  • Empty a 12-ounce bag of fresh or frozen cranberries into a saucepan and transfer 1/2 cup to a small bowl. Add 1 cup sugar, 1 strip orange or lemon zest and 2 tablespoons water to the pan and cook over low heat, stirring occasionally, until the sugar dissolves and the cranberries are soft, about 10 minutes. Increase the heat to medium and cook until the cranberries burst, about 12 minutes. Reduce the heat to low and stir in the reserved cranberries. Add sugar, salt and pepper to taste and cool to room temperature before serving.

FANCY CRANBERRY SAUCE

Fancy Cranberry Sauce image

Straight out of the can is perhaps a bit too retro-but cranberry jelly unmolded from a decorative pan is seriously retro-chic!

Categories     Bon Appétit     Thanksgiving     Fall     Cranberry Sauce     Cranberry     Side     Cardamom     Dairy Free     Peanut Free     Tree Nut Free     Soy Free     Wheat/Gluten-Free     Condiment/Spread     Condiment

Yield 8-10 servings

Number Of Ingredients 9

Nonstick vegetable oil spray
1 Tbsp. plus 1½ tsp. unflavored powdered gelatin
1½ lb. fresh (or frozen, thawed cranberries
4 cardamom pods, lightly crushed
3 fresh bay leaves
Pinch of kosher salt
1 cup unsweetened cranberry juice or water
1½ cups plus 3 Tbsp. sugar
2 (2x1") strips orange zest, very thinly sliced lengthwise

Steps:

  • Lightly coat a 4-cup mold or Bundt pan with nonstick spray. Stir gelatin and ½ cup warm water in a small bowl and let sit 10 minutes.
  • Set 2 Tbsp. cranberries aside for serving. Bring cardamom, bay leaves, salt, cranberry juice, 1½ cups sugar, and remaining cranberries to a boil in a large saucepan, stirring to dissolve sugar. Chill until completely set, at least 12 hours.

  • Just before serving, toss orange zest, remaining 2 Tbsp. cranberries, and remaining 3 Tbsp. sugar in a small bowl to coat. Scatter over jelly.
  • Do Ahead: Jelly (without sugared cranberries and zest) can be made 2 days ahead. Keep chilled.

FANCY CANNED CRANBERRIES

Fancy Canned Cranberries image

The ultimate high-low condiment your table didn't know it was missing. These dressed-up canned cranberries become tart, juicy and a little bit savory thanks to some fresh citrus, thinly sliced red onion and a little flaky salt. With or without whole berries suspended in them? That's dealer's choice, but the rounds will be much easier to slice without them.

Provided by Alison Roman

Categories     sauces and gravies, side dish

Time 10m

Yield 8 to 10 servings

Number Of Ingredients 6

2 (14-ounce) cans jellied cranberry sauce
2 tangerines, oranges or blood oranges, peeled and sliced into rounds, seeds removed
1/2 small red onion, thinly sliced
1 lemon, halved crosswise
Flaky sea salt and freshly ground black pepper
1/2 cup mint or parsley leaves (optional)

Steps:

  • Open the cans of jellied cranberries and slice the cylinders into 1/2-inch-thick rounds.
  • Scatter the rounds on a large platter, and top with citrus slices and a little thinly sliced red onion. Squeeze lemon juice over everything, and sprinkle with flaky salt, black pepper and mint, if using.

LEFTOVER CRANBERRY SAUCE BARS

Leftover Cranberry Sauce Bars image

Time 1h10m

Number Of Ingredients 6

1 3/4 cups all-purpose flour
1 1/2 cups old-fashioned rolled oats
1 cup firmly packed brown sugar
1 1/2 teaspoons ground cinnamon
1 cup cold butter, cut into 3/4 inch pieces
1 cup leftover cranberry sauce, room temperature - any flavor

Steps:

  • Preheat oven to 325* F Grease a 9-inch square baking pan. Combine flour, rolled oats, brown sugar, and cinnamon in a food processor and pulse 2 or 3 times until blended. (if you do not have a food processor, use a hand pastry blender) Add the butter and pulse 8-10 times until the mixture forms large, coarse crumbs the size of small peas. (Or use your hand pastry blender.) Remove 1 1/2 cups of the crumb mixture and set aside. Press remaining crumb mixture into the bottom and 1 inch up the sides of the prepared pan. Drop teaspoons of the cranberry sauce evenly over the crust, then spread it gently with the back of the spoon to cover the crust. Sprinkle reserved crumbs evenly over the jam layer. Bake until the top is lightly browned, 50 - 55 minutes. Transfer to a rack and let cool until firm, about 2 hours (or chill until firm). Using a sharp knife, cut into 12 squares. Store in an airtight container at room temperature for up to 3 days.

