, remove core area with a melon baller and immerse in ascorbic acid solution to keep the apples from discoloring.
  • In a 6 quart saucepan, combine sugar, water, vinegar, cloves, cinnamon candies, or cinnamon sticks and food coloring (if using).
  • Heat to a boil, stirring constantly until sugar dissolves then lower heat and simmer 3 minutes.
  • Drain apples and add to hot syrup, and cook for 5 minutes.
  • Fill prepared jars with apple rings and hot flavored syrup, leaving a 1/2" headspace.
  • Check for air bubbles and add more liquid if needed to maintain the 1/2" headspace.
  • Process pint or quart size jars in a boiling water bath for 20 minutes .
  • Adjust time according to your altitude.
  • NOTE: This can also be pressure canned. Pressure Canner - Hot pack pints or quarts and process for 8 minutes at the pressure specified according to your altitude and / or style of canner.
