Looking for a refreshing fruit salad? My mom had this at a party - she described what she thought was in it and we both have tried our own. This is my version. My mom used -Instant Vanilla Pudding - mine had a different taste using the French Vanilla (maybe sweeter) - but they were both very good! My serving size may be off - it's hard to calculate. It makes a nice bowl of fruit salad. I made this for 8 of us and I had some leftover. It was very good tho - it kept for several days and the fruit never changed colors.

1 (14 1/2 ounce) can peaches, sliced/diced w/syrup
1 (17 ounce) can fruit cocktail in syrup
1 (15 ounce) can mandarin oranges, drained
1 (20 ounce) can pineapple chunks in syrup
1 (16 ounce) jar maraschino cherries, drained
2 bananas, sliced
1 granny smith apple, chopped
1 Red Delicious apple, chopped
1 (3 1/2 ounce) box French vanilla instant pudding
1 (3 1/2 ounce) box instant lemon pudding

Steps:

  • This is the EASY part – In a large bowl; mix peaches with syrup, fruit cocktail with syrup, mandarin oranges-drained, pineapple w/syrup, cherries-drained, bananas, apples and pudding mixes (do not make the pudding – just use the powder).
  • Mix well – chill then serve.
  • Please note chill time is cook time.

To make ahead: Cover and refrigerate the salad up to 2 hours in advance, but don't sprinkle it with the almonds until just before serving." 2 points for 1 1/4 cup.

3 tablespoons brown sugar, packed
1 tablespoon lemon zest, grated
2 tablespoons lemon juice
1 teaspoon ground allspice
3 braeburn apples, sliced
3 cups pineapple, fresh, cubed
2 bosc pears, sliced
1/3 cup currants
1/4 cup almonds, sliced

Steps:

  • Combine the brown sugar, lemon zest, lemon juice and allspice in a large bowl.
  • Add the apples, pineapple, pears and currants.
  • Toss to coat.
  • Sprinkle with the almonds.

Yummy low points dessert. Very simple. 1 cup is 3 pts. I usually drain fruit juices into pudding mix first and then blend fruit in, it is just easier for me. You may also want to try this with SF FF Banana Cream Pudding.

This is a simple chicken salad adapted from "Chicken and Apple 'Clams' " in Pillsbury's Good for You cookbook. One small serving (1/6 recipe) is 1 Weight Watchers point. If I have plain yogurt on hand, I use yogurt instead of half of the mayonnaise. I also add celery if I have it. Neither one of these affects the points. You can add nuts or other ingredients to dress it up however you want. I eat this by itself, on top of spinach leaves, or in a pita bread. I use Tyson's Oven Roasted Diced Chicken Breast (in the lunch meat area); one package is 6 ounces.