HAZEL'S CRANBERRY SAUCE

This is a deep red, spicy holiday sauce that goes with everything from turkey to toast. Some people eat it with a spoon when you're not looking! This recipe makes enough to last until spring.

Categories     Side Dish     Sauces and Condiments Recipes     Sauce Recipes     Cranberry Sauce Recipes

Time 30m

Yield 7

Number Of Ingredients 7

2 cups apple cider
1 ½ cups white sugar
½ cup packed dark brown sugar
2 ½ teaspoons ground allspice
¾ teaspoon ground cloves
¼ teaspoon ground nutmeg
2 (12 ounce) bags fresh or frozen cranberries

Steps:

  • In a saucepan, stir together the apple cider, white sugar, brown sugar, allspice, cloves, nutmeg and cranberries. Bring to a boil, then reduce the heat to low and simmer for about 15 minutes, until most of the cranberries have popped. Continue cooking until the consistency is thick.
  • Ladle into sterile jars to within 1/2 inch of the rim, seal with lids and rings. Process in a simmering water bath for 10 to 15 minutes to seal, or just transfer to containers, cool, and refrigerate. It will last at least a week if it can escape being gobbled up!

SIMPLE "FANCY" CRANBERRY SAUCE

Simple

Cranberry sauce recipes range from the very simple (cranberries, water, and sugar) to the relatively complex. This is my personal compromise. It's only slightly more complicated to make than the most basic recipe, but it has enough extra in it to make it a bit more interesting.

Provided by Cookin Cop

Categories     Jellies

Time 15m

Yield 4-6 serving(s)

Number Of Ingredients 6

12 ounces fresh cranberries (rinsed)
4 -6 ounces fresh blueberries (rinsed)
1/4-1/2 inch fresh gingerroot (peeled)
1 cup sugar
1 cup water
1/2 cup orange juice

Steps:

  • Bring water and sugar to a boil.
  • Add remaining ingredients, return to boil.
  • Reduce heat and simmer, stirring often, until berries burst.
  • Remove from heat and allow to cool to room temperature.
  • Remove ginger root, refrigerate until cold (preferably over night to allow ample time to gel).
  • Even after cooling, this is a bit runny for some people's taste. You can solve this by either reducing the amount of liquid added, or by boiling some of it off.

19 GREAT CRANBERRY SAUCE RECIPES FOR THANKSGIVING
19-great-cranberry-sauce-recipes-for-thanksgiving image

From epicurious.com
  • Cranberry-Cherry Compote. A splash of bourbon and plenty of black pepper make this one very grown up cranberry sauce. Get This Recipe.
  • Cranberry Chutney With Orange, Figs, and Mustard. Frozen cranberries are just as good for this spicy, sweet, zinger of a recipe—and you don’t even have to bother thawing them first.
  • Roasted Sweet Potato and Delicata Squash With Cranberry Agrodolce. The sweet and sour cranberry sauce for this holiday-ready side does double duty: it looks gorgeous (and tastes great) drizzled over roasted delicata squash and sweet potatoes, but it’s also an excellent turkey condiment.
  • Cranberry and Walnut Relish. With just a hint of sweetness, this bright, bracing uncooked relish is an antidote to all the saccharine jellylike cranberry sauces out there (unless you’re into that sort of thing).
  • Cranberry Sauce with Mustard Seeds and Orange. Yellow mustard seeds have a mild bite that plays well with this sweet cranberry sauce. Get This Recipe.
  • Turkey Meatballs With Cranberry Sauce. The doctored-up canned cranberry dipping sauce for these turkey meatball Thanksgiving appetizers would be equally delicious on your turkey or your sweet potato sides.
  • Basic Cranberry Sauce. This no-muss, no-fuss cranberry sauce recipe gives you the perfect accompaniment to your Thanksgiving roast turkey. Get This Recipe.
  • Cran-Apple Jellies. This dark-red mixture will bubble and spit like a vat of lava as it cooks. Okay, slight exaggeration, but really: Cook this in a deep pot, and use a long whisk.
  • Jellied Cranberry Sauce. Intensely flavored and vibrant red, this jelly bears no resemblance to the stuff in the can—it's definitely worth the effort. Get This Recipe.
